ENSALADA DE NARANJA E AGUACATE

Ensalada de Naranja e Aguacate image

Steps:

  • In a small bowl, whisk together the lemon juice, vinegar, mustard, pepper, and salt. Drizzle in the olive oil in a slow, thin stream, whisking all the time until the dressing is emulsified.
  • Peel the avocados and cut them into segments approximately the same size as the oranges. Combine the avocados and oranges in a bowl and toss them gently with just enough dressing to coat. Mound some of the salad on each plate and scatter some mint leaves over the top. Serve immediately.

1/2 tablespoon lemon juice
1 1/2 tablespoons sherry vinegar
3/4 teaspoon Dijon mustard
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
4 tablespoons fruity Spanish olive oil
3 oranges, peel and pith removed, cut into segments
3 avocados, preferably Haas
1/2 bunch fresh mint, leaves only

NARANJADA

This is essentially a fresh orange cooler with a little sparkling water, so it's kind of like a natural soda. It isn't as bubbly, but it is quite refreshing and flavorful.

Yield makes about 4 cups

Steps:

  • Combine the orange juice and sugar in a pitcher and stir until the sugar has dissolved. Taste and add more sugar if you like.
  • Refrigerate until completely chilled. Just before serving, add the sparkling water and serve over ice.

2 cups freshly squeezed orange juice (6 to 8 oranges)
1/3 cup sugar, or more if needed
2 cups sparkling mineral water

This should be delicious. I haven't tried it, yet. A friend lent me her most cherished recipe book and I'm copying as much as I can so I can give it back to her ASAP. Translated from "Atrévete a cocinar" by Karlos Arguiñano. NOTE: (1) The author meant a tbsp to be a soup-spoonful. (2) To peel the orange well the author recommends a well-sharpened knife.

Steps:

  • To peel the oranges, cut off the ends (top and bottom) and cut off skin from top to bottom with knife. Make sure to cut off as much of the white membrane as possible along with the skin but without destroying the basic shape of the whole orange.
  • Slice the oranges width-wise and arrange on plate.
  • In a mixing bowl, whisk together olive oil and honey, then drizzle over sliced oranges.
  • Wash off mint leaves, bunch together, chop finely and sprinkle over oranges.

  • Begin by making the caramel sauce first, add 1/3 cup of white sugar into a small fry pan, along with 2 tbsp of cold water and 1/2 tsp of orange juice, heat with a medium heat and do not stir, after 6 to 7 minutes you should have an auburn colored sauce, do not over cook, evenly divide the caramel sauce into 4 individual flan ramekins, add the ramekins to a casserole dish and set aside
  • To make the custard base, crack 4 large organic eggs into a large bowl and beat the eggs, while you are still beating the eggs start slowly adding in 1/3 cup of white sugar, continue to mix as you add the sugar, once all the sugar has been incorporated start slowly adding in a generous 1 1/2 cups of orange juice, again continue to mix as you add the orange juice, once all the orange juice has been added evenly divide the mixture into the 4 flan ramekins
  • Fill the casserole dish with cold water, to cover the ramekins about 1/2 way through, then add into a preheated oven, bake only option 175 C - 350 F for exactly 45 minutes, then remove from the oven and let the flans cool off on a wire rack for 20 minutes, then cover each ramekin with seran wrap and add to the fridge
  • After 4 hours the flans are ready to be served, using a knife gently run it through the outer edge of the flan, then place a plate on top and flip, gently shake the ramekin and lift, make sure to drizzle any of the left over caramel sauce in the ramekin over the flan, enjoy!
