ORANGE DATE BARS
This recipe, slightly tweaked, was found in the September 2008 Taste of Home Bake Sale cookbook. What makes them special is the orange glaze! Preparation time does not include the time needed for the bars to cool.

Steps:
- Preheat oven to 350 degrees F, then grease a 15"x10" baking pan.
- In a saucepan, combine dates, brown sugar, water & butter, then bring to boil, reduce heat & simmer 5 minutes or until dates are softened, stirring occasionally.
- Remove from heat & stir in chocolate chips.
- In a mixing bowl, beat eggs, milk & orange juice.
- In another mixing bowl, combine flour, baking soda & salt, then ALTERNATELY add this dry mixture AND the orange juice mixture to the date mixture, mixing well after each addition.
- Stir in the walnuts, then pour into the prepared baking pan.
- Bake for 25 to 30 minutes or until a toothpick inserted in the middle comes out clean. Remove from oven & let cool on a wire rack.
- For the glaze, in a mixing bowl, combine powdered sugar, butter & orange zest, then stir in milk a little at a time until glaze reaches desired consistency. Spread over the cooled base before cutting.into bars.

- In a saucepan, combine dates, sugar, oil and juice. Cook for 5 minutes to soften dates. Cool. Add egg; mix well. Combine all remaining ingredients and stir into date mixture. , Spread into a greased 8-in. square baking pan. Bake at 350° for 25-30 minutes. Cool before cutting.

ORANGE CHUTNEY

- Quarter the oranges and sprinkle with kosher salt and cure for 24 hours. Rinse off gently, taking care not to squeeze any juice from the oranges. Place in a pot and cover with boiling water, 2 inches above oranges. Add one half cup of salt. Bring to a boil. If water tastes too salty, discard some and add fresh water. Add sugar, vinegar, orange juice, dates and whole spices and allow to simmer. In a separate pan, heat mustard oil over low flame. Add the cumin and aleppo pepper. Cook until fragrant. Add the ginger and garlic and sweat. Combine with orange mixture and simmer until a chutney consistency is achieved.
HEALTHY CHOCOLATE SPREAD
Steps:
- Place the dates in a small bowl of warm water. Soak for 30 minutes.
- Drain the dates, reserving 2 tablespoons of the soaking water. Transfer the dates and reserved water to a food processor and puree until a fine paste is reached, about 2 minutes. Add the sunflower butter and puree for 30 seconds more. Add the cocoa powder, honey and salt and pulse until combined. Store in an airtight container for up to 2 weeks.
DATE NUT SPICE BREAD
Steps:
- Preheat the oven to 350 degrees F. Butter the bottom of an 8 1/2 by 4 1/2 by 2 1/2-inch loaf pan. Line the bottom with parchment paper, then butter and flour the pan.
- Combine the dates and orange liqueur in a small bowl and set aside for 30 minutes. Stir occasionally.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and brown sugar together on medium speed for 1 minute. Scrape down the bowl. With the mixer on low, add the egg, vanilla, and orange zest. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. With the mixer still on low, add the flour mixture alternately with the orange juice to the creamed mixture, beating only until combined. By hand, stir in the dates with their liquid, and the pecans.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 to 60 minutes, until a toothpick comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
- Meanwhile, in the bowl of an electric mixer fitted with the paddle attachment, cream the cream cheese, sugar, and orange zest on medium speed until just combined.
- Slice the bread and serve with the orange cream cheese on the side for spreading.
DATE NUT BREAD
Steps:
- Preheat the oven to 350.
- Grease an 8 1/2 x 4 1/2 x 3 inch loaf pan.
- Put the dates, walnuts, baking soda, salt and shortening in a bowl. Pour the boiling water over and stir. Let the mixture stand for 15 minutes.
- Using a fork, beat the eggs and sugar together in a bowl. Add the flours and stir; the batter will be too stiff to mix well. Add the date mixture and mix briskly until the batter is well blended. Spoon into the loaf pan and bake 40 to 50 minutes. Check the loaf often; it is done when a few moist crumbs cling to a straw inserted in the middle of the loaf. The bread will continue to bake after it is removed from the oven. Do not overbake, or the loaf will be dry.
- When the loaf is done, slide a knife around the edges of the pan and turn the loaf onto a rack to cool completely. This bread freezes well.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Combine orange juice, water, and orange zest in a liquid measuring cup.
- Beat egg slightly in a bowl. Add butter and sugar; beat until smooth. Add orange juice mixture and stir to combine.
- Combine flour, baking powder, soda, and salt in a separate bowl. Stir in walnuts and dates. Pour into batter and stir to moisten. Spoon into the prepared loaf pan.

SPICED ORANGES AND DATES
Fresh oranges and dates in a spiced syrup. Recipe modified from a Woolworths Fresh Magazine recipe. I love fresh dates and this makes for a great fresh fruit dessert. Great served with fresh Greek yogurt or custard. You can add some orange liquer to make this extra special (add with the water and sugar). To toast your almonds- add them to a dry pan and heat them until fragrant and toasted. keep turned or tossed as they will toast quickly. Vegan suitable if served without the custard or yogurt

- Add the water and sugar to a saucespan. Stir over heat until the sugar has dissolved. Add the peel from one orange. cloves, ginger, star anise and cinnamon stick pieces. SImmer 10 minutes or until a syrup forms. Remove from the heat.
- Slice the oranges into thick rounds. Remove the pits from the dates and cut the dates into halves. Add the oranges and dates to the sugar syrup. Set aside for 20 minutes.
- Spoon the fruit onto one large platter to serve -- or into serving bowls. Sprinkle the toasted almonds over the top.
- Serve with yogurt or custard.

Pecans are very plentiful in the South, and this is one of my favorite ways to use them. No other date nut bread I've tried is anywhere near as moist and flavorful as this one. I especially like to bake it for Thanksgiving and Christmas.

- For bread, place eggs, butter, sugar, orange pieces and dates in blender or food processor. Cover and process with on/off motions until finely chopped. Remove to a large bowl. , In separate bowl, sift together flour, baking soda and salt; add to orange mixture and mix until well-combined. Stir in pecans. - Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan.
- In a small saucepan over medium heat, combine sugar, 1/2 cup butter, water and dates. Cook, stirring frequently until dates have softened and the mixture is well blended. Remove from heat.
