I got this recipe from a former coworker, whose father, a professional cook, made this for every family get-together and holiday. When he passed away, she took on the responsibility for providing this tasty treat for her family.

Steps:
- Pinch all the ingredients together, with your fingers, in a large casserole dish.
- Spread it all out into an even layer and bake, covered with foil, in a 350°F oven for 30 minutes.
- After 30 minutes, remove the dish from the oven and stir/smoosh (breaking up the pieces of sausage and beef into itty-bitty tiny bits) and add a little more water if it looks dry.
- Bake, uncovered, for an additional 30 minutes.

DIRTY RICE
This classic Cajun dish pays homage to the Louisiana holy trinity (onions, bell peppers and celery). The finely chopped proteins give the rice its signature "dirty" look. Traditionally, dirty rice includes chicken liver -- you can omit it, but don't fear the liver! It adds another layer of texture and depth of flavor.

- Heat the olive oil in a Dutch oven or large heavy-bottomed pot over medium-high heat. Add the sausage, ground beef and chicken livers and cook, breaking the meat into small bits with a wooden spoon, until no longer pink, 3 to 4 minutes. Transfer to a medium heatproof bowl with a slotted spoon.
- Remove and discard all but 2 tablespoons of the fat from the Dutch oven. Add the onion, bell pepper and celery and cook down, stirring occasionally, until the vegetables have softened, 4 to 5 minutes. Add the garlic, thyme and bay leaves and cook, stirring frequently, until fragrant, about 1 minute. Stir in the rice, oregano, smoked paprika, cayenne, 1 1/2 teaspoons salt and 1/2 teaspoon black pepper and cook about 30 seconds. Stir the cooked meat back in, then add the beef broth and Worcestershire sauce. Bring to a boil, reduce the heat to a low simmer and cover. Cook until the rice is tender and has absorbed the liquid, about 18 minutes.
- Remove from the heat. Remove and discard the bay leaves, stir in the scallions and season.
DIRTY RICE
The name for this dish comes from how it looks, as the rice grains are speckled with bits of ground meat and seasonings. This version uses chicken livers instead of the common combination of both gizzards and livers to offer a distinct flavor profile. Dirty rice is similar to rice dressing, but it isn't relegated to just holiday tables. In fact, you'd be hard pressed to find a spread in Louisiana without it. A much beloved side dish, it's also worthy of being at the center of the plate as a hearty, rustic main dish. If you have leftover rice, you can skip the first two steps and adjust the seasonings to taste.

- Rinse the rice in a strainer under cold water until the water runs clear. Heat the stock in a medium saucepan over high until boiling. Stir in the rice and 1 ½ teaspoons Creole seasoning, then reduce heat to low to maintain a simmer. Cover the saucepan and cook until the water has evaporated and the rice no longer has any bite, 12 to 15 minutes. If the water evaporates before the rice is done (bite into a grain to see if it's fully cooked), add ¼ cup water, cover and continue cooking. Once the rice is ready, stir in the butter and set aside while preparing the rest of the dirty rice.
- Finely chop the chicken livers. Transfer to a large bowl and add the beef, pork, 1 tablespoon hot sauce, 1 teaspoon Creole seasoning and ½ teaspoon salt. Stir to combine.
- Heat 3 teaspoons oil in a large skillet over medium-high until it shimmers. Add the meat and cook, stirring to break it up, until all of the meat is evenly browned, about 5 minutes. Remove from the heat and transfer the meat to a plate using a slotted spoon. Discard all but 2 teaspoons fat from the skillet.
- Add the remaining teaspoon oil to the skillet and heat over medium until the oil shimmers. Add the onion and cook, stirring occasionally, until translucent, about 7 minutes. Add the bell pepper and celery, and cook until softened, about 7 minutes more. Stir in the garlic and cook, stirring often, until fragrant, about 2 minutes.
- Stir in the Worcestershire sauce, remaining tablespoon hot sauce and ½ teaspoon salt. Return the meat to the skillet and add the cooked rice. Stir until combined and heated through. Taste and add more salt, Creole seasoning or hot sauce as desired. Stir in the scallion greens and parsley, and serve warm.
DELICIOUS DIRTY RICE
Found on an advertising flyer, nutritious and full of flavour and texture. Prep time does not allow for the bean preparation, although if you substitute canned beans, then the time stated is the time it will take!

