- Heat a large heavy Dutch oven over medium heat. Add oil. Cook garlic, onions, celery, and green bell peppers. Cook until softened, about 5 minutes. Stir in cayenne and let caramelize. Add the seafood stock, tomatoes, Worcestershire, hot sauce, and bay leaves. Season with salt and pepper. Simmer for 35 minutes. Add shrimp and cook about 4 more minutes, until they are bright pink and cooked through. Garnish with green onions.

Steps:
- Saute green pepper, celery and onion in veg oil until tender. Set aside.
- Combine in large saucepan: frozen okra, chopped tomatoes, tomato sauce, chili powder, worstishire sauce, salt, pepper, cornstarch and cooked veggies. Heat until lightly boiling. Simmer 5-10 minutes.
- Add shrimp 5 minutes before ready to serve. Cook until shrimp is pink and cooked through.
- Serve over hot white rice.

MAMA'S SHRIMP CREOLE
Steps:
- Place the shrimp in a bowl and season with salt and pepper. Cover with plastic wrap and refrigerate to marinate while you prepare the vegetables.
- In a heavy-bottomed skillet, heat the oil over medium heat. Add the onion and celery and cook until soft and translucent, 3 to 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Add the tomato paste and cook, stirring constantly, an additional 5 minutes. Add the tomato sauce, sugar, water, and cayenne pepper. Bring to a boil over medium-high heat, then decrease the heat to low. Simmer until the oil rises to the surface, stirring occasionally, about 40 minutes. (Use more water if the sauce gets too thick.) Add the shrimp and cook until pink, 3 to 5 minutes. Taste and adjust for seasoning with salt and pepper. Garnish with the green onions. Serve with rice pilaf.
MOM'S SHRIMP CREOLE

- Assemble ingredients and chop vegetables. Peel shrimp. It really helps to have everything ready to go as if you are doing a cooking show. Heat oil in a heavy pot. Stir in flour and make a medium brown roux. Add onion, celery, bell pepper, and green onion. Sauté until limp. Add garlic, tomato sauce, tomatoes, bay leaves, black pepper, thyme, basil, salt, and cayenne. Cook 15 minutes. Add Worcestershire and water, and bring to a boil. Add shrimp and simmer about 20 minutes. This dish improves upon resting several hours. ROUX: Equal parts oil and flour are stirred or whisked together continuously in a heavy pan over medium heat. As the flour toasts it darkens in color and adds a nutty flavor to the dish. Be careful not to let any of it burn or you will need to start over.

Steps:
- Heat oil in a Dutch oven or heavy pot over medium heat. Cook and stir onion, celery, bell pepper, and garlic in hot oil until soft, 5 to 7 minutes; add diced tomatoes and green chiles, tomato sauce, sugar, 1 teaspoon salt, 1/2 teaspoon black pepper, and bay leaves. Reduce heat to medium low and continue cooking until vegetables are soft, about 30 minutes.
- Put flour into a large sealable plastic bag. Season flour with salt and pepper. Add shrimp to bag, close bag, and shake to coat shrimp in seasoned flour.
- Stir tomato juice into the mixture in the Dutch oven. Reduce heat to low and cook until the juice reduces slightly, about 5 minutes; add shrimp and cook until shrimp turn pink, about 5 minutes. Remove Dutch oven from heat and let the residual heat finish cooking the shrimp until they are bright pink and the meat is no longer translucent, about 5 minutes more.

- Brown onion and celery.
- Add everything, except shrimp, into a pot and bring to a boil.
- Add shrimp.
- Shrimp will cook very quickly, within 5 minutes -- Shrimp will appear nice and pink.
- I usually let it slowly simmer 15 minutes or so to let the flavor get through it.
- This is also a great make - ahead and freeze dish. It only gets better the longer it sits.
- We serve it over rice or with crackers and a side salad.
