DIVINE DIVINITY FUDGE

Steps:
- Beat the egg whites with an electric mixer until stiff. Line a baking sheet with parchment or waxed paper. Put the sugar, corn syrup, and water in a medium-size heavy saucepan over medium-high heat. Stir to dissolve the sugar, bring to a boil and cook until the temperature reaches 260 degrees F on a candy thermometer, or the hard-ball stage, when a bit of the mixture dropped into cold water holds its shape, 10 to 15 minutes. Remove from the heat. Pour in a thin steady stream into the beaten egg whites and beat with an electric mixer on high for about 3 minutes, scraping down the sides of the bowl. Add the vanilla, and continue beating on high just until the candy starts to lose its gloss, 5 to 6 minutes. When the beaters are lifted, the mixture should fall in a ribbon that mounds on itself.
DIVINITY
White divinity which I used to call divinity fudge. Absolutely divine! Store in an airtight container.

Steps:
- Cook sugar, corn syrup, and water in a 2-quart pot over low heat, stirring constantly, until sugar is dissolved. (On humid days, use 1 tablespoon less water.) Cook, without stirring, to 260 degrees on candy thermometer (or hard ball stage).
- Beat egg whites in 1-1/2-quart bowl until stiff peaks form. Continue to beat while pouring hot syrup in a thin stream into egg whites. Add vanilla; beat until mixture holds its shape and becomes slightly dull. (Mixture may become too stiff for electric mixer). Fold in nuts (if you choose).
- Drop from buttered spoon onto waxed paper. Let stand at room temperature, turning candy over once, until outside of candy is firm--at least 12 hours. Store in airtight container.

DIVINITY FUDGE
My mother was known for her divinty and this recipe always came out perfectly. It melts in your mouth and is a holiday favorite. Also, this makes a great gift.

Steps:
- Stir the first four ingredients together in a saucepan over low heat until the sugar is dissolved.
- Boil without stirring to 265 degrees on a candy thermometer or until a little mixture that is dropped in cold water forms a hard, almost brittle ball.
- Remove syrup from heat and slowly pour over stiffly beaten egg whites, while beating with a mixer until mixture loses its gloss and a small amount that is dropped from a spoon holds its shape.
- Fold in nuts and vanilla.
- Pour into a greased 9"x9"x2" pan or drop by spoonfuls onto waxed paper to cool.
- Store in tins.

Steps:
- Combine corn syrup, water, salt and sugar.
- Cook to 234°F.
- Beat egg whites until stiff and pour 1/2 the syrup into them slowly, beating as you pour.
- Cook the remaining syrup to 280°F then add it to the white mixture the same way as before.
- Add vanilla and nuts.
- Continue beating until mixture is thick enough to hold its shape when dropped by a spoon.
- Pour into a buttered 9x9-inch pan.
- Cool and cut into squares.
MOTHER'S FUDGE
Steps:
- Butter an 8 x 8-inch pan. Combine sugar, butter, milk, salt, and chocolate in medium saucepan. Stirring constantly, cook over medium heat until all ingredients melt and come to a boil. Do not scrape down the sides of the pan. Lower heat, insert candy thermometer, and let boil slowly without stirring for about 10 minutes or until soft ball forms when dropped in a cup of cold water (238 degrees F on a candy thermometer). Remove pan from heat and cool. Add vanilla. Beat steadily until fudge loses its gloss. Add nuts. Pour into pan. Cool for 20 minutes and cut into squares. Store in airtight container or wrap in tinfoil.
GRANDMA ELZEY'S DIVINITY FUDGE

- In sauce pan on low heat, stir sugar, water, and syrup till sugar dissolves...Bring to boil and let boil with out stirring, temp should come to 265* use a candy thermometer...
- While it is boiling beat egg whites to stiff peaks...in a medium size bowl...
- Syrup mixture should be 265* or form a brittle ball...I use a glass of cold water this cools it off faster when checking for a brittle balls...
- While beating egg whites gradually pour syrup into bowl while beating or stirring constantly... Beat until creamy and add nuts or what ever else you are planning to add...Do this quickly before it sets on you...
- if using a tin butter it first before pouring fudge into it..If using wax paper for drops, place waz paper out on to counter or table...
- Using tsps (2) spoon out of bowl quickly before it has time to set...It does set fat...Let cool and put into an airtight container...If you used a tin you may cut as you do with regular fudge...
MOM'S CHRISTMAS FUDGE
This has been a Christmas staple in our house since the early 1980s. It's ridiculously easy and pretty yummy. (I use the plastic bag over my hand trick to smooth out the fudge.)

- Line a 9x13-inch pan with parchment paper.
- Melt chocolate chips in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 3 minutes. Stir in peanut butter until smooth. Pour in sweetened condensed milk and stir until well combined. Pour into the prepared pan.
- Using the back of a spoon or with a plastic bag over your hand, press the fudge into the pan. Refrigerate until firm, 2 to 4 hours.
- Remove fudge from pan and cut into squares. Store in an airtight container.

Steps:
- Place chocolate chips and butter in a pan (I use an 8 quart to have plenty of room for stirring).
- Use the butter wrappers to grease a 9 x 13 pan.
- Cut up 20 large marshmallows into the pan.
- (Can use 2 C mini) Put in the freezer.
- Place 20 large marshmallows, canned milk and sugar in 6-8 quart heavy pan.
- Stirring, bring to a boil.
- Continue to boil exactly 5 minutes, stirring constantly (Don't worry if there are some darker streaks, just stir better).
- Pour mixture over chocolate chips and butter.
- Continue stirring until mixture looses it's shine and becomes glossy.
- This can take anywhere from 15-30 minutes.
- Stir in vanilla and frozen marshmallows.
- (You can also add nuts at this point).
- Return to the buttered pan and refrigerate.
- I've made this in small tins for gifts by lining them with plastic wrap and placing a piece of cardboard, covered with parchment, on the bottom (inside the plastic wrap).

- Heat oven to 325°F. Beat dry frosting mix, corn syrup, vanilla and boiling water until blended. Beat on high for 5 minutes or until stiff peaks form. Gradually beat in sugar on low. Stir in 1 cup chopped nuts, if desired. Drop by teaspoons onto wax paper-lined cookie sheet. Bake for 5 minutes. Let cool for about 4 hours or until firm. Turn to all bottom to dry. Air dry for about 12 hours. Store in air-tight container. (Doesn't work well when humid out!)
