HAM LOAF WITH MUSTARD SAUCE
Brown sugar, mustard, herbs and spices season this hearty ham loaf. I like to make several loaves to serve to our retirement club. To speed things up, I use my food processor's chopper blade to grind the meat.

Yield 2 ham loaves (6-8 servings each).

Steps:
- In a large bowl, combine the bread crumbs, milk and eggs. Crumble meat over mixture and mix well. In a small bowl, combine brown sugar, cloves and mustard. Spread in two greased 9x5-in. loaf pans. Press meat mixture on top. Bake, uncovered, at 350° for 1-1/2 hours or until a thermometer reads 160°. Let stand for 10 minutes before inverting onto serving platters., For sauce, combine egg yolks, mustard, vinegar, sugar, water and salt in a heavy saucepan. Cook and stir over low heat until mixture is thickened and reaches 160°, about 5 minutes. Remove from the heat. Stir in butter and horseradish. Cool. Fold in cream. Serve with ham loaves.

- 1. Preheat oven to 350 degree F. In a large bowl, mix milk and cracker crumbs. Let crackers absorb milk a few minutes. Mix all remaining ingredients until well blended. Spray a 9 x13 baking dish. Dump in the mixture and shape into loaf as you would for mess loaf. Place in oven and bake for 1 hour.
- 2. While baking, place all glaze ingredients into a small saucepan. Bring to a boil, then simmer for a few minutes, stirring often, until sugar is dissolved and starting to thicken some, remove from heat.
- 3. After hamloaf has baked 1 hour, glaze top and continue baking another 15 minutes. Glaze again, then serve hot. The remaining glaze can be served with.
NANA'S HAM LOAF AND MUSTARD SAUCE
This is a long-time family recipe. It is one of those things that is always requested when everyone gets together. The Mustard Sauce is THE key!! YUM

- Mix all ingredients together and place in loaf pan.
- Slice onion on top of loaf.
- Bake at 350 for 1 1/2 hours.
- Baste occasionally with a few teaspoons of hot water.

- 1/2 cup Tomato Soup, 1/2 cup sugar, 1/2 cup vinegar, 1/2 cup Mustard, 1/2 cup butter, 2 egg yolks - beaten.
- Cook over medium heat until sauce bubbles and thickens.
- Can be served hot or cold.

SUSAN'S SWEET MUSTARD SAUCE FOR HAM
This is the best sweet mustard sauce ever. It's a great accompaniment for your cooked ham, or a great dipping sauce (my kids love it on hard boiled eggs). Everyone wanted Susan's recipe... so here it is. It has a bit of bite... but is kid friendly if they don't eat it straight! If you want to be sure it doesn't have too much bite for the kids, decrease dry mustard... maybe to 2 Tablespoons. Yum!

- Combine all ingredients (beat eggs first).
- Cook on low heat (3 or 4 to start).
- Whisk about every 2 minutes until thickened.
- Don't be tempted to cook on too high a heat as it will cause the eggs to curdle.

- In a small bowl, mix together the flour, sugar and mustard powder until evenly blended. Whisk together the milk and egg yolks in a saucepan, and slowly whisk in the mustard mixture. Stir in the vinegar. Whisking constantly, bring the mixture to a boil over medium heat, reduce heat to low, and simmer until thickened.
