FRIED PIES

Fried Pies image

Steps:

  • To make the pastry, mix together the flour, granulated sugar and salt. Cut in 1 cup of the shortening until the mixture resembles coarse crumbs. Add 1 of the eggs and the buttermilk and stir until it just comes together. Add a little more buttermilk if needed. Form it into a ball and refrigerate for at least an hour.
  • To make the pies, roll the pastry out into a large square. Trim the edges to make a rectangle. Cut into 8 to 10 long rectangles, using a butter knife.
  • Spoon a tablespoon or so of filling into the top half of one of the rectangles.
  • Use the remaining beaten eggs to seal the edges by folding the bottom half of the rectangle over the top. Then crimp the edges shut with a fork. Repeat with the other pies, filling half with apple pie filling and half with cherry pie filling.
  • Heat shortening in a medium, deep saucepan over medium-high heat to 350 degrees F. Fry the pies until golden brown, 2 to 3 minutes per side. Remove and immediately drain on paper towels.
  • Sprinkle with powdered sugar and serve.

  • In a medium bowl, mix together flour, sugar, baking powder, and salt. Cut in lard until mixture resembles coarse meal.

Steps:

  • 1. In a large bowl, combine flour and salt. Cut in crisco with a pastry knife until it resembles coarse crumbs.
  • 2. Combine beaten egg and ice water. Sprinkle over flour. Add in white vinegar. Mix until it all comes together to form a ball. Add more water if its looks too dry. Wrap in plastic wrap and refrigerate for 30 minutes.
  • 3. Roll out dough into 6 inch rounds. Fill with favorite fruit filling, wet edges with a little water, fold over and crimp together with a fork.
  • 4. Deep fry for 2-4 minutes until golden brown. Sprinkle with cinnamon and sugar.

Steps:

  • Combine dry ingredients in a large mixing bowl.
  • Cut in shortening (suggested to cut in half then add in the other half because it makes the pastry both tender and flaky)until it resembles coarse meal.
  • Mix water and vinegar together,set aside.
  • Add in water mixture, stirring with a fork until dry ingredients are moistened.
  • Add a little more water if dough seems too dry; shape dough into a ball and chill at least 1 hour, until ready to use.
  • Preferred filling Our Family's Fried Pies.
  • Roll out a ball of pastry about the size of a golf ball.
  • Spoon 1 heaping tablespoon of fruit filling on 1/2 of pastry circle leaving about a half inch edge.
  • Fold over and seal with a fork.
  • ***Pies may be frozen at this point.
  • Fry frozen or thawed pies in a skillet of hot oil(preferred Crisco at 375 degrees in cast iron skillet) until golden brown.
  • Remove to a paper towel lined plate.
  • Can be eaten as is (preferred)or sprinkle with powdered sugar, lightly.

Mummy Hand Pies image

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the pumpkin, sweetened condensed milk, cinnamon, ginger, nutmeg and a pinch of salt to a medium bowl and stir to combine.
  • Roll out 1 pie crust on a lightly floured surface with a rolling pin to form a rectangle about 9 inches by 12 inches. Square off the crust with a knife, reserving the scraps for decorating. Cut the pie crust into 6 equal rectangles, each about 3 inches by 6 inches. Transfer to a parchment-lined baking sheet.
  • Roll out the other pie crust to the same thickness as the first. Cut into thin strips about 1/4 inch wide and 7 inches long. Repeat with the reserved dough scraps. Transfer the strips to a parchment-lined baking sheet.
  • Add 1 heaping tablespoon of the filling to the center of each rectangular crust. Use the back of a spoon to spread out the filling, leaving about a 1/2-inch border around the edges.
  • Lightly beat the egg with 1 tablespoon water in a small bowl. Use a pastry brush to brush the edges of the pies with the egg wash. Layer the strips of dough, varying the angle of each strip to create a "mummy" look. Seal the edges with a fork and use a paring knife to trim the overhang. Lightly brush the tops of the hand pies with the egg wash. Add 2 raisins to each hand pie for the eyes.
  • Bake, rotating the pan halfway through for even color, until golden brown, 20 to 25 minutes. Cool on a baking rack slightly, about 5 minutes.
  • Serve as is or decorate with a simple icing. Combine the confectioners' sugar in a small bowl with 1/2 teaspoon water. Stir until smooth and glossy. Transfer the icing to a resealable plastic bag and snip off the corner. Pipe the icing onto the hand pies using the stripes of pie crust as a guide. Serve.

