- Preheat oven to 175 degrees F (80 degrees C). Line a baking sheet with parchment.
- Place banana slices in a single layer on prepared baking sheet.
- Bake in the preheated oven for 1 hour; turn banana slices over. Continue baking banana slices until dry and crisp, about 1 hour more.

Steps:
- Cut bananas into thin slices.
- Coat slices in lemon juice.
- Bake banana slices on a greased pan in a 200 degree oven, turning every half hour and watching out for burning. Remove when they are crispy, cool, and store in an airtight container.

STUFFED CHOCOLATE AND PEANUT BUTTER BAKED BANANAS
Steps:
- Preheat oven to 450 degrees.
- Lay the bananas so the ends are pointing up. Using a knife, cut a slit down the inside top so you can open it like an envelope, careful not to rip open the peel. Spread 1 tablespoon of peanut butter inside each banana and sprinkle with chocolate chips. Close the peel of the banana up and wrap the entire banana in aluminum foil. Place the bananas on a baking sheet and transfer to the oven to bake, about 10 minutes or until the insides of the banana are soft and warm and the chocolate is melted.

- Preheat oven to 225 degrees F (110 degrees C). Line a baking sheet with parchment paper.
- Spread banana slices out onto the prepared baking sheet, making sure slices are not touching. Brush slices with lemon juice.
- Bake in the preheated oven for 90 minutes. Check bananas, lifting slices up to separate from the paper once or twice. Continue baking until bananas are dried out, 30 to 90 minutes more.
- Let bananas cool until crispy, at least 5 minutes.

- Heat the oven to 200C/180C fan/gas 6. Peel the potatoes and cut them into long chip shapes - the thickness is entirely up to you, though the width of a finger is ideal. Rinse under the cold tap and pat dry with a tea towel.
- Spread the chips on a large non-stick baking tray and toss with the olive oil and celery salt. Lie them flat in a single layer - use two trays rather than overcrowd one.
- Roast for 45-50 mins, turning now and then. When cooked they should be golden brown and crisp with a light fluffy centre. Scatter on sea salt to serve.

BAKED BANANA WITH CINNAMON & HONEY (LOW FAT / HEALTHY)
I love banana's but can't stand to eat them when they're over-ripe so I always end up binning some. In a bid to cut down on wastage I now eat this delicious baked (or you could BBQ it) banana combo for my breakfast. I like it so much now that it's gone from being a recipe I use to get rid of my over-ripe banana's to being my standard week-day breakfast! It's so versatile... great on it's own, over porridge or weetabix, on toast, with yogurt, or over ice cream... Mmmmmmm!

- Pre-heat the oven to 200c (or get your BBQ nice and ready if you're BBQing).
- Either slice the banana up into bite-sized pieces or cut it in half lengthways if you're looking for a smarter presentation or are having an ice cream banana split.
- Place the banana on an over-sized square of tin foil and sprinkle with cinnamon (to taste).
- Drizzle 2tsp of honey evenly over the banana and gather up the corners of the foil to create a little banana parcel.
- Place the parcel in the oven (or on the barbie) and bake for approximately 15mins.
- NB. Baking time depends on how you prefer your bananas - the more you bake, the more soft and gooey they get and the more the honey caramelises onto them. Personally I don't like mine too over-baked as I prefer the banana to still be a bit hard and the honey to be liquid.

- Preheat oven to 350 degrees, with racks in upper and lower thirds. Divide plantains between two rimmed baking sheets. Toss with oil, then arrange in a single layer on sheets. Season with salt and pepper. Bake until golden and crisp, 30 to 35 minutes, rotating sheets and flipping plantains halfway through. Drain plantains on paper towels. Serve with Pico de Gallo, if desired.

BANANA BREAD
More cake like than bread, a great, easy recipe. I had " borrowed " the banana chips from my parrot's treat bag and she was having a hissy fit watching me take them. Little did I know that after cooling and wrapping the bread before I left for the day, my son would come home, find it and had eaten the WHOLE top off before devouring almost half of what was left. Do I believe in karma ?,You bet!, I saw it myself..LOL. The bake time may increase depending on your oven temp correctness vs mine.

- Heat oven to 350 degrees.
- Lightly butter a 1 loaf baking pan (I keep a baggie of my empty butter wrappers in the fridge for ease of buttering any pan) Combine well the dry mix in a large plastic bag.
- With a hand mixer combine wet mix in a large mixing bowl, blending well.
- Pour increments of dry mix into wet mix, hand stirring each addition.
- Add banana chips and toasted nuts to mixture, stirring well.
- Top with chip& nut mix you may have set aside.
- Bake for 1 hour- 1 hour 15 minutes or when a toothpick inserted, comes out clean.
- (loaf becomes dark golden) Cool on a wire rack.
- Remove from pan when cool and wrap.
- Hide loaf well.
