RICE CRISPY CHOCOLATE CHIP OATMEAL COOKIES

This is a great cookie recipe! The Rice Krispies cereal adds a crunch, the oats a chewiness, and the gooey chocolate chips of course makes this so perfect! 8)

CRISPY OATMEAL CHOCOLATE CHIP COOKIES (MICHAEL SMITH)

Another recipe from one of my favourite Canadian chefs, Michael Smith. He likes to rely on the senses and intuition instead of following a recipe. BUT this recipe the way it is written, is terrific! I'm sure that these would be less crispy if cooked for less time, but they are perfect the way they are. The molasses and vanilla add the best flavour! These have a nice light crunch, perfect for dipping in a glass of cold milk. Enjoy!

Steps:

  • Preheat your oven to 375°F.
  • Cream the butter, sugar and molasses together in a stand mixer. Beat until well combined and 'creamy'. If you don't have a stand mixer beat vigorously by hand in a large mixing bowl. Add the egg and vanilla to the butter mixture and continue beating until well combined.
  • Meanwhile whisk the flour, oats, salt, baking powder and salt together in a separate bowl.
  • Gradually add the flour mix to the wet mixture, beating just until combined. Stir in the chocolate chips by hand.
  • Using a tablespoon scoop out a ball of the dough and drop onto a lightly greased cookie tray. Flatten slightly. Repeat, leaving lots of room in between the balls for the cookies to expand. Bake for 12-15 minutes. Cool for ten minutes then remove from the tray and try to eat only one!

1/2 cup butter, at room temperature
1 cup sugar
1 tablespoon molasses
1 cup flour
1 cup oats
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 tablespoon vanilla (real vanilla is wonderful in this!)
1 cup chocolate chips

ANYTIME CHOCOLATE CHIP AND OAT COOKIES

This dough is optimized for getting portioned, frozen, and baked right from the freezer, so you are never more than 25 minutes away from a warm, gooey cookie. We couldn't help working in oats, whole grain flour, and nuts and seeds for maximum texture and flavor.

Steps:

  • Place a rack in middle of oven; preheat to 350°F. Toast nuts on a rimmed baking sheet until slightly darkened in color and fragrant, 6-8 minutes. Transfer to a plate and let cool.
  • Meanwhile, spread out seeds and coconut on same baking sheet and toast until seeds are slightly darkened in color and coconut is golden, about 5 minutes. Let cool on baking sheet.
  • Whisk all-purpose flour, whole grain flour, salt, and baking soda in a medium bowl to combine. Vigorously whisk brown sugar and butter in a large bowl until very thick and smooth, about 30 seconds. Add eggs and vanilla; whisk vigorously until mixture is light and satiny, about 30 seconds. Add dry ingredients and whisk until completely incorporated and batter is smooth. Fold in nuts, seeds, coconut, chocolate, and oats with a rubber spatula until thoroughly distributed.
  • Using a 2-oz. scoop or ¼ cup measuring cup, portion out dough, placing on a parchment-lined baking sheet as you go and spacing as close together as possible (it's okay if they touch slightly). Cover tightly with plastic wrap and freeze until frozen solid, 2-3 hours. (If you can't wait for cookies to freeze, chill in refrigerator just until firm instead, at least 30 minutes and up to 3 days. Cookies might bake a minute or two faster.)
  • If needed, reheat oven to 350°F. Arrange up to 8 cookies on a large parchment-lined baking sheet, spacing at least 2" apart. (These cookies are large and will spread, so use another baking sheet if baking more than 8 cookies and place racks in upper and lower thirds of oven.) Bake, rotating baking sheet front to back (and top to bottom if using 2) halfway through, until deep golden brown and wrinkled around the edges (centers should still be pale and slightly shiny), 16-20 minutes. Let cool on baking sheet.
  • Do Ahead: Dough can be made 2 months ahead; transfer frozen balls to an airtight container and keep frozen. Cookies can be baked 3 days ahead; store airtight at room temperature.

