OLD WEST BAKED BEANS
This slow-baked molasses-and-mustard-flavored western favorite is a perfect party food because it can be made days ahead and just gets better with time. Enjoy it while watching Blazing Saddles,, which, according to creator Mel Brooks, is best seen on video. Claims Brooks, "I can't watch Blazing Saddles on television ... A lot of prudes got together and silly people got together and they cut out everything they thought would be offensive to a 4-year-old."

Steps:
- Soak the beans overnight in water in a large bowl.
- Preheat the oven to 375 degrees F.
- Saute the onions and pork over medium heat in a cast iron Dutch oven until the onions are tender, abut 10 minutes. Add the drained beans, pork, chicken stock, cayenne, molasses, ketchup, brown sugar, and salt and pepper to taste and bring to a boil.
- Cover the casserole and transfer to the oven. Bake to 3 1/2 to 4 hours, until the beans are tender.
- Serve topped with a sprinkle of brown sugar.

- GRILL DIRECTIONS: Heat grill. In medium bowl, combine ground beef, bread crumbs, barbecue sauce and pepper; mix well. Shape mixture into four 3-inch patties. Place each patty on 18x12-inch piece of heavy-duty foil; top each with 1/4 of the beans and onion rings. Wrap each packet securely with double-fold seals. When ready to grill, place packets, seam side up, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 20 to 30 minutes or until meat is no longer pink in center. OVEN DIRECTIONS: Heat oven to 350°F. Prepare recipe as directed above. Place packets, seam side up, in 15x10xl-inch baking pan. - Preheat oven to 350.
- In ovenproof kettle, cook beef, bacon, and onion over moderate heat, stirring to break up lumps for about 20 minutes or until beef is no longer pink & bacon is slightly crisp. Transfer to a large strainer to drain the grease & then return to the kettle. Add ketchup, barbecue sauce, mustard, molasses, chili powder, & six cans of beans. Stir until well combined.
- Note: you can modify the types beans to your liking. I don't use kidney beans myself; however you can add them in place of the pink ones. Can't really go wrong with whatever kind you chose!
- Bake mixture, covered, in middle of oven for at least an hour. Serves about 20 as a side dish.

My husband does not like baked beans but can't get enough of these. They are loaded with a variety of meats and get a little bit of sweetness from molasses and brown sugar. If you don't have a slow cooker, you can bake them in the oven until heated through.
