BROILED TILAPIA FISH TACOS WITH CILANTRO-LIME SLAW
This is my own recipe that I developed after trying several other recipes. These tilapia fish tacos are quick, easy, and delicious. My family loves them! Garnish with diced tomato, corn, avocado, red onion, and Mexican cheese.

Steps:
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking pan with aluminum foil. Spray generously with cooking spray.
- Combine Greek yogurt, mayonnaise, lime juice, onion, vinegar, cilantro, hot sauce, salt, and ancho chile powder in a bowl. Stir in shredded cabbage to make the slaw.
- Place tilapia fillets on the prepared baking pan. Squeeze lime juice over fish. Combine cumin, paprika, salt, and garlic powder in another bowl. Sprinkle spice mixture over the fish.
- Bake under the preheated broiler until fish flakes easily with a fork, 8 to 10 minutes.
- Place tortillas between 2 damp paper towels. Warm in the microwave, 1 to 2 minutes.
- Spoon the cooked tilapia onto each tortilla and top with the slaw.

HONEY LIME TILAPIA
Steps:
- In a large bowl, mix the honey, lime juice, and garlic. Season tilapia with salt and pepper, place in the bowl, and marinate 1 hour in the refrigerator.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- Arrange the squash and asparagus in the baking dish. Place tilapia on top of vegetables, and season with poultry seasoning. Discard remaining marinade.
- Bake 20 minutes in the preheated oven, until vegetables are tender and fish is easily flaked. Sprinkle with mozzarella, and continue baking 5 minutes, or until cheese is lightly browned.

PAN FRIED TILAPIA WITH LIME BASIL BEURRE BLANC ON A BED OF WILT
This is an excellent company entree and as good as any you will find in any first class restaurant. Why go out when you can eat this good at home, for half the price. Another entry in the RSC Winter 2005 contest.

Steps:
- For the sauce; combine the lime juice, wine, garlic and shallots in a wide pan, bring to a boil and reduce to 1/4 the volume.
- Pour into a bowl and stir in the cream.
- Whisk in the butter, 1 TBS at a time, until thoroughly combined.
- Stir in the fresh basil and hold the sauce in a warm place until ready to serve.
- For the spinach, slice the garlic into thin slivers.
- Heat a large saute pan over medium heat for 30 seconds.
- Add the butter and, when half of it has melted, add the garlic.
- Cook, stirring constantly, for about 45 seconds or until the garlic is tender and fragrant.
- Add the spinach leaves, and season with salt and pepper.
- Use tongs or a spatula to stir the spinach so it cooks evenly.
- Remove from heat when all spinach leaves have wilted, setting aside to keep warm while you cook the fish.
- Divide the fillets into 4 pieces.
- Sprinkle lightly with the salt, sugar, pepper and paprika.
- Place a large non-stick skillet over high heat.
- When hot add the oil and butter.
- When the butter begins to melt, swirl to coat the pan.
- Place the fish in the pan and cook for 5 minutes; turning gently until fish flakes easily, do not over cook.
- To serve, place the spinach in an attractive mound on a heated plate, top with the fish fillets and spoon sauce over.
- Serve at once!

DEEP-FRIED TILAPIA (FISH)
This is a no-fail recipe for MILD, white, flaky, not greasy, and delicious fish for either sandwiches or as a main entree on a plate. The trick is to get the cooking oil plenty hot, 375-degrees F or higher. Also, there is no "drenching" in egg wash involved in this recipe. Tilapia works best but Whitefish fillets are also great. Use either Canola oil, Peanut oil, or Crisco. Others may "smoke" at high heat. If you wish to mix in additional favorite herbs or spices into the flour, (e.g., a teaspoon of dried basil, or, Old Bay Seasoning), go right ahead. Easy! Enjoy!

- Heat the oil in a 3- or 4-quart pan to at least 375-degrees F. (just a couple of drops of water flipped off your hand will really crackle when the oil has reached this heat level).
- Roll the DRY and THAWED fish in the flour, shake off excess flour, and let the filets sit on a rack or, on wax paper, for 5-10 minutes.
- Roll the fillets in the flour a second time, shake off excess flour, and deep fry, no more than 2 at a time. (frying more than 2 filets at once drives down the oil temperature which will make the fish and coating soggy!) Turn once in the pan after a minute or so and remove when golden brown. They should be done in under 4 minutes, white and flakey inside at the thickest section of the filet. Do not overcook!
- Drain each filet on paper towels for a few seconds and serve.
CRISPY TILAPIA TACOS

- Combine cabbage, carrot, apple, green onions, cilantro, and lime juice for slaw in a bowl. Combine mayonnaise, garlic, lemon juice, ketchup, and salt for sauce in a separate bowl.
- Place flour in a shallow bowl. Place beaten egg in a second bowl. Combine panko, cumin, salt, and pepper in a third bowl.
- Heat oil in a deep saucepan over medium heat.
- While oil is heating, clean and dry tilapia and cut into 2-inch pieces. Dredge in flour, then egg, then panko mixture.
- Lower fish carefully into the hot oil. Fry until golden brown on both sides, 6 to 8 minutes. Transfer to a paper towel-lined plate to drain.
- Fill tortillas with fish. Top with slaw, mayonnaise sauce, and radishes. Serve with lime wedges.

TANGY PAN FRIED TILAPIA
I don't remember where I got this recipe from but is is lower cal that most. You can also bake but the crust is much better when you pan-fry.

Steps:
- Coat Tilapia fillets in Dijon mustard.
- Then dip in panko to coat.
- Heat oil in skillet on med/high - I try to use as little as I can get away with.
- Pan Fry fillets until golden brown on both sides.
- Try to turn fillets only once since Tilapia is delicate and can fall apart.
- Season with salt and pepper while still hot.
