NANA'S FASTNACHTS
These are similar to doughnuts but much tastier! They are usually made on Shrove Tuesday (Fat Tuesday).

Steps:
- Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm. In a small bowl, proof the yeast by adding the warm water to the yeast. Let stand 10 minutes.
- In a large bowl mix together the teaspoon of sugar and 3 cups of the flour. Stir in milk until smooth. Add proofed yeast and mix well. Cover and let rise until doubled in size.
- Stir in beaten eggs, melted butter or margarine, one cup of sugar, salt, and enough of the remaining flour to make a stiff dough. Cover and let rise for a second time until doubled.
- Punch down dough and divide into 2 portions. On a lightly floured surface, roll out dough to 1/2 inch thickness. Cut dough with a biscuit cutter. Make 2 slits with a sharp knife in the middle of each doughnut. Cover and let rise a third time until doubled in size.
- Deep fat fry in oil or lard for 3 to 4 minutes on each side until lightly browned. Rotate to ensure even cooking. Drain on brown paper bags. Toss in confectioners sugar while still warm.

- Sprinkle brown sugar in greased 9x13-inch pan. Pour over whipping cream, set aside.
- In large bowl, combine 1 1/2 cups flour, sugar, yeast, and salt. Add water, egg, and melted butter; beat at low speed until moistened.
- By hand, stir in 1 1/2- 2 cups flour. Knead 3 minutes; let rest 10 minutes.
- Roll dough to a 7x15-inch rectangle. Spread with butter; sprinkle with brown sugar and cinnamon. Roll up tightly and seal edges. Cut into 1-inch rolls.
- Place in prepared pan. Cover and let rise until doubled.
- Bake at 350° for 20-25 minutes.
- Invert onto serving plate.

Sometimes you need rolls FAST. here's a perfect recipe to keep your sleeve for those nights when you want to serve up hot, homemade rolls quickly. FYI, to get the appropriate dough texture, I had to put an additional 1 1/2 cup of flour - so be prepared!

- Preheat the oven to 400 degrees F.
- In a large mixing bowl, combine yeast, water, and honey. Stir in melted butter, salt, and eggs until combined.
- Slowly add in the flour, 1 cup at a time, until dough forms into a ball and easily pulls away from the sides of the mixing bowl.
- Divide into 12 even pieces and shape into balls. Place into a 12-inch cast iron skillet. Cover and let rise 20 minutes, or until double in size.
- Bake in the preheated oven for 25 minutes. Brush with another tablespoon of melted butter if desired.
- Pro Tip: This recipe uses a large amount of yeast to cut rising time as much as possible. If your house is on the colder end, you may want to create a warmer environment for it to proof, or rise. A warm, humid environment between 80 and 90 degrees is ideal for proofing bread. If your house is below 70 to 75 degrees, your rolls will not rise as quickly.

- Preheat oven to 350°. Place bacon on a microwave-safe plate lined with paper towels. Cover with additional paper towels; microwave on high 3-5 minutes or until partially cooked but not crisp. In a small bowl, mix garlic, Italian seasoning, salt and pepper., Starting at a long side, cut steak horizontally in half to within 1/2 in. of opposite side. Open steak flat; Pound with a meat mallet to 1/4-in. thickness., Spread garlic mixture over steak; sprinkle with cheese. Layer with eggs and bacon to within 1 in. of edges; sprinkle with parsley. - dissolve yeast sugar and 1/2 cup water in small cup or bowl. let stand for 15 minutes
- cream shortening and sugar add salt and egg.
- add yeast mixture and 2 cups hot water.
- gradually add flour. once all incorporated knead on lightly floured surface for 10 minutes. let rise in warm place for 1 hour 30 minutes.
- punch down and form into rolls (I use 2 old roasting size pans) 4 rolls across 6 down.
- cover and let rise for 1 hour.
- bake for 10-15 minutes at 400 degrees.

NANA'S BIEROX "GERMAN HAMBURGERS" (BIEROCKS)
My mother made these for us growing up, and now my kids like me to make these easy to eat and handle "hamburgers." These are easy to freeze and reheat. The best dough mix to use is the Pillsbury Hot Roll mix that comes in a blue box.

Steps:
- Brown ground beef and onion in skillet.
- DO NOT DRAIN!
- Add shredded cabbage, salt and pepper to meat and onions and cover. Stirring occasionally.
- While cabbage, meat mixture is cooking, follow the recipe steps 1 - 4 on the Hot Roll mix. Don't form into shapes.
- When dough is ready, pull off small balls of dough and roll out.
- Place meat mixture into middle of the dough.
- Fold the dough around the meat mixture.
- Place on baking sheet and cook at 375 for 15 - 20 minutes, until golden brown.
