PICANTE CRANBERRY MEATBALLS

These zippy ground beef meatballs are my favorites, and the recipe is so easy. Cranberry, chili and picante sauce sound like an unusual combination, but the flavors blend deliciously. Our nine grandchildren request these meatballs often.

  • In a large bowl, combine the eggs, ketchup, parsley, soy sauce, onion, garlic powder and pepper. Add cracker crumbs. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. , In a skillet, brown meatballs over medium heat. Transfer to a greased 13-in. x 9-in. baking dish. , In a large saucepan, combine the cranberry sauce, chili sauce, picante sauce, brown sugar and lemon juice. Cook and stir until cranberry sauce is melted and mixture is heated through. Pour over meatballs. , Cover and bake at 350° for 30-35 minutes or until meat is no longer pink. Serve with noodles if desired.

  • In a large saucepan over medium heat, combine the first six ingredients; stir until sugar is dissolved. Add meatballs; cook until heated through, 20-25 minutes, stirring occasionally. , Editor's Note: To prepare in a slow cooker, heat sauce ingredients as directed. Add sauce and meatballs to a 4-qt. slow cooker. Cook, covered, on low until heated through, 2-3 hours. , Freeze Option: Freeze cooled meatball mixture in freezer containers.   • Mix together the hamburger, bread crumbs, eggs, soy sauce, pepper, garlic powder and ketchup. Form into small balls and bake for 30 minutes.

  • MEATBALLS: Combine first 7 ingredients in a bowl.
  • Add crackers and mix; crumble beef over mixture and combine well.
  • Shape into 1 1/2 inch balls and brown in a lightly oiled skillet over medium heat.

These delicious meatballs are made with ground beef, and ground pork sausage, which they are then cooked in a tangy cranberry-tomato sauce. The sauce is made of 2 kinds of canned jellied cranberries, (cranberry and cran-raspberry) along with tomato soup and a bit of water. This is a good way to use up those leftover canned cranberries, after the holidays are over. Update about this recipe: I have noticed that the grocery stores, (at least where I live) no longer sale the jellied cran-raspberries, so I'm sure these meatballs will taste just as good using the regular jellied canned cranberry sauce.

Steps:

  • In a large bowl, mix all the meatball ingredients together.
  • Shape into 34 (1 1/2-inch meatballs).
  • Place on a greased (15 1/4 x 10 1/4 x 3/4-inch) baking sheet.
  • Bake 20 minutes in a 350 degree oven.
  • In the meantime, add both cranberry sauces and the can of tomato soup, in a Dutch Oven; mix together thoroughly.
  • (I mix mine with a potato masher).
