- In a large saucepan, combine the broth, rice, Italian seasoning and garlic powder, bring to a boil. Transfer to a greased 11x7-in. baking dish. Cover and bake at 375° for 10 minutes. Add the broccoli, Parmesan cheese and half of the onions. Top with fish fillets; sprinkle with paprika., Cover and bake 20-25 minutes longer or until the fish flakes easily with a fork. Uncover; sprinkle with cheddar cheese and remaining onions. Return to the oven for 3 minutes or until cheese is melted.

GARLIC-LEMON OVEN BAKED FISH

Steps:
- Melt butter in large glass Pyrex measuring cup and add lemon juice, spices and sugar.
- Place bread crumbs in a shallow bowl or platter.
- Spray a shallow baking dish with vegetable spray.
- Cut fish into individual serving pieces.
- Dip fish into butter and then coat each fillet well with bread crumbs.
- Place bread coated fillets into baking dish.
- Repeat until all fish fillets are covered.
- Spoon the remaining herb butter mixture over fish.
- I also use a pastry brush to lightly tap the tops of the breaded fish to make sure it is all cover.
- You may need to melt more butter to coat fish.
- Bake, uncovered, for 15 minutes at 400 degrees.
- Fish is done when fish flakes easily with a fork.

FLAPJACK BAKED PLUMS
It's a pleasure to sink into a warm pud of orange-poached plums with crunchy, oaty topping.

- Heat oven to 190C/fan 170/gas 5. Halve the plums and arrange in a snug layer in one large or 4-6 individual shallow, ovenproof dishes. Sprinkle over the sugar and squeeze over all the orange juice. Press a sheet of baking parchment down over the plums and bake for 20-25 mins, until they start to soften.
- Meanwhile, heat the butter with the syrup or honey in a pan. Remove from the heat and stir in the oats until they are evenly coated. Remove parchment, roughly spoon oats over the plums, then return to the oven for a further 10 mins, until the topping is crisp and golden and the plums are tender. Serve warm with crème fraîche or ice cream if you are feeling indulgent, or fromage frais or low-fat yogurt if not.

- Preheat oven to 350 degrees.
- Melt butter and blend in the lemon juice and sour cream.
- Salt and pepper the fish to taste and place in a casserole dish.
- Spread the onion rings evenly on top.
- Pour the sour cream mixture over fish, spread evenly and top with the cheese.
- Bake for 35 minutes or until fish flakes with a fork.
BAKED FISH CASSEROLE
Need a change from boring, basic fish? My family loves this recipe. I have been told it is "to die for". I have made it several times (changing the type of fish fillets). My favorites are salmon and walleye. 2 lbs of fillets is an estimate. You will need enough fish to line the bottom of a 9 by 13 cake pan.

Steps:
- Sautee onions and mushrooms in butter.
- Add some Lawry's Seasoning Salt.
- Sautee until onions are tender and transparent.
- Add the soup, cheeses, salt & pepper to taste, Lawry's Seasoning to taste, garlic powder to taste, basil, crab, milk or wine.
- Simmer until creamy.
- Line fish in a single layer in a greased 9 by 13 pan.
- Sprinkle some salt on the fish.
- Pour cheese mixture over the fish.
- Sprinkle enough crushed crackers to cover the sauce.
- Top off by sprinkling grated parmesean cheese over the top.
- Bake uncovered in a 350 degree oven for 30 to 40 minutes(or until fish flakes with a fork).
- Serve immediately.

Add onion and cook, stirring often (adding 1 to 2 tablespoons water if necessary to prevent the onion from darkening too much) until the onion softens and starts to brown, 6 to 9 minutes.
