These are very tender when done. I use my own barbecue sauce and if you want more than 1 rack, you can easily lay more ribs on the pan. While they bake go do something else. Enjoy the day!

Steps:

  • Preheat oven to 325 degrees.
  • Line a jelly roll pan with foil.
  • Cut sinew off the back of the ribs.
  • Lay ribs onto foil and add 3/4 cup water.
  • Cover with foil.
  • Bake for 3 hours.
  • Raise oven temperature to 375 degrees.
  • Remove foil from ribs; add your favorite barbecue sauce to ribs.
  • Bake for another 30 minutes, or longer.

Steps:

  • Season ribs with salt, pepper, granulated onion powder and granulated garlic powder.
  • Lay ribs meat-side down on a baking sheet with an elevated edge. Add one cup of water and cover the sheet pan completely in aluminum foil.
  • Bake in 325-degree oven for approx. 2 1/2 hours or until meat is tender enough to be pulled from the bone.
  • Chill the baby back ribs in the refrigerator for about one hour so that the meat doesn't fall apart.
  • Apply canola oil to grill grates and heat to medium-high.
  • Place ribs on grill meat-side up and baste with BBQ sauce.
  • Grill for approx. 3 minutes.
  • Flip so meat-side is down, and grill for 3 minutes. Apply BBQ sauce to the back of the ribs.
  • Grill ribs until BBQ sauce has started to caramelize and meat has started to get crisp edges.
  • Let ribs rest for 5 minutes, then brush with BBQ sauce before cutting them into 1-and 2-bone pieces.
  • Serve with remaining BBQ sauce on the side for dipping.
  • You can find prepared and cut racks of ribs at your local butcher or grocery store. If you have a full rack of ribs, we suggest you cut them in half if you're cooking in an oven in your home kitchen or on a standard gas grill.

  • Tear off 4 pieces of aluminum foil big enough to enclose each portion of ribs. Spray each piece of foil with vegetable cooking spray. Brush the ribs liberally with barbeque sauce and place each portion in its own piece of foil. Wrap tightly and refrigerate for at least 8 hours, or overnight.

Steps:

  • In a small bowl, combine the brown sugar, chipotle chile powder, salt, onion powder, garlic powder, seafood seasoning and black pepper.
  • Place each slab of ribs on a piece of aluminum foil large enough to fold over and seal, then place on a baking sheet. Do not seal the ribs in the foil yet (see Cook's Note). Generously sprinkle the dry rub on both sides of the ribs. Place in the refrigerator, meat-side down and uncovered, for at least 1 hour. Preheat the oven to 300 degrees F.
  • In a small bowl, combine the apple cider, apple cider vinegar, maple syrup, Worcestershire and minced garlic. Pour half the liquid over each slab and tightly seal each in the aluminum foil, crimping the edges to make a packet.
  • Transfer the foil packets and baking sheet to the oven and bake until the meat is tender and starts to pull away from the bones, about 2 hours.
  • Remove the sheet pan from the oven. Carefully open the aluminum packets and pour the braising liquid into a small saucepan. Bring the liquid to a simmer over medium heat until it becomes a thick and syrupy glaze, about 4 minutes.
  • While the braising liquid reduces, line a baking sheet with foil and gently transfer the ribs to it. Position a rack on the top level of the oven and preheat the broiler.
  • Using a pastry brush, generously brush the ribs with about half the glaze. Place the ribs under the broiler for about 1 minute. Brush with the remaining glaze and return to the broiled until charred in spots, about 1 minute more. Slice each rack between the bones into 2-rib portions and serve.

Steps:

  • Wash and dry the ribs. Combine all seasonings in a bowl. Liberally season the ribs with the seasonings. Make sure to rub the seasonings into the meat.
  • Cut the garlic bulbs in half and slice the onions thinly. Wash your fresh herbs. In a large roasting pan, line the bottom with some of your onions. Place 2 slabs of the ribs over the onions, bone side down. Rub the ribs with 1 of the cut garlic bulbs, set the garlic cut side down on top of the slab. Place some thyme, oregano, and parsley over each slab. Place the remaining onions on top of herbs. Drizzle with wine and extra-virgin olive oil. Create a second layer of ribs, herbs, wine, extra-virgin olive oil. Allow the ribs to marinate, in the refrigerator, for 24 hours.
  • After 24 hours, the ribs are ready for the grill. Preheat a grill so 1 side of the grill is heated and 1 side is not.
  • Take the ribs out of the marinade. Place them bone side down over some hot coals. It takes about 30 to 40 minutes to cook the ribs. Alternate your ribs from the hot side of the grill to the cold side. This will allow you to have more control over your cooking. Enjoy!

