OH SO RICH BAKED MACARONI AND CHEESE
A very good and rich version of mac and cheese. The cheeses can be changed out with many others to change the flavor to your preference of cheeses.

Steps:
- Preheat oven to 400 degrees Fahrenheit.
- Mix melted butter with the breadcrumbs.
- Cook macaroni in 4 quarts salted boiling water, al dente, then drain.
- Dry pot and melt remaining butter over medium heat. Add garlic, mustard, and cayenne pepper. Cook approximately 30 seconds.
- Add flour, cook until golden.
- Slowly add milk and broth, whisking as it is added. Simmer and whisk approximately 6 minutes. Liquid should coat the back of a spoon.
- Remove from heat.
- Whisk in cheese until melted. Salt and pepper to taste.
- Add cooked pasta, mix evenly.
- Place mixture in 9x13 pan, cover surface with breadcrumbs. Bake 25-30 minutes. Breadcrumbs will be brown and the edges should be bubbling.
- Cool 10 minutes.

EXTRA RICH-AND-CREAMY MACARONI AND CHEESE

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
- Combine the evaporated milk, eggs, havarti, Colby jack, 1/2 teaspoon salt and the nutmeg in a large saucepan over medium heat. Cook, whisking constantly, until smooth and thickened, about 8 minutes. Remove from the heat.
- Add the pasta and sour cream to the sauce; toss to coat, then let sit 5 minutes so the sauce thickens slightly. Add the reserved cooking water to loosen, if desired.
BAKED MACARONI AND CHEESE

- For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
- Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
- For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. Add the drained macaroni to the cheese sauce and mix thoroughly.
- For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.
- Transfer the macaroni and cheese to the prepared baking dish and top with the buttered breadcrumbs. Bake until the dish bubbles around the edges, about 15 minutes.

- Heat oven to 350.
- Cook macaroni in boiling water according to directions. Drain. Pour into a 3 quart casserole.
- In a saucepan, melt butter and stir in flour. Gradually stir in milk and sour cream. Add salt and pepper.
- Cook over low heat, stirring constantly,until bubbly and thicken.
- Reserve 1 cup of cheese for the top of casserole. Toss macaroni with remaining cheese. Pour sauce over macaroni and mix.
- Sprinkle remaining cheese.

BAKED MACARONI AND CHEESE
Where I grew up the standard macaroni and cheese was creamy, like the stuff that comes in a box. But my mom always made the custard version. Some places I've lived that was the usual kind and the creamy one was the oddity. Wherever you live, this is delicious! Make it plain or try one of the variations.

- Cook macaroni according to package directions but stop a minute or two short of fully cooked. Drain and rinse.
- Grease or butter an 8x12 or 13x9 baking pan. (A half batch can be made in a 9 inch square pan).
- Spread 1/3 of the macaroni in the pan. Top with 1/3 of the cheese slices. Salt and pepper to taste.
- Repeat twice, alternating the directions the slices run so as to fill all the gaps.
- Beat eggs into the milk.
- Pour into the casserole dish. You want this custard to come within about 1/2 inch of the top of the pan. The shape and size of the dish may require more or less -- just keep the proportion of 2 eggs per cup of milk.
- Bake at 350°F for 60-90 minutes or until a knife inserted in the center comes out clean of custard (it might be a bit cheesy).
- Tip -- this is apt to overflow a little if you got the custard too far up to the top. Best to bake it on the upper rack with a baking sheet on the rack below to catch any drips.
- Variations -- Add things like leftover cooked chicken or turkey, leftover ham, cooked broccoli, VERY well-drained frozen spinach, peas, ?.
- You can also vary the cheese used. I've had it with cheddar, American, Swiss (extra good with ham and broccoli), and mozzarella.
- You can also try adding different herbs. IMO, nothing wakes up bland food like a dash of sherry or a pinch of celery seed. A bit of garlic, thyme, or Italian seasoning can be good depending on the cheese used.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Coat a 2-quart broiler-safe baking dish with nonstick cooking spray.
- Bring a large pot of lightly salted water to boiling; add penne.
- Cook penne for 6 minutes; drain.
- In a large bowl, toss together the cheddar, gruyere and asiago cheeses; set aside.
- Meanwhile, in a medium-size saucepan, melt unsalted butter over medium heat; whisk in flour until smooth and slightly bubbly.
- In a thin stream, whisk in the milk; stir in onion powder, salt and cayenne pepper.
- Bring to a boil over medium-high heat; reduce heat and simmer 3 minutes.
- Remove from heat and whisk in 2-1/2 cups of the cheese mixture.
- In a pasta pot, stir together the cooked penne and the cheese sauce.
- Pour half of mixture into the prepared baking dish.
- Sprinkle with a generous cup of the cheese.
- Spoon in the remaining penne and top with the remaining cheese sauce.
- Bake for 20 minutes.
- Increase the oven temperature to broil and cook another 3 minutes or until the top is lightly browned.
- Cool slightly before serving.
RICH 'N' CHEESY MACARONI
This delicious dish puts a new twist on traditional macaroni and cheese. The three different cheese flavors blend wonderfully. Plus, it's easy to prepare-I plan to make it often when husband Ken and I start traveling.

- Cook elbow macaroni as directed on package, drain well.
- Place macaroni in large bowl or the pot used for cooking it.
- Add melted butter, and evaporated milk.

- Preheat oven to 350°F. Combine macaroni, 1-1/2 cups of the cheddar cheese, the spinach, tomatoes and Parmesan cheese in large bowl; set aside. Heat oil in medium saucepan on low heat 1 min. Add onions; cook 2 to 3 min. or until crisp-tender. Add flour; mix well. Cook 2 min., stirring constantly. Gradually add milk, stirring until well blended after each addition.
