I believe this recipe comes from Everybody Eats Well in Belgium -- It makes for an interesting loaf!

Steps:
- Preheat oven to 450 degrees F, & brush a meatloaf pan with 1 teaspoon melted butter.
- Soak bread crumbs in 3/4 cup milk.
- In medium skillet, melt the 3 tablespoons of unsalted butter, then add onion & saute 2 minutes.
- Add mushrooms & saute 5 minutes.
- Add garlic & saute 1 minute.
- In a mixing bowl, add ground beef & egg, then squeeze bread crumbs dry & add to bowl.
- Add onion mixture, parsley, sage, oregano, thyme, salt, pepper, nutmeg, port & cognac, & mix well.
- Place meat mixture in prepared pan, & top with rosemary, then bake 30 minutes.
- Reduce heat to 400 degrees F & bake another 15 minutes.
- Remove from oven & let rest 10 minutes before serving.

- Preheat oven to 350*.
- In large bowl mix beef, chopped onions, bread and half of the milk with hands.
- Slowly add the remainder of the milk if needed - too much will make the mixture to runny and it won't form the loaf.
- Shape into loaf and place in a glass 8x8 or 9x13 baking dish, I add just a little water to the bottom of the pan.
- Bake at 350* for 45 min, cover the top of the loaf with the glaze and finish baking for 15-20 min longer.
- Let the loaf sit 10-15 min before slicing.

NOT MY MOMMA'S MEATLOAF

- Preheat the oven to 350 degrees F.
- Pulse the celery, carrots and onions in a food processor until finely chopped. Add the oil to a saute pan over medium-low heat, then add the chopped veggies and cook, covered, until translucent. Transfer the veggies to a plate and cool in the refrigerator.
- Meanwhile, mix together the panko, buttermilk, ketchup, Worcestershire and eggs in a bowl. Add the parsley, salt, black pepper and cayenne and mix well. Once the veggies are cool, add them to the mixture and incorporate. Next add the ground beef and pork and mix thoroughly with your hands.
- Line two loaf pans with parchment paper and divide the meatloaf mixture between them. Cover with foil and bake until the meatloaves reach an internal temperature of 165 degrees F, about 1 hour. Slice and serve immediately, or cool, slice and reheat. Serve with Herb Aioli and Spicy Hollandaise.
- Add the mayonnaise, olive oil, sage, green onions, rosemary, thyme, salt, pepper and egg yolks to a blender or food processor and blend until smooth and well incorporated.
- Melt the butter in small saucepan over medium heat. Blend the yolks, hot sauce, wine, salt and pepper in a blender, then drizzle in the melted butter while blending, until the sauce is smooth.
MY MOTHER'S BELGIAN MEATLOAF
From Ruth van Waerebeek's "Everybody Eats Well in Belgium Cookbook." Ruth call this "My Mother's Meatloaf." She also recommends a variation: adding small cubes of Swiss cheese to the meat mixture, and placing thin slices of smoked bacon atop the loaf while it is baked.

- Preheat oven to 450°F.
- Soak the break in the milk.
- Melt 2 tablespoons of the butter in a medium-sized skillet over medium heat. Add the onion and cook, stirring, for 2 minutes. Add the mushrooms and cook for 5 minutes, then add the garlic, and cook one minute longer.
- In a large mixing bowl, mix the veal with the egg. Use your hands to squeeze the excess moisture out of the soaked break and add the bread to the meat mixture. Add the onion mixture, parsley, sage, salt, pepper, and nutmeg. Finally, add the port and Cognac. Mix everything together until the bread is well worked in and the vegetables and herbs are evenly distributed. The best way to do this is with your hands.
- Cook a small spoonful of the mixture in a hot skillet and taste for seasoning. If you want to serve the meatloaf cold, you will want to add a little extra salt and pepper.
- Brush an ovenproof glass or enamel loaf pan with the melted butter. Shape the meat mixture into a loaf in the pan. Decorate with the sprig of thyme and dot with the remaining tablespoon butter.
- Bake 30 minutes. Reduce heat to 400°F and bake until the meat loaf is cooked through (an instant-read thermometer will register 150 to 160°F), about 15 minutes more. Remove from the oven and let rest for 5 to 10 minutes before serving.

- Preheat the oven to 350 degrees F. Grease a roasting pan with the butter. In a mixing bowl, add beef, pork, onions, peppers, garlic, eggs, cream, and bread crumbs. Blend thoroughly. Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.
MOM'S MEATLOAF
Steps:
- Preheat oven to 350 degrees F.
- In a small bowl, mix together the horseradish, mustard, salt, and pepper. Set aside.
- In large bowl, mix ground beef, onion, egg, and Worcestershire sauce. Add contents of small bowl and mix thoroughly. Add the bread crumbs and combine well.
- Place mixture into a 1-pound loaf pan. Pour ketchup over top and place in oven.
- Bake uncovered for 45 to 60 minutes.

This REALLY is my Mom's meatloaf recipe!!! I remember helping make this as a child, and hearing Mom say, "keep squeezing"!! When it was "squeezed" enough, we plopped it into an old glass casserole dish, and put it in the oven. This recipe is good for folks who can't have, or don't like, the chunks of peppers and onions that you find in most meatloaf. We even served it, listed on the menu as "Mom's Meatloaf", at my brother's restaurant. Our customers loved it! Simple AND tasty!

