- Preheat oven to 350°. Place bread cubes on an ungreased 15x10x1-in. baking pan. Bake 20-25 minutes or until toasted. Cool on baking pan., In a large skillet, heat butter over medium-high heat. Add onion and celery; cook and stir 6-8 minutes or until tender. Transfer to a greased 4-qt. slow cooker. Stir in cornbread, chicken, soups, broth and seasonings., Cook, covered, on low 3-4 hours or until heated through.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
- Mix cream-style corn, muffin mix, corn, yogurt, and eggs together in a large bowl. Pour into the prepared dish.
- Bake in the preheated oven for 30 minutes.
- While casserole bakes, toss chicken with barbecue sauce.
- Remove casserole from oven. Top with chicken mixture and sprinkle with Cheddar cheese.
- Return to the oven and bake until cheese melts and chicken is heated through, about 15 minutes.

- Combine all ingredients (except cheese & corn muffin mix into gallon freezer bag.).
- Thaw. Add chicken thighs, green pepper, onion & BBQ sauce to crockpot.
- Cover & cook on low for 4-6 hours until chicken is thoroughly cooked and onions & peppers are soft.
- Shred chicken m& return to crockpot. Cover with cheese.
- In a bowl, prep corn muffin mix according to directions. Pour corn muffin mix into crockpot.
- Add lid & cook on "high" setting for one hour or until cornbread is cooked completely.

Steps:
- Mix barbecue sauce, garlic powder, onion powder, coke, salt and pepper in large freezer bag.
- Add chicken.
- Freeze.
- When ready to serve thaw in fridge.
- Cook in oven or grill.
- In oven, place in pan sprayed with Pam.
- Cook at 350 for about 30 minutes.
- Baste with marinade during cooking.

MEXICAN CHICKEN- OAMC
This is really a versatile recipe, and economical, too. It can be used so many ways... as a filling for burritos, a topping for nachos, or as a side dish. I've also served it in bowls with nachos for scooping. I like to add some cheese no matter how I serve it. I had never cooked with barley before I started making this, but found it easy and tasty- kind of like rice. As prepared here it makes a lot, but you could easily half the recipe.

- In a large Dutch oven, cook the onion and garlic in oil until tender.
- Add in all ingredients (including spices) except for chicken. Bring to a boil.
- Reduce heat and simmer 10 minutes, stirring occasionally.
- Add the cooked chicken; continue simmering another 10 minutes or until the chicken is heated through and the barley is tender.
- To freeze: cool, spoon into quart-sized freezer bags, label, and freeze flat.
- To serve: Thaw chicken mixture. Heat in a skillet until hot. Serve over corn tortilla chips or scoop into flour tortillas, fajita-style.
- Note: If you choose to use regular barley rather than quick cooking barley, you'll want to cook it ahead of time, which takes about an hour. Follow the directions on the box.

- Sauté celery and onion in hot oil in a medium skillet over medium-high heat 7 minutes or until vegetables are tender; set aside.
- Combine cornbread and poultry seasoning in a large bowl.
- Layer half of cornbread mixture on bottom of a lightly greased 11- x 7-inch baking dish.
- Combine onion mixture, chicken, and next 6 ingredients in a bowl. Spoon mixture evenly over top of cornbread mixture in dish.
- Top evenly with remaining half of cornbread mixture, and drizzle with butter.
- Bake, covered, at 350° for 30 minutes or until bubbly.
- Remove from oven, and top with cheese.
- Bake, uncovered, 10 more minutes or until cheese is golden.

- Cover, and cook on "low" for 3-6 hours, until chicken is cooked through and onions and peppers are soft. (The cooking time will depend on the size and strength of your slow cooker).

- In a medium sized bowl, combine the cornbread mix, egg, butter, and milk. Then fold in the corn. Pour mixture into prepared pie pan and bake for 15 minutes or until top is just about set and golden brown. Remove from oven when it's done and set aside.
