EGGLESS CAESAR SALAD DRESSING
Steps:
- In a blender, combine the mayonnaise, Worcestershire, mustard, lemon juice, vinegar and garlic and blend until the ingredients are combined. Make sure the garlic is completely blended.
- With the blender still running, slowly add the olive oil. Add the Parmesan cheese and continue to blend. Pulse until the ingredients are combined. Season with salt and pepper.
- The dressing can also be made in a bowl with a whisk. Mince the garlic first before adding it.
JOHN G'S CAESAR SALAD DRESSING
This is my own variant of the classic Caesar salad dressing, but without using raw egg so that the dressing keeps longer and doesn't spoil so easily. It's also a bit more piquant than the classic version and uses more cheese (because more cheese is always good). To make it more decorative in the bottle, try adding large sprigs of fresh basil to the dressing after shaking it. Makes a nice gift, and fresh basil tastes better, too.

- Mix olive oil, Parmesan, garlic, mayonnaise, vinegar, bread crumbs, sesame oil, lemon juice, Worcestershire sauce, Dijon mustard, chili powder, black pepper, basil, hot pepper sauce, salt, oregano, paprika, and cayenne pepper in a shaker or bottle with a lid; shake vigorously. Refrigerate for at least 4 hours to let the flavors combine.

MRS. G'S BEST CAESAR DRESSING
This is a mayo based caesar dressing, made quickly in the blender. I usually double or triple the recipe, so I have dressing for the next day too! Adapted from a Food & Wine recipe from Frank Castronovo and Frank Falcinelli and served in a restaurant aptly named Frankies, I think it's in Brooklyn. It's the best I've made. The original recipe does not call for lemon and I I missed that flavor and i wanted a bit more garlic. This recipe is what I ended up with. Served it for my DH 50th birthday and make it often now.

- In a blender, combine the mayonnaise with the 3 tablespoons of grated pecorino, 1 anchovy and the water, lemon, vinegar, garlic, Worcestershire and Tabasco. Process until smooth. (note, you can smash or put the garlic through the press. The garlic is boiled for 30 seconds just to take some of the "bite" out of the raw garlic, especially since there's a good amount of garlic.).
- In a large salad bowl, toss the romaine with the dressing and season with black pepper. Garnish with pecorino shavings and anchovy fillets and serve right away.
BEST CAESAR DRESSING
Thick and creamy, loaded with flavor! Use it sparingly. A little goes a long way. I barely coat the Romaine with it. Delicious!

- Place whole egg and egg yolk in a bowl of food processor and pulse to combine. Add anchovies that have been drained, and capers to the egg. Blend until pale/light yellow and frothy.
- Add garlic and mustard. Blend, again.
- Add lemon juice, salt, and pepper. Blend again.
- With food processor running, pour in 1 1/2 cups of the oil in a slow drizzle/stream. Add parmesan. Continue blending. Add the rest of the oil in a slow drizzle.
- Check consistency. If the dressing is too thick (like mayonnaise), add water, 1 tablespoon at a time, blending with each addition, until you reach the desired consistency. Personally, I like it thick like mayo, but make it to your desired consistency.
- I like to add shredded (not grated) parmesan on my salad after I've mixed the lettuce with the dressing. Crumbled bacon is also good mixed in the salad.

MRS. G'S FAIR SCONES
This base of this recipe is called Puyallup Fair Scones (Recipe #183806)...I of course had to mess with a good thing and here's the recipe I came up with. These are even better! Here's some of the research on scones that I found...using butter gives the best flavor, but shortening preserves the scones better after the first day. Hence the 1/2 butter, 1/2 shortening, a good compromise. Using heavy cream keeps the scones moister than milk. The recommended flours (for taste and gluten content) are first, Pillsbury Unbleached Enriched All-Purpose Flour (with a 10 - 11% gluten content), second King Arthur Unbleached Enriched All-purpose Flour (with an 11% gluten content). Chilling the butter and shortening in the freezer for 20 minutes or so helps the fat not "melt" when mixing. You can use your hands or a pastry blender to mix the fat and flour, but using a food processor also keeps the fat intact and not "melted" from the heat of your hands. Mix as little as possible so that the gluten does not over develop and make the scones tough. Sifting is critical. 2 1/2 cups unsifted flour weighs more than 2 1/2 cups sifted flour and would make a tougher scone. If you want to get really into it, "they" say that you should place a measuring cup on top of some parchment/wax paper and actually sift the flour into the cup, use the paper to catch the excess.

- Sift and measure the flour.
- Re-sift with other dry ingredients.
- Work shortening & butter into dry ingredients with the fingers.
- Add raisins to flour-fat mixture and mix thoroughly (you may omit raisins).
- Add milk to mixture. (If you are omitting the raisins, add another 2 Tablespoons of milk).
- Turn out on to a floured board and divide into two equal pieces.
- Roll or pat each into a round and to the thickness of biscuits (3/4 inch to a full inch).
- Cut into wedge shaped pieces like a pie and bake about 15 minutes at 450 degrees on an ungreased baking sheet.
- To serve like they do at the fair; split open but do not cut clear through. Fill with jam and close.