Steps:

  • For the rub: The day before cooking, mix the turbinado sugar, salt, paprika, chili powder, granulated garlic, onion powder, ground cumin, ground mustard, cayenne pepper and black pepper together.
  • For the ribs: Take a slab of ribs and turn over so the curved side is up. Using your fingernail or a knife, pry under the membrane until you can put your finger under it and then pull it off.
  • Sprinkle this side of the ribs with about 1 tablespoon rub, and then about 1 tablespoon yellow mustard. Use the mustard to help evenly distribute the seasoning. Turn the ribs over and repeat the process. Cover and store in the refrigerator overnight.
  • To cook, start a smoker and bring the temp to 200 degrees F. Use apple or cherry wood chunks to provide smoke and flavor. Place the ribs in the smoker, curved side down. Smoke for 2 hours at 200 degrees F, and then raise the temperature to 250 degrees F for about 2 1/2 hours. Check for tenderness by testing if the bones will pull apart with a slight bit of pressure. If they are still tough, allow to cook for another 30 minutes.
  • Remove from the smoker. For dry-style ribs, sprinkle with about 1 tablespoon rub. For wet-style ribs, glaze with the BBQ sauce.

  • Preheat oven to 350 degrees F.
  • Cut the racks of ribs in half crosswise. Rub the ribs, paying special attention to the meaty side, with 1/2 cup of the sauce. Lay the rib pieces meat side down in an 11 by 13-inch baking dish. The pieces will overlap slightly.
  • Cover the dish tightly with aluminum foil and bake until the meat begins to pull away from the ends of the bones and the ribs are just tender, about 1 hour. You can bake the ribs up to a day before and keep them refrigerated. Bring refrigerated ribs to room temperature about 1 hour before you grill them.
  • Preheat an outdoor grill to medium-high heat. Grill the ribs, brushing them with about half the remaining sauce, until they're crispy and heated through, about 10 minutes. Move the ribs around as they grill, the sugar in barbecue sauce makes it easy for them to burn. Let the ribs rest for 5 to 10 minutes before cutting them into 1 or 2-bone pieces. Put out the rest of the sauce for dipping or brush it over the ribs.
  • Stir all ingredients together in a small bowl until sugar is dissolved. The sauce will keep in the refrigerator for up to 2 weeks.

Plain Baby Back Ribs from the Oven image

Steps:

  • Preheat the oven to 300 degrees.
  • Spray a baking dish with a non-stick spray.
  • Remove the thin membrane from the bone side of the ribs. Using a paper towel to hold the membrane will make this easier.
  • Mix dry ingredients together in a small bowl or dish.
  • Rub the dry ingredients into each side of the slab(s) of ribs.

  • Prepare an outdoor grill for indirect heat - a pile of charcoal on one side, nothing under the food. Once it is going, throw some soaked mesquite woodchips on it.

  • Preheat oven to 275°F (140°C).

  • Make one recipe of Rib Sauce (above) and set aside.
  • Pre-cook ribs by EITHER Baking (preferred method) OR Parboiling.
  • MAKE-AHEAD TIP: After pre-cooking (baking or parboiling) ribs, they may be vacuum sealed and frozen for up to 3 months OR glazed with Rib Sauce and refrigerated or given their final baking immediately.
  • ** BAKING RIBS (preferred method): Cut rack of ribs in half. Place 1 1/2 pounds ribs in each of two 9x13-inch casserole dishes.
  • Add 1/4 cup vinegar to each casserole. Cover with foil and bake at 350 degrees for 50 minutes. Drain all liquid.
  • ** PAR-BOILING RIBS: Cut rack of ribs in half. Fill large pot with water; heat to boiling. Add all ribs to boiling water (should be enough to just cover top of ribs).
  • Simmer ribs about 45 minutes until just tender but meat is not falling off the bones. Remove ribs from boiling water. Rinse and drain.

