ZITI AL FORNO (FROM THE SOPRANOS FAMILY COOKBOOK)
It's from the sopranos cookbook but I use my own Recipe #73937 and it is the best food in the world there aren't words to describe it!

Steps:
- Put all the ziti in a large bowl.
- Toss ziti with 3 cups of the gravy and half of the grated cheese.
- Spoon half of the ziti into a casserole dish.
- Spread the ricotta over the top of the ziti.
- Sprinkle with the mozzarella and rest of grated cheese.
- Pour on 1 cup of sauce.
- Top with remaining ziti and rest of sauce (it will be almost overflowing) sprinkle with more grated cheese.
- Bake covered with foil for 45 minutes and then uncovered for 15 minutes.
- Let stand 15 minutes.
- Tell me immediately how it was!

SOPRANO'S SUNDAY GRAVY (SPAGHETTI SAUCE)
Badda-bing badda-boom. Its a thing of beauty. This recipe is not a fast one, its an all afternoon dinner; But it is definitely worth it. From The Soprano Family Cookbook

Steps:
- To make the sauce, heat the oil in a large heavy pot over medium heat.
- Pat the pork dry and put the pieces in the pot.
- Cook turning occasionally, for about 15 minutes or until nicely browned on all sides.
- Transfer pork to a plate.
- Brown the veal in the same way and add it to the plate.
- Place the sausages in the pot and brown on all sides.
- Set the sausages aside with the pork.
- Drain off most of the fat from the pot.
- Add the garlic and cook for about 2 minutes or until golden.
- Remove and discard the garlic.
- Stir in the tomato paste and cook for 1 minute.
- With a food mill (I use a Braun hand blender) puree the tomatoes, with their juice into the pot.
- Or for a chunkier sauce, just chop up the tomatoes and add them.
- Add the water; and salt and pepper to taste.
- Add the pork, veal, sausages, and basil and bring the sauce to a simmer.
- Partially cover the pot and cook over low heat, stirring occasionally, for 2 hours.
- If the sauce becomes too thick, add a little more water.
- Meanwhile, make the meatballs: Combine all the ingredients except the oil in a large bowl.
- Mix together thoroughly.
- Rinse your hands with cool water and lightly shape the mixture into 2 inch balls.
- Heat the oil in a large heavy skillet.
- Add the meatballs and brown them well on all sides.
- They will finish cooking in the sauce.
- Transfer the meatballs to a plate.
- After the sauce has cooked for its two hours, add the meatballs and cook for 30 minutes or until the sauce is thick and the meats are very tender.
- To serve, remove the meats from the sauce and set aside.
- Toss the cooked pasta with the sauce.
- Sprinkle with cheese.
- Serve the meats as a second course, or reserve them for another day.

We love Pancetta and pasta, so when I see a recipe with some of my favorite ingredients, I jump. This is a great and easy dish from "Cooking with the Soprano's."

Steps:
- In large pot, cook pancetta in oil over medium heat until lightly browned, about 10 minutes.
- Add garlic and crushed red pepper and cook until garlic is golden.
- Add chickpeas, tomatoes and parsley, bring to a simmer, and cook 15 minutes.
- Crush some of the chickpeas with the back of a spoon.
- Add 4 cups water to pot and bring to a simmer. Add pasta and salt to taste. Cook, stirring frequently, until pasta is al dente, tender yet still firm to the bite.
- Add more water if necessary to prevent pasta from sticking to bottom of pot.
- The consistency should be just loose enough to require eating with a spoon.
- Let cool slightly before serving. Serve with coarsely ground black pepper.

- In a large skillet, cook the garlic in the olive oil over medium heat, pressing it occasionally with the back of a spoon, until golden (about 4 minutes).
- Add the tomatoes and salt to taste.
- Bring to a simmer and cook, stirring often, until the sauce is thick (15-20 minutes, depending on the tomatoes).
- Stir in the basil leaves.
- Serve over hot cooked spaghetti or other pasta.
- Makes about 6 cups.

SOPRANOS STYLE TIRAMISU
Light, traditional-tasting tiramisu. Cognac can be substituted for amaretto liqueur. Dark coffee can be substituted for espresso.

- Whisk mascarpone cheese, sugar, and amaretto liqueur together in a bowl until smooth.
- Beat cream in a glass or metal bowl until soft peaks form. Lift your beater or whisk straight up: whipped cream will form soft mounds rather than a sharp peak. Fold whipped cream into mascarpone mixture.
- Pour espresso into a bowl. Dip ladyfingers into espresso and arrange 12 dipped ladyfingers in an 8-inch square pan. Spread 1/2 the mascarpone mixture over ladyfingers. - Cook pasta in a large pot with boiling salted water until al dente. Drain well.
- Meanwhile, in a large saucepan saute the mushrooms and onions in1/2 cup of water. Add the garlic, onion powder, Port wine, tomato vegetable juice, oregano and basil. After first dissolving the arrowroot in a bowl with 1/2 cup of water, add slowly to saucepan, stirring frequently. Thickening will occur within a minute.
- Add the cooked and drained pasta to the large saucepan and stir. Place lid on for 3 minutes, then serve warm.
