CILANTRO LIME GRILLED TOFU
Flavorful tofu, perfect for summer grilling. This is my absolute favorite way to eat tofu. The marinade is delicious and extremely flavorful. Serve with grilled vegetables or in a tortilla.

Steps:
- Place the block of tofu onto a plate and place another plate on top. Set a 3 to 5 pound weight on top (a container filled with water works well). Press the tofu for 20 to 30 minutes, then drain off and discard the accumulated liquid. Slice the tofu lengthwise into 4 thick slabs or cut into cubes and thread on skewers. Place tofu pieces or skewers on a plate.
- Whisk together the lime juice, olive oil, cilantro, garlic, chili powder, cayenne pepper, salt, and black pepper in a bowl. Brush the tofu with the marinade. Cover the plate with plastic wrap, and marinate tofu in the refrigerator for 2 hours or overnight.
- Preheat an outdoor grill for medium heat, and lightly oil the grate. Grill the tofu until almost blackened in spots, brushing occasionally with the marinade, about 10 to 15 minutes.

Steps:
- Slice tofu in half lengthwise, then cut each half into two long strips, approximately 1/2-inch thick.
- Mix remaining ingredients in a small bowl.
- Lay tofu strips in a shallow pan and pour marinade over, turning tofu to coat. Marinade for at least 1 hour, or as long as overnight.
- Heat oil in grill or nonstick pan over high heat. Sear tofu on each side until browned and heated through, approximately 2-3 minutes per side.

Steps:
- Cut tofu into slices 2"long by 1/2" wide.
- Combine remaining ingredients in a small pot and bring to to a boil.
- Simmer for 5 min, remove from heat and pour over tofu. Marinade in glass bowl for several hours or preferably overnight.
- Pour off marinade and bake tofu slices for 15 minutes in 350 degree oven, basting with remaining marinade each five minutes.
- Serve over rice, or mix with noodles and remaining marinade.

- Whisk together oil, lime juice, cumin, chili powder and garlic in a large, shallow dish to make a marinade.
- Arrange meat or fish in dish and rub all over with marinade, then cover and refrigerate for 2 to 3 hours, turning occasionally.
ANCHO CHILI AND LIME MARINADE
I love this marinade! I marinated fajita steak strips for less than an hour and it was still very flavorful. Ancho chile power is mild, so don't be afraid. Oh, I can't say it enough...season meat with salt before cooking.

Steps:
- Soak dry chiles in water overnight or until soft. Remove seeds. Add all ingredients except meat in food processor. Puree until smooth.
- Spread mixture over meat and refrigerate at least one hour, up to 24 hours.
- Heat grill to about 400 degrees, or if cooking inside heat small amount of oil in skillet or grill pan over high heat. Salt meat to taste. Grill meat about 4 minutes per side, depending upon thickness, until done.