  • *** RIB SAUCE: Mix cornstarch and water together to make a slurry Set aside.
  • Mix remaining dry ingredients together.
  • Place in saucepan.
  • Mix remaining wet ingredients together.
  • Pour half of wet ingredients into dry ingredients, stirring to mix well.
  • Add remaining half of wet ingredients, stir to mix well, and simmer mixture, uncovered, for about 10-20 minutes to thicken sauce a bit.
  • While mixture is gently boiling, pour in slurry while stirring.
  • Return mixture to a slow boil and cook until sauce thickens a little.
  • Sauce should be thick enough to cling to ribs, yet pourable.
  • Cool sauce and store in air-tight glass or plastic container.

Steps:

  • Preheat a gas grill for high heat, or arrange charcoal briquettes on one side of the barbeque. Lightly oil the grate.
  • In a small jar, combine cumin, chili powder, paprika, salt, and pepper. Close the lid, and shake to mix.
  • Trim the membrane sheath from the back of each rack. Run a small, sharp knife between the membrane and each rib, and snip off the membrane as much as possible. Sprinkle as much of the rub onto both sides of the ribs as desired. To prevent the ribs from becoming too dark and spicy, do not thoroughly rub the spices into the ribs. Store the unused portion of the spice mix for future use.
  • Place aluminum foil on lower rack to capture drippings and prevent flare-ups. Lay the ribs on the top rack of the grill (away from the coals, if you're using briquettes). Reduce gas heat to low, close lid, and leave undisturbed for 1 hour. Do not lift the lid at all.
  • Brush ribs with barbecue sauce, and grill an additional 5 minutes. Serve ribs as whole rack, or cut between each rib bone and pile individually on a platter.

Baked BBQ Baby Back Ribs image

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix ancho chile powder, white sugar, brown sugar, salt, black pepper, cumin, dry mustard, cayenne pepper, and chipotle pepper in a small bowl until combined.
  • Place ribs meat-side down on aluminum foil. Prick back of rib rack several times with a knife.
  • Generously apply coating of dry rub to all sides of rib rack.
  • With rib rack meat-side down, fold foil around it to create a tight seal. Transfer to sheet pan.
  • Bake in preheated oven until tender and cooked through, about 2 hours. Remove and cool 15 minutes.
  • Increase oven temperature to 350 degrees F (175 degrees C).
  • Open foil, drain and discard any accumulated juices and fat. Brush barbeque sauce on all sides of rack.
  • Place rack meat-side up and return to oven, leaving foil open. Bake for 10 minutes, remove from oven, and brush another layer of barbeque sauce on meat-side only. Repeat baking and brushing with sauce 4 more times, for a total of 50 minutes baking time.
  • Cut rack into individual rib segments and serve with more barbeque sauce.

These are done completely on a gas grill and is the first recipe I have found that result in tender ribs without having to boil/steam/ or bake them first. Don't lift the lid for at least an hour while grilling! That is the secret to these ribs that end up tender and delectable. Uses simple ingredients with your favorite barbecue sauce to finish off the recipe and you will be in rib heaven.

Foolproof Baby Back Ribs image

Steps:

  • Preheat gas grill for high heat.
  • In a small bowl, combine cumin, chili powder, paprika, garlic powder and salt and pepper Mix well.
  • Trim off the membrane sheath from the back of each rack.
  • You can do this by running a small, sharp knife between the membrane and snip or"shimmy" off the membrane as much as possible.
  • Don't skip this step because it prevents the ribs from being chewy.
  • Sprinkle or "throw" as much of the rub onto both sides of the ribs as desired.
  • Do not rub the spices in, because the ribs will turn too dark and spicy.
  • You may have some spices leftover, depending on your taste.
  • Place aluminum foil on lower rack to capture drippings and prevent flare-ups.
  • Brush grate with oil, and lay ribs on top rack of grill.
  • Reduce heat to low, shut grill, and leave undisturbed for 1 hour.
  • Do not lift lid at all during this time period!
  • After one hour check for doneness, depending on your grill you may need to continue cooking for another 10-15 minutes (our grill takes one hour exactly). Brush ribs with barbecue sauce and grill an additional few minutes until sauce is slightly absorbed and a little brown around the edges.
  • Serve ribs as whole rack or cut between bones and pile individual ribs on the platter.

  • Place ribs bone side down in a large roasting pan. Combine garlic powder, seasoned salt and pepper; sprinkle over ribs. Top with sliced onion.
