This is the easiest cake you'll ever make! You mix it in the same pan you bake it in!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
- In prepared pan, combine cake mix, oil, eggs, and water. Stir together until cake mix is moistened, breaking up any large lumps in the batter and spreading to cover bottom of pan. Spoon on pie filling to form strips evenly spaced over batter, but not too close to edge of pan. Gently fold batter over pie filling, creating a swirl pattern and spreading out to form an even layer.
- Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
- For the topping: Mix together the crushed pineapple and instant pudding. Refrigerate for 5 minutes, or until thickened. Fold in whipped topping, then spread over cooled cake. Keep refrigerated until ready to serve.

- Grease and flour 3 (9-inch) cake pans.
- Using an electric mixer, cream butter until fluffy. Add sugar and continue to cream well for 6 to 8 minutes. Add eggs, 1 at a time, beating well after each addition. Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla and continue to beat until just mixed.
- Divide batter equally among prepared pans. Level batter in each pan by holding pan 3 or 4 inches above counter, then dropping it flat onto counter. Do this several times to release air bubbles and assure you of a more level cake.
- Bake for 25 to 30 minutes or until done.
- Cool in pans 5 to 10 minutes. Invert cakes onto cooling racks. Cool completely and spread cake layers with your favorite frosting to make a 3-layer cake.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch round pans.
- Beat butter and 1 cup of sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color.
- In a separate bowl, beat egg yolks well, then add to butter mixture.
- Sift together flour and baking powder. Add alternately with the milk to the butter-sugar mixture. Beat well. Add vanilla.
- Beat egg whites until stiff but not dry. Add 1 cup sugar to the egg whites. Fold into cake batter.
- Divide evenly into three prepared 9 inch round pans. Bake at 350 degrees F (175 degrees C) for 25 minutes.

TWO-TIER STACKED CAKE

- For the cake: Preheat the oven to 350 degrees F. Grease the bottom and sides of three 6-inch cake pans with cooking spray. Grease the bottom and sides of three 9-inch cake pans with cooking spray.
- For the 6-inch cakes: Place 1 box cake mix, 1 cup water, 1/3 cup vegetable oil and 3 eggs in the bowl of a stand mixer fitted with the paddle attachment and mix on low speed for 30 seconds. Increase the speed to medium for 2 minutes. Divide the batter among the prepared 6-inch pans and bake until a toothpick inserted in the center comes out clean, about 30 minutes. Cool completely on a wire rack.
- For the 9-inch cakes: Place the remaining 2 boxes cake mix, 2 cups water, 2/3 cup vegetable oil and 6 eggs in the bowl of a stand mixer fitted with the paddle attachment and mix on low speed for 30 seconds. Increase the speed to medium for 2 minutes. Divide the batter among the prepared 9-inch pans and bake until a toothpick inserted in the center comes out clean, 35 to 40 minutes. Cool completely on a wire rack.
- For the buttercream: Beat the butter in the bowl of a stand mixer fitted with a paddle attachment on high speed until fluffy, about 2 minutes. With the mixer on low speed, gradually add the confectioners' sugar and milk, 1 tablespoon at a time, alternating between the two until no lumps remain. Add the vanilla and salt and mix until incorporated. Transfer the buttercream to a piping bag fitted with a 2D tip.
- Place one 9-inch cake layer on a 10-inch cardboard round and place on a rotating cake stand. Pipe 1 to 1 1/2 cups buttercream on top and use an offset spatula to spread into an even layer. Place a second 9-inch cake layer on top of the buttercream and pipe another 1 1/2 cups buttercream on top. Spread into an even layer, then top with the last 9-inch cake layer.
- To apply a crumb coat, pipe about 2 cups buttercream on the top and sides of the cake and use an offset spatula or bench scraper to make smooth. Remove excess buttercream and scrape into a bowl. Transfer cake to the refrigerator and chill for 30 minutes.
- Repeat the process with the 6-inch cakes and chill.
- Remove the cakes from the refrigerator.
- Press a 6-inch cardboard round in the center of the 9-inch cake to make an outline. Remove the cardboard. Push 1 cake dowel or bubble tea straw into the cake within the outline you just made.
- Make a line with an edible pen where the top of the cake hits the dowel. Remove the dowel and cut at the line. Use the cut dowel as a model to cut 3 more. Push the 4 dowels evenly into the cake within the outline.
- Gently place the 6-inch cake on top of the dowels. Thread a long dowel through both cakes. Cover the top of the wooden dowel with frosting.
- Using a small round tip, pipe more buttercream in the gap between the cakes, or smooth with a spatula.
3-2-1 CAKE
3 ingredients, microwavable, GOOD! I found this recipe somewhere, but I go to SO many recipe sites, I can't remember where. This is a VERY easy, VERY good, VERY quick, single serve cake! Your choice of flavors. I prefer Chocolate! The 3-2-1 comes from 3 tablespoons cake mix, 2 tablespoons water and 1 minute in the microwave. You can make it a little bigger by adding more cake mix and a little more water to cake battter consistency. I made this for the hubby and he loved it! Going to try other flavor cake mixes with it too. Made the chocolate cake and topped it with sliced sugared strawberries! Whipped cream, ice cream and toppings, even icing would be good toppers!

- Mix Angel Food cake mix and your choice flavor cake mix (I used devils' food).
- Put both in zip lock bag and mix well.
- When ready for your quick cake snack attack, take 3 tablespoons cake mix.
- Put in microwavable small ramekin or bowl.
- Mix in 2 tablespoons water; mix well.
- Microwave on high, 1 minute.
- Cool and top with whipped cream or icing of your choice or just eat it plain.
- Just enough for that quick fix, snack attack!
- Prep time includes opening and mixing the cake mixes in zip lock bag and measuring out mix and water and mixing together.

1 2 3 - THE EASIEST YOGURT-BASED SPONGE CAKE! (NO MEASURING EQUIPMENT REQUIRED)
When you're short of time but are craving for a bit of homemade cake, this is a great and quick easy recipe to have a go at - even with the kids! What's more, there is no need for any measuring equipment - your yogurt pot does all of it for you! Less washing up is great news! Using only basic ingredients that you'll probably have in our kitchen, you'll be surprised by the results!

- Before starting, preheat your oven to 180°C. This will avoid you waiting around once you have finished making the batter which takes under 5 minutes!
- Take a mixing bowl and add to it your pot of plain yogurt. Then, once rinsed out and dried, use it to measure 3 pots of flour and 2 pots of sugar and add this to the mix. Using a fork (or electronic whisk), mix the contents. Again, using the same yogurt pot, measure 1/2 pot of oil and 1/2 pot of milk and add to the bowl. Then, measure out the 1 tbsp of baking powder and crack to eggs into the batter. Mix (tilting the bowl and moving the fork in a circular motion to get as much air in as possible) until the mixture is nice and smooth, free from lumps. If there are any chocolate fanatics out there, you could swirl in some melted chocolate for a marble effect!
- Take your cake tin and either line it with foil, or spread with butter to avoid it from sticking when you take it out. Then, pour the mixture in and shake the tin from side to side to ensure an even spread. Place it in the oven for around 25 minutes, or until golden brown. Leave to cool for a few minutes before taking out the tin. Serve and enjoy, perhaps with some icing sugar or jam.