½ cup chopped pecans or walnuts
½ cup raw seeds (such as pumpkin, sunflower, sesame, flaxseed, and/or hemp)
¼ cup unsweetened coconut flakes
1 cup (125 g) all-purpose flour
⅔ cup (42 g) whole grain flour (such as buckwheat, spelt, or rye)
1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt
1¼ tsp. baking soda
1½ cups (packed; 300 g) light brown sugar
1 cup (2 sticks) unsalted butter, melted, slightly cooled
2 large eggs, room temperature
1 Tbsp. vanilla extract
8 oz. semisweet chocolate, coarsely chopped, or 1¼ cups semisweet chocolate chips or wafers (disks, pistoles, fèves)
1 cup old-fashioned oats

Steps:

  • Set 2 racks in the middle and upper thirds of the oven and preheat to 350 degrees F.
  • In a medium bowl, stir the flour, baking powder, baking soda, salt, oats, and pecans together with a whisk or fork.
  • In a large bowl, beat the butter, brown sugar, and granulated sugar together for 30 seconds until blended. Beat in the egg until smooth and barely fluffy. With mixer running on medium high, drizzle in the maple syrup, and vanilla until incorporated. Turn the mixer down to its lowest setting and gradually add the flour-oatmeal mixture. Blend just to combine, then mix in the chocolate chips.
  • Drop walnut-sized balls of dough onto a nonstick or parchment-lined cookie sheet at 3-inch intervals. With moistened fingers, flatten and round out the cookies a little. Bake for 9 minutes, turning the pan once for even baking. The cookies are done when they are lightly browned on top. Set the cookie sheets on a rack to cool.

1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups rolled (old-fashioned) oats
1/2 cup coarsely chopped pecans
8 tablespoons (1 stick) unsalted butter, at room temperature
1/2 cup lightly packed light brown sugar
1/2 cup granulated sugar
1 large egg
1/4 cup maple syrup
1/2 teaspoon vanilla extract
3/4 cup semisweet chocolate chips

OATMEAL RICE CRISPY CHOCOLATE CHIP MAC-NUT COOKIES

adapted from JANIC412's recipe Oatmeal Chocolate Chip Cookies II, with reduced sugar and reduced fat. It's adds an interesting crunch from the rice crispies, but are more... cakey in texture and don't spread very much while baking. they are best eaten fresh as the rice crispies get soggy over the course of the next few days. perhaps you can substitute corn flakes to get a better texture.

OATMEAL CHOCOLATE CHIP COOKIES

These taste distinctly homemade: much smaller than giant, thick bakery-style disks and more delicate, with just enough buttery dough to bind the chocolate and oats. Mixing by hand turns out cookies that are crisp at the edges and tender in the centers. These can be mixed and baked in under an hour, but the dough balls also can be packed in an airtight container and refrigerated for up to 3 days, or frozen for up to a month. You can bake them from ice-cold, though they'll need a few more minutes to turn golden brown.

Steps:

  • Heat oven to 350 degrees. Line 2 large baking sheets with parchment paper.
  • Whisk the flour, baking soda and salt in a small bowl. Mix the butter and both sugars in a large bowl with a wooden spoon until creamy. Beat in the egg until incorporated, then stir in the cream and vanilla.
  • Add the flour mixture and gently stir until no traces of flour remain. Add the oats, chocolate chips and nuts (if using), and fold until evenly distributed. Loosely scoop a rounded ball of dough using a measuring tablespoon or small cookie scoop and drop onto a prepared sheet. Repeat with the remaining dough, spacing the balls 2 inches apart.
  • Bake, 1 sheet at a time, until golden brown, 12 to 14 minutes. Cool on the sheet on a wire rack for 1 minute, then transfer the cookies to the rack to cool completely. The cookies will keep in an airtight container at room temperature for up to 5 days or in the freezer for up to 2 months.
