PIE IRON TACOS

We love to make these tacos in our pie irons over the open fire when we are camping. I think they are better than real tacos!

Pie Iron Tacos image

Steps:

  • Cook the ground beef in a large skillet over medium-high heat, stirring to crumble, until browned. Pour off excess fat, and mix in the taco seasoning according to package directions.
  • Spray the inside of a pie iron with cooking spray, and place a corn tortilla on one side. Place a scoop of ground beef on top of the tortilla, sprinkle with Monterey Jack cheese, and chopped onion. Finally, place another tortilla on top, and close the pie iron.
  • Cook the taco over the moderate coals of a campfire until the tortillas have crisped and browned, and the taco is hot in the center. Serve with lettuce, tomato, salsa, and sour cream. Repeat with remaining ingredients.

Skillet Taco Bake image

Steps:

  • Heat the oil in a large cast-iron skillet over medium-high heat. Add the onion, red pepper and poblano and cook until softened, about 5 minutes. Add the ground turkey and cook, breaking apart with the back of a wooden spoon, until no pink remains, about 10 minutes. Add the chili powder, salt, garlic powder, onion powder, oregano, cumin, red pepper flakes, paprika and cayenne and stir to combine. Add the fire-roasted tomatoes, corn and black beans and bring to a simmer, then reduce the heat to low and simmer until the liquid has reduced slightly, about 10 minutes.
  • Sprinkle the cheese over the top of the skillet, then cover and turn the heat off. Let sit for a few minutes for the cheese to melt from the residual heat.
  • Serve right from the skillet with garnishes of avocado, scallions and cilantro and with tortilla chips alongside.

Steps:

  • Taco shell:.
  • Heat oil to 350 in a heavy bottomed pot over medium high heat.
  • Using a 4 inch ring cutter cut out circle from the tortillas.
  • Carefully frying one at a time, use a pair of metal tongs to fry the tortillas. Use the tongs to hold down the tortilla in the oil to create a taco shell shape. Fry until golden brown, about 1 minute. Remove to a paper towel lined plate.
  • Combine sugar and cinnamon in a shallow bowl. Gently coat cooked tortillas in the cinnamon sugar mixture.
  • Filling:.
  • In a large saute pan over medium heat, melt butter. Add apples, sugars and cinnamon. Allow to cook until apples begin to slightly break down.
  • Sprinkle in cornstarch and continue to cook until the mixture has thickened.
  • To assemble tacos, stuff with apple pie filling, top with whipped cream and a drizzle of caramel sauce.

  • Preheat oven to 400º.
  • In an 10 or 11-inch ovenproof skillet, brown ground beef; drain.
  • Add taco seasoning mix and tomato sauce to ground beef.
  • Simmer 5 minutes.
  • Spread mixture evenly in skillet.
  • Remove from heat.
  • In a mixing bowl, blend biscuit mix and milk.
  • On a lightly floured surface, pat dough to form a circle about 1 inch smaller than the skillet.
  • Transfer dough to top of beef mixture.
  • Bake in preheated oven for 12 to 15 minutes or until lightly browned.
  • Place a large platter or pizza pan upside down on skillet.
  • Using pot holders, carefully turn skillet and platter over to transfer Taco Pie onto platter.
  • Assemble Taco Pie by sprinkling cheese to within 1 inch of edge of beef mixture.
  • Distribute lettuce to within 1 inch of edge of cheese.
