SPRING ROLL SALAD WITH PEANUT DRESSING

Steps:
- Put the noodles in a large bowl and cover with boiling-hot water; let stand 3 minutes, then drain and rinse under cold water to cool. Drain the noodles very well, then transfer them to a large mixing bowl and use kitchen shears to snip the noodles a handful of times.
- Add the carrots, bean sprouts, parsley, basil, mint, cucumber and romaine to the bowl with the noodles. Add the Peanut Dressing and toss to coat the noodles and vegetables. Transfer to a serving bowl and sprinkle with the chopped peanuts.
- Whisk together the peanut butter, lime juice, honey, vinegar, soy sauce, sesame oil, sambal oelek, ginger and garlic in a small bowl. Thin out with a little water until a nice spoonable consistency.

Steps:
- Toast walnuts in heavy saucepan on med heat.
- Set aside.
- Pour port into same pan nuts were toasted in.
- Boil on med high; simmer to reduce by half its volume.
- Remove from heat& allow to cool.
- Distribute 1 1/2 C greens on each of 4 plates.
- Arrange pear slices over.
- Sprinkle 1 1/2 T cheese on each.
- For dressing: Puree reduced port, shallots, garlic, mustard, vinegar to smooth in blender.
- Pour over salads.
- Top with nuts.
ARUGULA, TOASTED WALNUT AND ROASTED PEAR SALAD WITH RED WINE/SHALLOT VINAIGRETTE
Steps:
- Preheat oven to 375 degrees.
- Place pear halves, cut side up, on a baking sheet and brush them with honey. Place pan in oven. Bake for 15 to 20 minutes or until golden. Slice the pears lengthwise into half-inch slices. In a small bowl, whisk together the vinegar and shallots. Whisk in olive oil until emulsified. Add salt and pepper to taste. Toss the arugula with the vinaigrette. Plate salad individually with pear slices and toasted walnuts sprinkled on top.
ENDIVE, PEAR, AND STILTON SALAD

- Make dressing:
- Chop shallot and crush star anise. In a blender blend shallot, oil, orange juice, and Port until emulsified. Transfer mixture to a small bowl or jar and add star anise and salt and pepper to taste. Chill dressing, covered, at least 4 hours and up to 1 day. Pour dressing through a sieve into a bowl and discard solids. Whisk dressing until combined well.
- Make salad:
- Preheat oven to 400°F. and line a baking sheet with parchment paper.
- Halve and core pears. Cut pears lengthwise into 1/4-inch-thick slices and arrange in one layer on baking sheet. Roast pears in middle of oven until pale golden, about 10 minutes, and cool on baking sheet.
- Separate endive leaves, and, if desired, cut leaves crosswise into 1 1/2-inch-thick pieces.
- On a platter or 4 salad plates arrange pears, endive leaves, and Stilton and drizzle dressing on top. Garnish salad with parsley or chervil.

APPLE WALNUT SALAD WITH STILTON CHEESE
Very simple salad that will impress your guests. I suggest you make a double batch, this stuff doesn't last.

Steps:
- Put one third of the cheese in a large bowl.
- Add olive oil and using a fork, mash together the cheese and oil.
- Add vinegar and continue to mash and mix.
- Add cream and pepper and mix well to make a thick creamy dressing.
- Add the apples, sliced celery, currants, and lemon juice to the dressing and mix well.
- Crumble the remaining cheese and sprinkle it over the salad along with half of the walnuts.
- Mix them into the salad gently and evenly.
- Transfer to a serving bowl and garnish with the remaining walnuts and celery leaves.
- Serve right away.
- TOASTED WALNUTS.
- Preheat oven to 325 degrees.
- Spread nuts in a single layer on a baking sheet.
- Place baking sheet in the oven and toast, stirring occasionally, until nuts are lightly browned, fragrant, and coated in a layer of their own oil.
- Depending on the size of the nuts this may take between 10-20 minutes.
- Remove the nuts from the pan as soon as they start to look done.
- Pour them onto a plate to cool.

- Cut the pear quarters into thin slices and toss in a bowl with the lime juice to help protect their natural colour. Blend the crème fraîche with half the stilton, ginger syrup to taste, and enough water (3-4 tbsp) to give a smooth, thick coating consistency. (Don't add too much water or it may separate.)
- Scatter the pear slices over six serving plates and follow with the walnuts, dates and remaining cheese. Can be prepared to this stage up to an hour ahead.
- Drizzle each salad with a little of the dressing and some walnut oil. Season with a grinding of pepper - you shouldn't need salt, as the cheese is salty. Mix the salad leaves and watercress very lightly with just a bit more dressing - some leaves should be touched by the dressing, some untouched. Gently pile the leaves on top of each salad.

- Heat oven to 160C/140C fan/gas 3. Halve and deseed the peppers, then roughly cut into large chunks. Whisk together the vinegar, olive oil and honey with some seasoning to make a dressing. Spoon two-thirds into a shallow roasting tin with the peppers, toss together, then roast for 1 hr until the peppers are very soft and just starting to char at the edges. Meanwhile, mix the onion and garlic into the remaining dressing. Stir the sultanas into the peppers and roast for 10 mins more.
- Let the peppers cool for 10 mins, then transfer to a platter or large bowl, scatter over the parsley, capers and remaining dressing before tossing everything together.