Steps:
- Empty soup mix packets into a small bowl and add 1/2 to 3/4 cup WARM water, stir with fork until well dissolved.
- Set aside.
- Place hamburger in large bowl.
- Add eggs.
- Work eggs into hamburger with your hands, squeezing handsful until eggs are well mixed with the hamburger.
- The more you work the mixture, the better the meatloaf texture.
- Add oatmeal and continue working the mixture until the oatmeal is mixed evenly throughout.
- Pour the set aside soup mix over hamburger mixture, and again, work through with your hands.
- Place mixture in baking dish of your choice, and form into a loaf.
- Cover with lid or foil.
- Bake at 350*, BASTING OFTEN, until done.
- Bake covered for at least 1 hour.
- Check if done by slicing down the middle, if there is no pink meat, it's done.
- Note: If baking in a metal pan or roaster, grease the pan-- or the bottom of the meatloaf will, as Mom says,"get like shoe leather"!

MOM'S MEATLOAF
Steps:
- Put ground meat in a large bowl. With your fist, push a bowl shape in the middle of the ground meat. Take a handful of crackers and crumble them by hand into the bowl shape in the beef. Beat the eggs and add them on top of the crackers, then pour in the milk. Season with a few shakes of salt and pepper and mix everything together with your hands.
- Sauté peppers and onions in a small pan with about a teaspoon of butter or olive oil until just tender, about five minutes. Add about a third of this to the meatloaf mixture and set the rest aside for the gravy.
- In a separate bowl or plate, crush a generous handful or so of the crackers. Form two large or three small loaves out of the meatloaf mixture and roll each in crushed crackers to coat. Melt about a teaspoon of butter in a large, deep pan and brown meatloaves over medium heat for about ten minutes. Flip each loaf with a long spatula to brown the other side, covering with lid both times.
- While loaves are browning on the second side, sauté sliced mushrooms in a small pan in a teaspoon of butter or olive oil for about five minutes. In a medium-sized pot, combine a large can of diced tomatoes, a jar of your favorite prepared spaghetti sauce, the mushrooms, and the rest of the sautéed peppers and onions. Stir and let simmer for a few minutes, then add to meatloaves. Cover pan, turn heat down to low, and let loaves cook through, about an hour. Serve with blanched green beans and white rice.
MY MOM'S VEGETABLE "MEATLOAF" WITH CHECCA SAUCE

- For the sauce:
- In a food processor, combine the cherry tomatoes, scallions, garlic, basil, oil, salt, and pepper. Pulse the tomatoes until they are coarsely chopped, being careful not to puree them. Transfer the sauce to a bowl.
- For the lentil loaf:
- Preheat the oven to 350°F. Spray a 10 x 4 1/2-inch loaf pan with vegetable oil cooking spray.
- Meanwhile, heat a large skillet over medium heat. Add 1 tablespoon of the olive oil. Add the onion, carrot, and celery and cook until tender, about 5 minutes. Transfer to a large bowl to cool slightly. Reserve the skillet.
- In the same large skillet, cook the spinach over medium heat until the spinach wilts, about 3 minutes. Drain and let cool slightly. Squeeze the excess liquid from the spinach. Transfer the spinach to a cutting board and coarsely chop. Add to the onion mixture.
- Add the lentils, brown rice, 3/4 cup of the mozzarella, the corn, basil, eggs, egg white, salt, pepper, and 3/4 cup of the sauce to the cooled onion mixture. Spoon the mixture into the prepared pan. Arrange the sliced tomatoes in 2 rows over the lentil mixture, covering the top completely. Sprinkle with the remaining 1/4 cup mozzarella and drizzle with the remaining 1 tablespoon olive oil.
- Bake until the loaf is heated through and the topping is melted and starting to brown, 30 to 35 minutes. Let cool for 15 minutes. Slice the loaf (still in the pan) into 1-inch slices, arrange on plates, and serve with the remaining sauce.

- Place bread in food processor and pulse until crumbs.
- Place vegetables in food processor pulse until fine.
- Add beef/ meatloaf mixture mix well with a large wooden spoon or using your hands.

- In a large bowl, beat 2 eggs, ketchup, seasoned salt, Worcestershire sauce, mustard and pepper. Crumble meat over mixture and mix well. Sprinkle with onion and bread crumbs; mix gently. Shape into two loaves, about 9x3 in., On a lightly floured surface, roll out each pastry sheet into an 18x16-in. rectangle. MOM'S MEATLOAF (GERMAN FALSCHE HASE)
Meatloaf served with green beans and mashed potatoes is a tried and true family pleasing comfort meal. Serve extra catsup at the table. I usually double the recipe and make two loaves in order to have extra for meatloaf sandwiches the next day. YUM! Recipe is from my mother who learned it from my Oma, growing up. P.S. My Mother's Bean and Carrot Salad made ahead is a nice side with the meatloaf sandwiches.

- Preheat oven to 400 degrees F.
- Soak white bread in enough milk to make a mush, set aside.
- Mix together ground beef, eggs, onion, salt and pepper; blend well.
- Add bread/milk mixture to the meat mixture.
- Pat meat into a loaf shape and place onto baking sheet with a lip to catch drippings (line the pan with foil for easy cleanup).
- Press bacon slivers gently into top of loaf with pointed tip of a knife.
- Spoon catsup generously (use more or less, to taste) on top of meatloaf, then sprinkle with fine breadcrumbs (the fine breadcrumbs will help catsup from running off).
- Bake for 50-60 minutes, until the meat is nicely browned and topping is caramelized.
- Leftovers make scrumptious sandwiches the following day, so you may wish to double the recipe and make two loaves! My go-to bread for meatloaf sandwiches is Homepride butter-top white (while DH prefers whole-grain); spread with a little catsup and serve sandwiches with sides of My Mother's Bean and Carrot Salad (make ahead).
MOM FLORENCE'S MEATLOAF
My mom made meatloaf this way. You will have enough for sandwiches next day. This is one of those dishes where it's a squirt of this and a shake of that, so you may need more ketchup or more mustard to your taste. Be careful of the mustard; it's strong.
