ORANGE DREAM CAKE

A fluffy cloud of pudding, whipped topping and oranges makes a melt-in-your-mouth topper for a homemade orange cake.

Steps:

  • In medium bowl, beat pudding mix and 1 cup milk with wire whisk or electric mixer on low speed about 2 minutes or until well blended. Fold in whipped topping. Reserve about 8 orange segments for garnish; stir remaining orange segments into pudding mixture. Cover; refrigerate 1 hour.
  • Meanwhile, heat oven to 350°F. Grease bottom and side of 9-inch round cake pan with shortening or cooking spray; lightly flour.
  • In medium bowl, beat cake ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Stir in grated baking bars. Pour into pan.
  • Bake about 30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour.
  • Place cake on serving plate. Spoon topping onto cake. Garnish with reserved orange segments, the almonds and chocolate curls. Store covered in refrigerator.

Steps:

  • 1. PREPARE GLAZE: In a small bowl, whisk together 1 TBS zest, 1/4 C juice & powdered sugar. Set aside.
  • 2. CAKE: In a medium mixing bowl, combine flour, baking powder, baking soda & salt. Set aside.
  • 3. In a small mixing bowl, whisk together milk, remaining juice & remaining zest. Set aside.
  • 4. In a large mixing bowl, cream together butter, sugar & vanilla. Add eggs. Mix until well blended.
  • 5. Add milk mixture. Beat until smooth.
  • 6. Add flour mixture. Beat until smooth. Pour into greased & floured bundt pan.
  • 7. Bake at 350 degrees for 40 minutes, or until toothpick comes out clean.
  • 8. Remove from oven. Cool as-is on wire rack for 10-15 minutes, until cake loosens from pan. Invert onto wire rack to cool completely.
  • 9. Spoon glaze over cooled cake. Allow to harden in refrigerator. Cut & serve.

Steps:

  • Preheat oven to 350F Generously coat a bundt pan with baking spray (I use Baker's Joy)... be sure to get all the nooks and crannies. Beat the eggs and to this add the milk, orange juice, vegetable oil and the zest of one orange. Set aside. In a separate bowl, whisk together the flour, sugar, baking powder and salt. Add the liquid mixture to the flour mixture and stir until just combined. Add the cream cheese, one tablespoon at a time, and combine well after each addition. Once all the cream cheese has been added, continue to mix for 2 minutes. Pour batter into prepared bundt pan and bake directly on the rack (do NOT bake the bundt pan on a cookie sheet... the air needs to circulate and a cookie sheet will prevent that) in the preheated oven for 40 minutes, or until a knife inserted halfway comes out cleanly. Cool 5 minutes in pan. While the cake is cooling in pan, make the syrup: In a saucepan combine 1/4c orange juice and 1/4c granulated sugar. Bring to a slow boil stirring until sugar has dissolved and let simmer until cake has cooled for 5 minutes in the pan then remove from heat. Invert cake onto cooling rack. Place a sheet of waxed paper under the cooling rack and immediately brush orange juice mixture onto warm cake. Let the cake absorb all of the syrup as it will make the cake moist and full of flavor To make the glaze, combine powdered sugar and milk... let yourself be the judge as to how much glaze you want. If you want it thinner, add small amounts of milk until you have the consistency and amount you want then pour it over the cake... brush on if desired.

Steps:

  • Heat oven to 180C/160C fan/gas 4 and grease a 2.5-litre bundt tin with the cake release spray or butter.
  • Put the sugar, eggs and zest in a large bowl and whisk with an electric hand whisk for about 10 mins until thick and pale. With the mixer on medium-low speed, pour in the juice and oil, mixing until fully combined. Sieve the flour into the bowl and whisk until just combined to a smooth batter. Pour into the prepared tin, place on a baking tray and bake in the oven for 35-40 mins or until a skewer inserted into the cake comes out clean. Allow to cool for 5 mins before carefully turning out onto a wire rack to cool completely.
  • To make the glaze, put the chocolate in a heatproof bowl over a pan of barely simmering water, stirring occasionally. Once the chocolate has melted, pour in the blood orange juice and stir to combine. Remove the bowl from the heat and leave to cool, then chill until the glaze is thick but still pourable. Once the glaze is at the desired consistency, pour over the cake, allowing it to drip down the sides. Sprinkle the orange zest over to finish. Will keep in an airtight container for 3-4 days; can be frozen for up to 3 months.
