- Microwave 12 ounces semisweet chocolate chips and a 14-ounce can sweetened condensed milk, 5 minutes. Stir vigorously, then add 1 1/2 cups chopped nuts and 1 teaspoon vanilla extract. Spread in an 8-inch-square pan lined with buttered parchment paper. Refrigerate, then cut into squares.
MOM'S MICROWAVE FUDGE
This was an old fudge recipe that came from a family friend. Then my mom turned it into a microwave recipe. It is the real thing!

Steps:
- Mix cocoa and sugar; then add milk and all the Karo syrup.
- Cook on High 10 minutes, stirring at 7 minute and 3 minute or until soft ball stage.
- Add butter, vanilla, and nuts.
- Cool slightly.
- Beat until stiff and pour into a buttered 8" square.
- Let cool and cut into squares.
- Can also be made with skimmed canned milk and or carob powder.
MOTHER'S FUDGE
Steps:
- Butter an 8 x 8-inch pan. Combine sugar, butter, milk, salt, and chocolate in medium saucepan. Stirring constantly, cook over medium heat until all ingredients melt and come to a boil. Do not scrape down the sides of the pan. Lower heat, insert candy thermometer, and let boil slowly without stirring for about 10 minutes or until soft ball forms when dropped in a cup of cold water (238 degrees F on a candy thermometer). Remove pan from heat and cool. Add vanilla. Beat steadily until fudge loses its gloss. Add nuts. Pour into pan. Cool for 20 minutes and cut into squares. Store in airtight container or wrap in tinfoil.
MOM'S CHRISTMAS FUDGE
This has been a Christmas staple in our house since the early 1980s. It's ridiculously easy and pretty yummy. (I use the plastic bag over my hand trick to smooth out the fudge.)

- Line a 9x13-inch pan with parchment paper.
- Melt chocolate chips in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 3 minutes. Stir in peanut butter until smooth. Pour in sweetened condensed milk and stir until well combined. Pour into the prepared pan.
- Using the back of a spoon or with a plastic bag over your hand, press the fudge into the pan. Refrigerate until firm, 2 to 4 hours.
- Remove fudge from pan and cut into squares. Store in an airtight container.

MICROWAVE FUDGE
Not only is this the easiest fudge to make, it's also the best tasting...well, at least in my opinion. The problem with a lot of fudge recipes is the need for cooking on the stove and a candy thermometer. This is so easy you can have the kids help you make it. UPDATE: I reduced the amount of salt listed due to reviewer feed back and listed it as optional.

- Up all ingredients in a bowl with the stick of butter on top.
- Heat in microwave until the butter is melted, about 2 minutes. Pour on waxed paper and chill for about 1/2 hour.

ONE-BOWL MICROWAVE FUDGE
A quick, classic fudge recipe that can be done in the microwave. Takes a fraction of the time and uses 1 bowl!

Steps:
- Line a 10x13-inch baking dish with parchment paper.
- Mix sweetened condensed milk, chocolate chips, and unsweetened chocolate together in a microwave-safe bowl. Cook in the microwave on high for 30 seconds; stir. Continue cooking in microwave, stirring every 30 seconds, until chocolate is melted and smooth, 1 to 2 minutes. Stir.
- Cook melted chocolate mixture in the microwave on high, stirring every 2 minutes, for 6 minutes. Stir vanilla extract and salt into fudge. Beat fudge with an electric mixer for 2 minutes; pour into the prepared baking dish.
- Refrigerate fudge until solid, at least 4 hours.
