- Melt butterscotch chips and peanut butter on top of a double boiler, or in a microwave. Blend together.
- Stir peanuts and noodles gently into the melted peanut butter mixture.

- 1. Melt chocolate, add 1/8 cup coconut (more if desired), coconut extract and Fiber One cereal. Stir until well blended.
- 2. Spoon by tablespoonfuls onto waxed paper. Sprinkle a little coconut on top of each cookie.

When I was in high school the cafeteria employees would make these and I would buy them all the time. One day I asked one of the employees if they would mind giving me the recipe since I ate them so much and would love to save my money. :) She was kind enough to give me the recipe, and to this day my family and friends cannot get enough of them.
