SEAFOOD MARINARA PASTA
Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Heat another tablespoon of olive oil in a large skillet over medium-low heat. Stir in diced tomatoes and green onion; cook and stir until the tomatoes have softened. Stir onion mixture into the tomatoes, then add crushed tomatoes, tomato paste, oregano, and thyme. Simmer for 5 minutes. Stir in mussels and shrimp, then pour in the wine and lemon juice. Cover and increase heat to high. Cook until shrimp have turned pink and mussels have opened, discarding any that have not opened. Serve over pasta and garnish with lemon wedges.

- In a medium skillet, saute 1 garlic clove in 1 tablespoon butter for 1 minute. Add the tomatoes, parsley, basil and tarragon; saute 2 minutes longer. Add the broth; bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until mixture reaches desired thickness., Meanwhile, cook pasta according to package directions. In another skillet, saute remaining garlic in remaining butter for 1 minute. Add shrimp; cook and stir for 1 minute. Add scallops and cook 3 minutes longer or until shrimp turn pink and scallops are firm and opaque. Add to tomato mixture. Drain pasta; transfer to a bowl. Pour seafood mixture over pasta; toss to coat. Sprinkle with Parmesan if desired.

- In a large saute pan over medium-high heat, saute onion and garlic in olive oil until soft. Add tomato puree and tomato paste. Simmer, uncovered, for 20 minutes. Add lobster. After 5 minutes, add shrimp. After another 2 minutes, add calamari. The stew should be done in 2 minutes. Do not over cook calamari or it will toughen. Add basil and red pepper flakes. Serve over linguini and sprinkle with cheese.
PASTA ALLA PAMELA WITH SHRIMP AND PEAS

Steps:
- Bring a big pot of water to a boil. Salt liberally.
- In a large bowl, toss the shrimp with 1 teaspoon salt, 1/2 teaspoon pepper and the baking soda and marinate in the fridge for 15 minutes (this keeps the shrimp moist with a nice crust on the outside).
- Add the pasta to the pot of boiling water and cook according to the package instructions. Drain, reserving about 1 cup of the pasta cooking water.
- Meanwhile, heat a large skillet over medium-high heat until hot. Add the oil to the skillet, then arrange the shrimp in a single layer in the oil. Reduce the heat to medium. Cook, undisturbed, until a nice crust is formed, about 2 minutes. Flip the shrimp, then add the butter and garlic. Cook gently until fragrant, about 1 more minute. Add the wine to deglaze and let simmer for 1 more minute. Add the peas and pasta. Toss to combine. Taste for seasoning and adjust with salt and pepper. Add a generous amount of Parmesan and toss again, adding the pasta water as necessary.
- Transfer the pasta to a large serving bowl. Garnish with more Parmesan and the parsley. Serve.
MOM'S FAVOURITE SEAFOOD PASTA
This recipe is one of our favourite for company. I dedicate this one actually to my long time friend and pastor Jack, who was able to eat the 3 portions out of 4, and wipe the dish with bread to get to last bit of sauce. Ha,ha,ha!!! He LOVED IT... I'm sure you will too! Anyway I choose a narrow like spaghetty, linguine or sometimes if I have fettucine for this recipe.

Steps:
- In skillet, combine wine, chicken stock, shallots, garlic, tomato, tomato paste and saffron.
- Bring to simmer over medium heat and cook for 2 minutes.
- Add fish, shrimp and scallops; cover and simmer for 3 minutes or until shrimp are pink and fish and scallops are opaque.
- With slotted spoon, remove fish and seafood to bowl; set aside and keep warm.
- Dissolve cornstarch in 1 Tbsp. of the cream and add to skillet along with remaining cream.
- Cook, stirring, until boiling and thickened.
- Return fish and seafood to skillet and stir to coat.
- Season with salt and pepper to taste.
- Spoon over pasta and sprinkle with parsley.

- Heat the oil in a wok or large frying pan, then cook the onion and garlic over a medium heat for 5 mins until soft. Add the paprika, tomatoes and stock, then bring to the boil.
- Turn down the heat to a simmer, stir in the pasta and cook for 7 mins, stirring occasionally to stop the pasta from sticking. Stir in the seafood, cook for 3 mins more until it's all heated through and the pasta is cooked, then season to taste. Sprinkle with the parsley and serve with lemon wedges.

- Heat oil in a large heavy pot over medium heat. Cook onion, stirring occasionally, until golden and softened, for about 8 to 10 minutes. Add the garlic and red pepper flakes (if using) and season with some salt. Cook, stirring often, until fragrant and garlic is softened, for about 2 minutes.
- Add the tomato paste and cook, stirring occasionally, until slightly darkened in color, for about 3 to 4 minutes. Pour in the wine and cook, stirring often, until the smell of the alcohol is almost completely gone, about 4 minutes. Add the crushed tomatoes and increase the heat to medium high. Cook, stirring often, until the sauce thickens slightly, for about 8 to 10 minutes. Taste and season sauce with salt.
- Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Reserve 1 cup of the pasta cooking liquid and drain the rest.
- Back to the sauce: Add in the mussels, shrimp, and ¼ cup pasta cooking liquid to the sauce. Cover and let cook until the mussels open, for about 3 to 4 minutes. Feel free to flip the shrimp, halfway through cooking. Using tongs, pick out the shrimp and mussels and transfer to a large bowl, discarding any mussels that have not opened.
