ROCKY ROAD BROWNIES
These are ridiculously fudgy and rich. It looks even better if you double or triple the amount of marshmallows, but it will be insanely sweet.

Steps:
- Preheat oven to 350°F and line a 9-inch square baking pan with nonstick tin foil, crimping to create a 4" 'collar'. Spray with nonstick cooking spray.
- In a heavy 1 1/2-quart saucepan (or microwave on Medium), melt butter, unsweetened chocolate, and bittersweet chocolate, stirring, until smooth and remove pan from heat. Cool mixture 10 minutes.
- Stir in sugar. Add eggs, 1 at a time, beating well with a wooden spoon until mixture is glossy and smooth.
- Mix flour, walnuts and salt separately, then gently stir into chocolate mix.
- Spread batter evenly in pan and bake in middle of oven 20 minutes.
- Remove pan from oven and add chocolate and marshmallows evenly over brownies.
- Bake brownies until marshmallows are puffy and pale golden, 7 to 10 minutes.
- Remove from oven, quickly swirl just the top chocolate/marshmallow with a skewer.
- Cool brownies completely in pan on a rack, then refrigerate until firm.
- Trim edges, then cut into 16 squares with a buttered knife.
MUDDY ROAD BROWNIES (ROCKY ROAD WITHOUT THE WALNUTS)
These brownies are decadent, chewy and bursting with chocolate. They are a layered brownie with a chewy brownie on the bottom, melted Hershey's chocolate kisses in the middle and crispy-browned mini marshmallows on top. The perfect companion for these rich brownies is a tall, ice-cold glass of milk.

- Preheat oven to 350°F.
- In a medium saucepan, melt butter and unsweetened chocolate over low heat, stirring constantly. Remove from heat and cool slightly.
- To the saucepan of chocolate, add the sugar, eggs and vanilla.
- In a small bowl, stir together the flour and baking soda. Add flour to the chocolate mixture. Stir until combined. Pour batter into a greased 9-inch x 9-inch baking dish and spread evenly.
- Arrange Hershey Kisses evenly over the brownie batter. Then sprinkle evenly with mini marshmallows.
- Bake at 350 F for 25-28 minutes.
- Serve warm but not hot and enjoy!

I first tasted these when my mom used to make them when I was a child, and although that was many moons ago, they still make me feel like a kid when I eat 'em! The melted chocolate drizzle at the end makes these brownies rich and very chocolaty!!

- For the brownies, melt chocolate and butter in a saucepan over very low heat, stirring constantly.
- Remove chocolate/butter mixture from heat and stir in the sugar.
- Beat in the eggs, one at a time.
- Be sure to mix well.
- Blend in the vanilla.
- Combine flour and salt, add to mixture and blend together.
- Spread the batter into a buttered 9 inch square baking pan.
- Bake in a pre-heated 350 degree oven for 45-50 minutes.
- Cool brownies in the pan on a rack for 10 minute.
- Topping:.
- While brownies are cooling, melt butter and chocolate in saucepan for topping.
- Sprinkle brownies evenly with marshmallows and walnuts.
- Return brownies to oven and bake another 3 minutes.
- Remove brownies and drizzle with the melted chocolate.
- Cool in pan, then cut into squares or rectangles.

- Tip:.
- If you want to reduce the calories, just cut the marshmallows to 1 cup, and omit the walnuts, but if your gonna eat brownies WHY would ya do that?

- Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 8- or 9-inch square pan with shortening or cooking spray. Make brownie batter as directed on box. Stir in 2/3 cup of the chocolate chips. Spread in pan.
- Bake brownies as directed on box. Immediately after removing from oven, sprinkle with miniature marshmallows, remaining 1/3 cup chocolate chips and the peanuts.
