Paleo Moroccan Carrot Salad With Dates image

Steps:

  • Mix together in a bowl.
  • Refrigerate for 15-20 mins.
  • Serve.

4 organic carrots, peeled and shredded
1/4 cup dried dates
2 tablespoons olive oil
1 large lemon, juice of
2 tablespoons chopped fresh cilantro
1 teaspoon paprika
coriander (to garnish)

CARROT SALAD WITH MOROCCAN DRESSING

Carrot Salad With Moroccan Dressing image

Steps:

  • Cut carrots diagonally into 1/2 " pieces.
  • Place carrots in rapidly boiling water and cook for 4 minutes, drain, rinse with cold water and pat dry.
  • In a large bowl, add the orange & lemon juices, honey, parpika, cumin and cinnamon.
  • Next add in the carrots and toss, sprinkle with the mint, cilantro, parsley, sesame oil and sesame seeds.
  • Season with salt and pepper and serve.
  • Note: * To toast sesame seeds *.
  • Place sesame seeds in a dry skillet and shake over medium high heat until lightly toasted. They cook quickly becareful not to burn them.

2 lbs carrots
1/3 cup orange juice
2 tablespoons lemon juice
1 tablespoon wild flower honey
1 teaspoon paprika
1 teaspoon cumin (I don't use because of dh)
1/16 teaspoon cinnamon
1 1/2 tablespoons of fresh mint, chopped
1 1/2 tablespoons fresh cilantro, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon sesame oil
1 teaspoon sesame seeds, toasted
1/2 teaspoon fine sea salt
1/2 teaspoon fresh ground black pepper

GRILLED CHICKEN AND ONIONS TUNISIA

Delicious Middle Eastern seasonings plus some sherry and soy sauce marinate these golden chicken strips. And the marinated grilled onions are another bonus! This recipe is also ideal for chicken breast kabobs and is delicious with a simple potato or rice dish and my Mother Earth Moroccan Carrot Salad. Prep time includes marinating.

Grilled Chicken and Onions Tunisia image

Steps:

  • Combine all ingredients except salt and pepper in a large zipper bag and marinate, refrigerated, for at least 6 hours; overnight is better.
  • When ready to cook, discard marinade (keeping onions).
  • Fire up the grill and cook marinated chicken until cooked through, turning once; cook onions until browned nicely (times may differ for the kabob method).
