Orange Cream image

Steps:

  • Combine the milk and orange zest in a medium stainless-steel saucepan over medium heat and bring almost to a boil. Remove from the heat.
  • Beat the egg yolks and sugar on medium-high speed in the bowl of an electric mixer fitted with the paddle attachment until pale and thick, about 5 minutes. With the mixer on low speed, sprinkle on the cornstarch. Beat on medium-low speed until combined, scraping down the bowl with a rubber spatula.
  • With the mixer on low speed, slowly pour the hot milk mixture into the egg mixture. Pour the mixture back into the pan. Cook over low heat, stirring constantly, until the mixture thickens, 5 to 7 minutes. (Pay attention because it will thicken and then quickly become orange scrambled eggs!)
  • Immediately, pour the mixture through a fine sieve into a large bowl. Stir in the vanilla, Grand Marnier, butter, and heavy cream. Place plastic wrap directly on the custard and refrigerate until cold.

2 tablespoons sifted cornstarch
1/2 teaspoon pure vanilla extract
1/2 teaspoon Grand Marnier liqueur

Flambe Oranges and Cream image

Steps:

  • In a saute pan over medium-high heat, add butter and melt. Stir in ginger, orange zest, orange juice and star anise and bring to a simmer. Add orange segments and crepes to warm through. Add orange liqueur and remove from the heat. Carefully light the mixture with a long kitchen match to flambe. Allow the flames to die down and remove star anise. Divide crepes among serving plates, spoon orange segments and sauce over and top with scoop of ice cream. Garnish with orange zest and serve.

2 tablespoons butter
1 teaspoon minced ginger
2 oranges, zested and juiced, reserve some zest for garnish, plus 4 oranges peeled and segmented
1 star anise
8 crepes, folded into triangles
1/4 cup orange liqueur (recommend: Grand Marnier)
1 pint best-quality vanilla ice cream

ORANGES AND CREAM!

This cocktail is creamy and rich. A powerful dessert drink straight up or calm the drink slightly with the addition of ice cubes. Baileys cream can be used in place of the Amarula Cream with little change in taste.

  • Remove them from the oven, allow them to cool for 10 minutes, then gently turn them out onto a rack to cool completely., Wash, dry, and prepare your pans again; then repeat with the remaining batter., To make the filling: Beat the cream cheese slowly and gently until fluffy and free of lumps., Add the remaining ingredients.
  • Stir on low speed until blended, then beat on high for 2 minutes., Layer the cakes with the filling, leaving the top layer bare of filling.
