- Add the yeast to the stand mixer and in a saucepan heat the whole milk, water and butter until very warm it reaches between 120 and 130 degrees on a thermometer (you don't want it too hot or it will kill the yeast) and add the milk mixture to the stand mixer and let it sit for 5 minutes to proof the yeast (this ensures super fluffy rolls).
- Add 1 1/2 cups flour, salt and sugar to the stand mixer with the regular whisk attachment for 2 minutes on medium speed before adding 1/2 cup of flour and changing to the dough hook and keeping it on medium speed for another 8-10 minutes until smooth and elastic.
- Roll the dough into 12 balls and place into 8x8 inch baking pan, covering with a dry, clean kitchen towel in a warm place for 30 minutes (you want the rolls to double in size)

- In a large bowl or the bowl of your standing mixer, whisk together the warm water, yeast, and 1 tsp sugar. Set aside to proof for about 10 minutes, or until mixture is foamy.

PERFECT SOFT AND BUTTERY ROLLS - THE RECIPE CRITIC
From therecipecritic.com
- In a medium saucepan over medium-low heat, combine the milk, 1/2 cup sugar, 5 Tablespoons butter and salt. Heat until mixture is warm and butter is melted (it will start to slightly bubble around the edges of the pan), remove from heat and cool to lukewarm (this is important, because if it's too hot, it will kill the yeast). Meanwhile, in a medium bowl, combine the warm water, 1 teaspoon of sugar and yeast. Allow to sit for 5 to 10 minutes or until bubbly and frothy. If the yeast mixture does not get bubbly and frothy, start yeast mixture over.
- Add three cups of flour to the bowl of your stand mixer. Pour warm milk mixture into the bowl and mix, using the dough hook, until combined, scraping sides of bowl with a rubber spatula as needed. Add the yeast mixture and beaten eggs and mix until combined. Gradually add remaining two cups of flour, 1/2 cup at a time, or until dough starts to pull away from the sides of the bowl as you mix. Dough should still be slightly sticky to the touch. Don't add too much flour or your rolls will be dry. You may or may not need the entire 5 cups of flour.
- Cover bowl with a towel and allow dough to rise until doubled in size. When dough has risen, punch down. Form dough into balls (if it's a little too sticky, spray your hands with cooking spray). I use about 3 oz. of dough per dough ball. Place on a large greased sheet pan, spacing 2-3 inches apart. Cover with a towel and allow to rise for one hour or until doubled in size.

- Activate yeast: To the bowl of your mixer add the yeast, the 1 tbsp of sugar and the warm milk. Gently whisk it all together and allow it to rest for 10 to 15 minutes. After this time, if the yeast is good, it will froth.
- Make dough: Add the butter, sugar, egg yolks, salt, and flour to the yeast mixture. Mix with the dough hook on low speed, until it's all incorporated. Increase to medium high speed and knead for another 5 minutes. The dough should be slightly sticky but still soft to the touch.
- First rise: Place the dough in a lightly greased bowl, or the bowl from your mixer and cover it with plastic wrap. Let it rise until it doubles in size, about 45 minutes to an hour. See notes for rising.

- In the bowl of your mixer, whisk together warm milk (about 110F) and 1 Tbsp sugar. Sprinkle the top with 1 Tbsp yeast and let sit 1 minute. Whisk together and let it sit for about 5 minutes until yeast looks foamy. Add 4 Tbsp melted butter, remaining sugar and salt.
- Add flour half a cup at a time until the dough whisking to incorporate. Once the dough gets too thick, switch to the dough hook attachment and mix on speed 2 (you can also continue mixing by hand with a stiff spatula). Add about 4 cups of flour, adding the last 1 to 3 Tbsp of flour only if needed. The dough should feel sticky and tacky but should not stick to clean/dry finger tips.
- Knead the dough with the dough hook in a stand mixer for 2 minutes or knead by hand (10 min), then place dough in an oiled bowl. Cover it with plastic wrap and let it rise about 2 hours in a warm place or until doubled in size.

- In a glass mixing bowl, dissolve yeast in warm water. Add sugar. Wait about 5 minutes, or until foam appears.
- In a microwaveable bowl, melt lard. Remove, add 2 cups of water, and stir well. Add yeast mixture. Add eggs, sugar, salt, and about half of the flour. Continue adding the remaining flour, about 1/2 cup at a time, mixing well each time. You want the dough to be slightly sticky but easy to work with.
- Move dough to a floured surface and knead for about 5 minutes. Place dough in a bowl sprayed with non-stick cooking spray or oil. Cover with plastic wrap and place in a warm location until dough doubles in size, 1 to 3 hours depending on the yeast you choose (read package directions). Once the dough has doubled in size, punch it down. Re-cover the bowl and let it rise again in a warm place for 1 to 3 hours.
