- Line a 9-in. pie plate with pastry. Trim to 1/2 in. beyond edge of plate; flute edges. Set aside. , In a large bowl, beat the eggs, sugar, cinnamon, salt, ginger and nutmeg. Beat in pumpkin and molasses; gradually add milk. Pour into crust. Cover edges loosely with foil. , Bake at 425° for 10 minutes. Remove foil. Reduce heat 350°; bake 28-32 minutes longer or until a knife inserted in the center comes out clean. Cool on a wire rack for 2 hours. Chill until ready to serve. Serve with whipped topping. Refrigerate leftovers.

S'MORES PUMPKIN PIE
Steps:
- Set the oven to broil.
- Combine the chocolate chips and whipping cream in a microwave-safe bowl. Microwave on high for 1 minute to 70 seconds. Whisk together until completely combined and smooth.
- Using a spatula, spread the chocolate ganache over the top of the pie.
- Top with the marshmallows, then broil until the marshmallows are golden brown and perfectly toasted, about 3 minutes.

- Using kitchen shears or a paring knife, trim dough to a 1-inch overhang. With floured fingers, fold overhang under itself to form a rim; pinch between thumb and forefinger to form a uniform edge around rim of plate. Crimp with fingertips. Refrigerate pie shell until chilled, about 1 hour.
- Preheat oven to 350 degrees. Line dough with aluminum foil, folding foil over rim of pie plate. Fill with dried beans or pie weights; bake until crust is firm, about 20 minutes. Carefully remove foil and beans. Cool crust completely before filling.
- In a large bowl, whisk together eggs, brown sugar, vanilla, salt, pumpkin-pie spice, and pumpkin. Whisk in half-and-half. Pour mixture into cooled pie crust. Bake until set, about 1 hour. Cool on rack at room temperature, 1 hour, then refrigerate to cool completely.
- Make whipped cream: In a medium bowl, with an electric mixer, beat cream, maple syrup, and granulated sugar until soft peaks form.

- Preheat oven to 425 degrees F (220 degrees C).
- Whisk together pumpkin puree, egg yolks, and egg in a large bowl until smooth. Add sweetened condensed milk, cinnamon, ginger, salt, nutmeg, and Chinese 5-spice powder; whisk until thoroughly combined.
- Fit pie crust in a 9-inch pie plate and crimp edges.
- Pour filling into the pie shell and lightly tap on the work surface to release any air bubbles.
- Bake in the preheated oven for 15 minutes.
- Reduce heat to 350 degrees F (175 degrees C) and bake until just set in the middle, 30 to 40 more minutes. A paring knife inserted into the filling, 1 inch from the crust, should come out clean. Allow to cool completely before serving.

- On a lightly floured surface, roll out pate brisee to a 13-inch round, about 1/8 inch thick. Fit into a 9-inch pie dish. Trim edge, leaving a 1-inch overhang: fold edge under and crimp as desired. Refrigerate 30 minutes.
- Preheat oven to 375 degrees. Line crust with parchment and fill with pie weights or dried beans; bake until crust is set, 30 to 35 minutes. Remove pie weights and parchment, and continue to bake until bottom of crust is lightly browned, about 10 minutes. Remove from oven and let cool slightly. Brush crust with egg white; let cool on a wire rack.
- In a large bowl, whisk together eggs, pumpkin, evaporated milk, brown sugar, cornstarch, vanilla, cinnamon, ginger, 1/2 teaspoon salt, and nutmeg.
- Reduce oven temperature to 325 degrees. Pour pumpkin mixture into cooled crust. Bake until center is set but slightly wobbly, 50 to 55 minutes. Let cool completely on a wire rack. Refrigerate until chilled, at least 6 hours and preferably overnight. Slice and serve with whipped cream, if desired.
PECAN PUMPKIN PIE I

- Combine eggs, sugars, flour, spices and salt. Blend in pumpkin. Gradually add milk; mix well.
- Pour into 9-inch pie shell. Bake in 450 degree F (230 degrees C) oven 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake 40 to 50 minutes longer.
- Sprinkle pecan mixture over pie the last 10 minutes before removing from the oven.
- To Make Topping: Combine 2 tablespoons butter, 1 tablespoon grated orange rind, 1/4 cup brown sugar and 3/4 cup whole pecans.

- Make the piecrust: Place all the ingredients except the egg yolk and ice water into a food processor fitted with a metal blade; pulse at 1-second intervals until the mixture resembles coarse crumbs. (Alternately, whisk together flour, sugar, and salt in a medium bowl. Cut in the butter and shortening with a pastry blender or 2 knives used scissors-fashion, until the mixture resembles coarse crumbs. Stir in the yolk and ice water.)
- Add the egg yolk, and sprinkle on 1 tablespoon of the water. Pulse just until dough begins to clump together (add a little more water, if necessary). Don't overwork--this will make the dough tough. Turn dough out onto a large piece of plastic wrap, and press into a large, flat, hamburger-shaped disc. Wrap tightly, and refrigerate 30 minutes (or up to 2 days).
- At least 20 minutes before baking, position a rack in the middle of the oven. Preheat the oven to 400°. Place the dough on a clean tea towel lightly dusted with flour. Roll out to a 12- to 13-inch round. Transfer to a lightly buttered 9-inch glass pie plate. Gently press the pastry against the sides and bottom of the plate.
- Trim away all but 1 inch of overhanging dough. Turn the edge under, and use a fork or your fingers to crimp the edge. Place in freezer 5 minutes. Place an 8-inch square piece of buttered foil, butter side down, on top of the crust bottom. Bake at 400° for 8 minutes; remove from oven. Discard foil, and lightly prick the bottom and sides of the crust with a fork. Bake 5 to 8 minutes longer, until surface is dry but not brown. Let crust cool on a wire rack while you make the filling. Position a rack on the lowest shelf in the oven; reduce oven temperature to 350°.
