This papaya bread tastes so buttery and comes out a lovely yellow color.

Papaya Bread image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Slice papayas in half lengthwise. Scoop out black seeds and discard. Peel and discard skin. Place flesh in a bowl and mash. Transfer to a strainer and allow to sit for 10 minutes to drain any liquid.
  • Combine flour, poppy seeds, baking soda, and salt in a bowl. Cream sugar and butter together in a separate bowl. Mix in eggs, one at a time, until well blended. Mix in papaya flesh, buttermilk, guava juice, and vanilla. Slowly stir in dry ingredients until just moistened. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 1 hour 15 minutes. Cool in the pan for 10 minutes, then release loaf from the pan onto a wire rack. Let cool completely, about 30 minutes, before slicing.

PAPAYA BREAD WITH A TWIST

I was trying to use up some papaya and ripe bananas and found a papaya bread recipe that I could easily modify. I loved the idea of adding ginger to give it a bit of a bite. It turned out amazing and I've had several requests for the recipe already! Enjoy. Serve at room temperature or warm with a scoop of vanilla ice cream.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease two 5x7-inch loaf pans.
  • Combine butter and sugar in a large bowl; beat with an electric mixer until creamy. Add eggs; beat until lightly fluffy. Beat in bananas, papaya, raisins, walnuts, and crystallized ginger until batter is smooth.
  • Sift flour, baking soda, salt, cinnamon, allspice, ginger, and baking powder together in a separate bowl. Mix gradually into the batter. Pour batter into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 50 minutes. Cool in the pans for 10 minutes. Invert onto a wire rack to cool completely.

Nice moist quick-bread, excellent for using up any papaya that is somewhat past it's prime for eating fresh. Like most quick-bread recipes, it's very adaptable. I've made equally yummy combinations of papaya-mango and papaya-banana breads when I didn't have the full amount of papaya available. Freezes well (cool completely, slice, then wrap loaf tightly in plastic wrap or foil.)

Steps:

  • Preheat oven to 350 degrees F.
  • Grease two 8" loaf pans.
  • Beat eggs, applesauce, and vanilla in large bowl.
  • Add sugar, beating until well blended.
  • Blend in papaya puree.
  • In a smaller bowl, sift together all dry ingredients (baking powder to flour).
  • Add flour mixture to papaya mixture.
  • Blend only until moistened, preferably by hand (overmixing will produce a tough bread).
  • Fold in nuts (if using).
  • Pour evenly into prepared pans.
  • Bake at 350 degrees F for about 1 hour, or until toothpick inserted in center comes out clean (with moist crumbs attached).
  • Cool pans on wire rack for 5 minutes.
  • Remove bread from pans and continue cooling, or slice and serve warm with butter or cream cheese (apple cinnamon flavored Brummel& Brown spread is wonderful with this as well).

Steps:

  • In a small bowl, combine the raisins with the rum and leave to macerate for 1 hour.
  • Preheat the oven to 350/. In a large mixing bowl, combine the sugar, oil, and eggs. Beat together until blended. Whisk in the milk, then add the baking soda, salt, and flour and blend thoroughly. Fold in the papaya and the raisins, drained. Generously butter an 8 x 5 inch loaf pan and pour the batter into the pan, shaking to help it find its level. Bake the bread for 1 hour, or until the center springs back and the edges are beginning to pull away from the pan. Cool the pan on a rack, then turn out and slice for serving.

  • Preheat oven to 350, lightly grease 2 loaf pans.
  • Combine eggs,oil and sugar, mix on low for 30 seconds; add carrots, applesauce, papaya and coconut, mix on low another 30 sec.

Steps:

  • Preheat oven to 450 degrees. Stir together sugar and ginger in a small bowl. Arrange papaya halves, cut sides up, in a 10-by-13-inch baking dish. Sprinkle sugar mixture evenly over halves.
  • Bake, brushing papaya edges with melted sugar mixture (it will collect in well of fruit) 2 or 3 times, until mixture is bubbling and papaya edges are beginning to darken, 35 to 40 minutes.

Fish Cushions With Papaya-Raisin-Dip image

Steps:

  • Mix raisins with rum and set aside. Let stand for at least 30 minutes to soak raisins with rum.
  • Put papaya fruit flesh, sour cream, garlic, chili pepper and lemon juice in food processor and mix until smooth for about 10 to 20 seconds.
  • Remove raisins from rum and add to papaya mixture. Add 1/4 teaspoon of the rum and coriander. Mix with a spoon. Add salt and pepper to taste.
  • Set sauce aside. You can prepare sauce in advance.
  • Cut fish fillet into cubes and mix with lemon juice and 1 teaspoon olive oil. Add salt and pepper to taste. Set aside.
  • Remove crust from toast bread. Roll out every barked toast bread slice very thinly using a rolling pin.
  • Brush the margins of the slices with egg white. Place the fish on three of these slices. Use also the fluid.
  • Cover the three slices with the remaining three to build the cushions. Press the edges of the slices to close the cushions. Use a knife to remove "excess" of bread.
  • Mix egg yolk with milk and add a pinch of salt.
  • Brush the cushions very lightly on both sides with egg yolk mixture (but remain about the half for later use).
  • Preheat broiler of your oven.
  • Heat up olive oil in a pan. Fry the cushions in oil when hot on both sides for about 2-3 minutes until golden. Remove cushions from pan.
  • Brush cushions with the remaining egg yolk mixture on top side and sprinkle with coconut flakes. Sprinkle a pinch of brown sugar on each cushion.
  • Broil the cushions in the oven until coconut flakes are golden for about 1-2 minutes.
  • Serve the fish cushions hot with the papaya-raisin-sauce.
  • NOTE on fish: if you can't get King Fish or Mackerel, you can use other firm fish fillet. I have also tried tilapia.
  • NOTE on chili pepper: if you like it hot you can use more, if you like it mild use less or a mild type chili pepper. I have used a mild one here.
  • NOTE on serving: as an appetizer this will make 3 servings. As a main dish it will make 1 serving. As a main dish serve it with rice or a green salad.
  • Time to make does not include time to soak the raisins.

  • Cream butter in a mixing bowl, using an electric mixer on medium speed.
  • Gradually add sugar, beating well.
