OVERNIGHT BREAKFAST CASSEROLE
I love this recipe because it is really easy to fix the night before when you are having company the next morning or maybe taking it to work or something. This recipe came from the Telephone Pioneers Cookbook "Calling all Cooks."

Steps:
- Sprinkle bread cubes into greased 7X12 inch baking dish.
- Cook sausage and sprinkle along with cheese over the bread cubes.
- Beat eggs in mixer bowl.
- Add milk, dry mustard, salt and pepper; mix well.
- Pour over layers.
- Chill, covered overnight.
- Bake uncovered at 350 degrees for 40 to 45 minutes or until set and golden brown.
- Yield: 8 servings.

OVERNIGHT MACARONI AND CHEESE GRATIN
A French recipe that uses Gruyere instead of Cheddar cheese. Great sophisticated side dish for steaks and roasts.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until halfway cooked, about 4 minutes. Drain.
- Combine heavy cream, milk, and Gruyere cheese in a large bowl. Add elbow macaroni and mix well; season with salt and pepper. Cover bowl with plastic wrap and refrigerate for 24 hours.
- Bring the macaroni mixture to room temperature, 30 minutes to 1 hour. Pour into a 2-quart baking dish. Sprinkle remaining Gruyere cheese on top.
- Preheat oven to 400 degrees F (200 degrees C).
- Bake in the preheated oven until golden and crispy, 15 to 20 minutes.

OVERNIGHT MACARONI CASSEROLE
I like to prepare meals a day ahead of time, so supper can be on the table quicker when I get home from work. Usually, pasta dishes are out because the noodles end up starchy and the sauce thickens if left overnight. With this recipe, I can prepare the dish ahead of time and cook just before serving for delicious creamy noodles.

Steps:
- Mix all ingredients. Season to taste. With chicken, we like sage, rosemary, thyme and a little garlic.
- Spread in 9x13 pan.
- Cover and refrigerate overnight, or at least 4 hours.
- Remove from fridge, put in cold oven. Bake at 350 about one hour, until hot and bubbly.
- Note -- to make it "pizza" flavored, substitute diced pepperoni or cooked Italian sausage for the chicken, and one can tomato soup and one can cheese soup for the mushroom and chicken. Season with oregano or Italian seasoning, and garlic.

OVERNIGHT CHICKEN CASSEROLE
Very easy casserole. Prepare the night before and pop into the oven and let it bake. EDIT:I had someone email me asking if the macaroni is cooked or uncooked. I've fixed the recipe so it says, but it is uncooked macaroni.

- Pour melted butter into an 11x15-inch baking dish. Sprinkle brown sugar and cinnamon over the butter and top with bread slices, making sure slices are placed close together.
- Mix milk, eggs, and vanilla extract in a bowl until thoroughly combined; pour over bread in the baking dish. Cover with aluminum foil and refrigerate, 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C).
- Place the covered casserole in the preheated oven and bake for 30 minutes. Uncover, and bake until puffed and lightly golden, about 15 minutes more.

- After cooking and draining macaroni, mix first set of ingredients together, while macaroni is still warm.
- In another bowl mix together second set of ingredients until it is smooth.
- Then pour it over the macaroni and stir.
- Cover and refrigerate OVERNIGHT.
- It will be bright yellow and real good the next day!

Steps:
- In a large bowl, mix together macaroni through onions.
- In separate small bowl, mix together the soup and milk till well blended.
- Pour milk mixture into large bowl and stir all ingredients together till blended.
- Pour into a 9 x 13 baking dish.
- Top with grated parmesan cheese. Sprinkle paprika over the top and cover with aluminum foil.
- Store overnight in frig.
- Get casserole out of frig one hour before baking.
- Preheat your oven to 350°F Bake, covered with foil, for 45 minutes. Uncover and bake for an additional 10-15 minutes.
- Serve with salad and bread/rolls.
- **Note: this is not a spicy dish. If you like your food to be spicy feel free to add hot sauce, peppers, celery, etc to your liking. I serve this dish to older relatives when they come to visit and take it to potlucks where it disappears quickly. Simple, old fashioned comfort food. Feel free to adjust to your taste.