- Beans : Soak for 2 - 4 hours.
- To cook, drain the soaking water and add cold water, 1 part beans to 2 or 3 parts cold water. Bring to a boil, then reduce heat to a very slow simmer, so the beans stay in their jackets. Simmer for 2 hours.
- Lightly toast pine nuts.
- In a heavy saucepan, heat 1 tablespoon of the olive oil over medium heat.
- Add the garlic and the chopped onions; saute for 5 minutes, stirring frequently.
- Mix in the bell pepper, chili powder, chili flakes, cumin, and cinnamon.
- Saute for 2 minutes.
- Pour the rice into the saucepan and stir to coat.
- Add the water and 1 teaspoon salt, and bring the rice to a boil over high heat.
- Cover the pan and turn the heat to low.
- Simmer the rice for 25 minutes.
- When the rice is cooked, mix in tomatoes, corn, black beans, and pine nuts.
- Stir in salt, pepper and lime juice.
- When the mixture is heated through, spoon it onto plates and top with the sliced red onion and cilantro.
- Serve a wedge or two of lime with each plate to squeeze over the rice.

MIMI'S DIRTY RICE
This dirty rice recipe came from my mom in 1996, and I don't have any idea where she got it. It can be adjusted for your tastes -- more or less of the "7 seasonings" to make it hotter. I usually make it and put it in stuffed peppers, but it could be a stand alone dish or side. We love it!

- Over medium heat, place ground meat and bay leaves in skillet with oil. Brown meat thoroughly. Drain excess grease.

RED RICE
Red rice is to Latin cooking what dirty rice is to Cajun cooking. The Anchote powder is from ground annatto seeds and is the main seasoning in red rice. This site didn't recognize it as an ingredient but it did know annatto seeds - so I put it in as annatto seeds in the ingredients. If you can't find it in a grocery store, see if you can find a Latin market. Recipe courtesy of Ingrid Hoffmann. Tip: if you burn your rice, you can save it by scooping all the rice that is not stuck to the bottom of the pot into a lidded container. Nestle one small peeled onion in the center of the rice and cover the container tightly. After 20 minutes the onion will magically have absorbed all of the burnt flavor and bitterness from the rice. - Heat the oil in a saucepan over medium-high heat for about 1 minute. Add the onion and garlic and cook, stirring occasionally until the onion is soft, about 2 minutes. - Brown the sausage making a small crumble mixture in a skillet until cooked through.
- Stir in the broth, rice and minced onion.

DIRTY RICE
This is a cajun classic. Dirty rice is basically a rice pilaf that is called dirty because it's cooked with minced chicken livers or gizzards. Don't run away now! The rice doesn't taste like liver, it just deepens the flavor of the rice and the crispy bits are so small you won't really notice them. You have a choice of using green bell peppers or jalapenos, depending on your heat tolerance. Enjoy!

- Cook the rice according to the package instructions, but use chicken broth for one third of the cooking liquid. So, for example, if the package says to use 3 cups of water for 1 1/2 cups of rice, use 2 cups of water and 1 cup of chicken broth. Once the rice has finished cooking, remove from heat and let sit for 5 minutes. Turn the rice out onto a sheet pan and drizzle 1 tablespoon of olive oil over it. Mix to combine and let cool.
- While the rice is cooking, mash and finely chop the chicken livers, or purée briefly in a blender. In a large pan that can eventually hold the rice plus everything else, put 1 tablespoon of oil plus the bacon in and cook over medium-low heat until the bacon is crispy.
- Add the ground pork and increase the heat to high. Allow the meat to brown before stirring. As soon as the pork starts to brown, add the final tablespoon of oil and add the celery, jalapeños, and onions. Brown them all over medium-high heat. You may notice the bottom of the pan getting crusty. Keep it from burning by lowering the heat if needed. Add the minced liver and cook for a few minutes more.
- Add the remaining cup of chicken broth and deglaze the pan by scraping the bottom of the pan with a wooden spoon. Add the Cajun seasoning and turn the heat to high. Boil away most of the chicken stock and then add the cooked rice. Toss to combine.
- Turn off the heat and add the green onions. Toss once more to combine and serve hot.

- Spray a large non-stick pan with vegetable oil spray.
- Brown crumbled sausages in pan along with diced onion, bell peppers, and garlic.
- Drain fat and season with cayenne pepper, red pepper flakes and garlic powder.
- Add water and simmer for about 20- 30 minutes, until the vegetables are cooked down.
- Add Worcestershire sauce and Franks Hot Sauce (Tabasco).
- Simmer for 15 minutes.
- Add cooked rice, stir gently, until all rice is moistened.
- Top with green onion and parsley, stir lightly and serve.