Mama's Fried Pies image

Steps:

  • Cook fruit in water until tender. Drain and mix with sugar and margarine. Mash well. Refrigerate overnight if possible. Roll out homemade piecrust dough and cut into saucer-sized circles.
  • Spoon fruit onto circles and fold over into crescent shapes, then close the edges completely with a fork. Fry until golden brown. Place fried pies on paper towels to absorb excess oil.
  • Variations: For baked pies, place crescents on a lightly-greased baking sheet in a 400 degree oven until golden brown.
  • For apple pies, use dried apples and add apple pie spice (or nutmeg and cinnamon) and vanilla to taste.
  • For prune pies, use dry, pitted prunes and add vanilla to taste.
  • Place the flour and a dash of salt in a mixing bowl. Add the shortening and cut it in with a pastry blender or use your hands, as I do. Add the water, a teaspoon at a time, kneading until the dough is smooth.

Fried Pie Crust image

Steps:

  • Mix all ingredients. Roll dough to 1/8 inch thick. Cut into circles. Make circles at least 4". Fill pastry with 1 heaping tablespoon prepared fruit. Fold circle in half, seal edges with fork if you don't have plastic utensils for making pot stickers and the like. Fry until golden brown in about 1/4" canola oil. Great served hot or cold.

1/4 cup Crisco (if you're really "southern" you can use lard)

MY MOMMA'S FRIED PIE PASTRY

This is the recipe my momma always used when she would make her fried apple pies. I know it has to be at least 50 years old! I can remember coming in from school and my momma would be frying these and the smell, OMG! These are delicious when made with a dried apple filling. In the fall when the apples were abundant, we made our own dried apples specifically for this purpose. Of course, an applie pie was pretty good too! My Momma's Fried Pie Pastry image

Steps:

  • Combine all purpose flour, baking powder, and salt in a large mixing bowl. Cut the butter and shortening into the flour mixture a little at a time until it resembles a coarse meal. This makes for a flakier crust. Blend in the ice water a little at a time. Depending on the humidity of your house, it may take more or less ice water. Form the pastry into a ball, cover, and let chill overnight in refrigerator.
  • The next day, let the pastry sit until it reaches room temperature. Roll out a golf size ball of pastry into a round. Fill with 2 1/2 teaspoons of desired filling. Seal the edges with a fork. Dip the pie into milk. Fry in hot shortening or oil in a cast iron skillet. Drain on a paper towel lined plate.

And of course the original name isn't Totally Awesome, it is called Standard Pastry.

Steps:

  • Mix Five Roses Flour, salt and baking powder together.
  • Cut in shortening with two knives or pastry blender.
  • Add ice cold water, a little at a time, using just enough to bind the mixture so the dough can be patted lightly to form a ball. HANDLE AS LITTLE AS POSSIBLE.
  • Form 2/3 of dough into a round disc and place on lightly floured board. Save remaining dough for top crust. Roll dough from center outward, with a light, even pressure, to form a circle 1/8 inch thick and an inch larger than the pie plate.
  • Fold double and lift gently into pie plate. Unfold and fit loosely in place. DO NOT STRETCH.
  • Trim edges, allowing 1/4 to 1/2 inch extra all around. Put in a generous amount of filling. Heap fruit filling in center because it will cook down during baking.
  • Roll out top crust; fold double and cut slits or fancy design near center to allow steam to escape.
  • Brush edges of bottom crust with water, fit top crust over filling and lightly press top edges together. Trim edges evenly and flute.
  • Bake as directed for pie filling.
  • Yield: One 9 inch double crust pie or two 9 inch single shells.
  • Single Shell:.
  • Use only 1/2 of dough for each single shell. Arrange bottom crust in pie pan as above.
  • Press pastry to rim of pie plate; flute.
  • Add filling. Bake as directed for filling.

Steps:

  • Combine flour and sugar into the bowl of an electric mixer. Cut butter into tablespoon pieces; add it to the flour and butter. Use the paddle beater to cut the butter and flour together. Alternatively, this can be done by hand with a pastry blender.
  • With the mixer on low speed , or while stirring the mixture with a fork, pour in the cold water. When the dough starts to clump, and before it turns into a ball, stop stirring.
  • Lightly knead dough in the bowl until it forms a ball. Divide dough into two parts. Flatten each part into a disk, and chill for about 30 minutes before rolling.
