PASTA SALAD WITH TUNA, PINE NUTS, AND RED PEPPERS
This salad tastes great, and is even better the next day! Just give it about an hour to come to room temperature.

Steps:
- Heat the oil in a heavy 6-inch skillet over moderate heat for 1 minute.
- Add the pine nuts and cook until lightly browned-about 2 minutes.
- Stir in the tomato.
- Transfer the mixture to a large bowl.
- Stir in the tuna, red peppers, olives, vinegar, salt, and pepper.
- (At this point, the sauce can be covered and allowed to stand at room temperature for up to 2 hours).
- Cook the pasta according to package directions until al dente.
- Drain in a colander, then add the pasta to the tuna sauce and mix well.
- Sprinkle with the parsley.
- Serve at room temperature.
- You may serve this with sesame bread sticks and steamed asparagus.
- Enjoy!

PASTA WITH MARINATED TOMATOES AND SUMMER HERBS
The easiest summer dinner known to man, pasta con salsa crudo, is a one-bowl, infinitely variable riot of seasonal flavors. It can be made with fancy Italian tuna and local heirloom tomatoes for foodies, or with supermarket mozzarella and tomatoes for children, or with excellent olives and extra pine nuts for vegetarians. It puts you in the kitchen for about a half-hour at the tail end of lunchtime. After that, all there is to do is cook the pasta, and serve with or without crusty bread, boiled corn, sliced tomatoes, or a nice, simple green salad.

- Up to 4 hours before serving, put tomatoes in a large bowl and sprinkle all over with salt. Set aside for 30 minutes, then drain off liquid.
- Add tuna and its oil, olives or capers, if using. Add herbs and zest. Add olive oil, salt and pepper to taste and stir gently, flaking tuna into pieces. Cover and set aside at least 1 hour or up to 3 hours, stirring occasionally.
- Cook pasta in plenty of boiling salted water. Drain very well. Combine tomatoes and pasta well, then taste and add more oil, salt and pepper to taste. Add red pepper flakes if desired. Sprinkle with pine nuts, if using, and chopped herbs. Serve immediately.

PASTA WITH RED PEPPERS AND PINE NUTS

- Cut the peppers into quarters and place them face down on a broiling pan lined with aluminum foil. Broil until the skins are charred and puffy. Place the peppers in a brown paper bag, seal and cool. Skin the peppers and slice them in thin strips.
- Heat the olive oil in a skillet and add the garlic cloves and the peppers. Cook for 15 minutes, stirring frequently.
- Meanwhile, bring six quarts salted water to a boil and cook the pasta until al dente. Drain and place in a heated bowl.
- Add the butter to the peppers and stir until melted. Add to the pasta and toss. Add the basil leaves, pine nuts and two tablespoons cheese. Season with salt and pepper to taste and serve. Pass the rest of the cheese separately.

- Toss cherry tomatoes, olive oil, shallot, garlic, oregano and vinegar in a large bowl. Season with 1 teaspoon salt and 1 teaspoon black pepper and let marinate for at least 15 minutes.
- Bring a large pot of water to a boil and season generously with salt.
- Add pasta to the boiling water and cook until al dente, 8 to 10 minutes, depending on the shape and brand of pasta. With a spider or slotted spoon, strain pasta directly into tomato mixture and toss to combine. Season to taste with more salt and pepper.
- Stir in flakes of tuna and serve with a drizzle of olive oil on top. The pasta can be served hot or at room temperature.
