BASIC PIZZA DOUGH

This is my basic pizza dough recipe. It is good for stromboli also. It takes a bit of time but it is more economical than store bought crusts...and it tastes better too!

Basic Pizza Dough image

Steps:

  • Combine sugar, water and yeast in a measuring cup or small bowl.
  • Combine flour and salt in a large bowl and make a well in the center.
  • Pour yeast mixture and oil in well and stir into dry ingredients until you have a soft dough.
  • If dough is too sticky, add a bit more flour.
  • Knead until smooth on a lightly floured surface.
  • Place in an oiled bowl, cover with a towel and let rise until doubled.
  • IF YOU HAVE A BREAD MACHINE skip the above steps and just put the ingredients in according to the machine's instructions and use the "dough" setting.
  • Punch down and let rest for 10 minutes.
  • Makes 1- deep dish or 2- 12-inch pizza crusts.
  • To bake, top with your favorite sauce, cheese, etc., and bake at 450°F for about 15 minutes or until crispy and cheese is bubbling.

Steps:

  • Add lukewarm water and oil to pan. Add flour, sugar, italian seasoning and salt to the pan. Tap pan to settle dry ingredients, then push some ingredients to the corner. Make a well in the center of dry ingredients; add yeast. Lock pan into breadmaker. Program breadmaker for the dough cycle. When done, remove dough from the pan and place on a floured surface. Knead for 1 minute the let dough rest for 15 minutes.
  • Roll dough out to fit your pizza pan. Place on greased pan. Top as desired and bake in a 425 degree oven for 10 - 15 minutes or until nicely browned.

3/4 cup water, 80-90 degrees F
2 tablespoons vegetable oil
2 cups all-purpose flour

THIN CRUST PIZZA DOUGH (ABM)

Thin crust lovers you are in for a treat. For exceptional pizza, go to your local Home Depot or Lowes store and buy unglazed quarry tiles. They are very inexpensive. Position your oven rack as low as it will go in your oven. Line oven rack with unglazed quarry tiles (I use about 6 in my oven). Preheat oven at 500 for about 1/2 hour.

Steps:

  • Add ingredients to your bread machine according to manufacturer directions.
  • Set for dough or pizza dough.
  • My Breadman Ultimate has 2 dough settings one for dough and one for pizza dough.
  • Add additional flour if needed while machine is mixing if dough seems too sticky.
  • When machine signals that dough is done, remove from machine to lightly floured board or counter top.
  • Sprinkle pizza pan with a little cornmeal.
  • Stretch dough into circle or roll into circle to fit your pizza pan and put in the pizza pan that you've sprinkled with cornmeal.
  • Top pizza with desired toppings.
  • (pizza sauce, pepperoni,shredded mozzerella cheese, mushrooms, onions, green pepper, sausage).
  • Use you imagination.
  • Put pan of pizza in preheated oven on top of quarry tiles.
  • Bake for 5 minutes.
  • Then grab pan and carefully shake pizza off of pizza pan onto hot quarry tiles.
  • This will help to crisp up the bottom crust.
  • Bake for additional 5-7 minutes or until pizza is done.
  • Carefully slide pizza back onto pizza pan for easy removal from oven.
  • Slice into pie wedges and enjoy!

Basic Pizza Dough - By Hand Method image

Steps:

  • In a large bowl, combine yeast with water, olive oil, salt and stir well to proof. After 5 minutes, add half of the flour and mix well to thoroughly incorporate. Add all remaining flour except 1/2 cup and mix well with your hands. Transfer dough to a lightly floured work surface and knead dough for at least 5 and up to 7 minutes, adding enough additional flour as necessary to form a smooth and elastic dough. Dough should not be sticky. Transfer dough to a lightly oiled 2 or 3 quart bowl and turn to coat with oil. Cover with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour.
  • Preheat oven to 500 degrees F. and if you have one, place a pizza stone on the bottom rack of the oven.
  • Divide dough into 2 portions (for 2 (12-inch) pizzas) and form into balls. (See note below for calzones.) Place on a lightly oiled baking sheet and cover with a damp towel. Let rest for 15 minutes, then transfer to a lightly floured surface, shape as desired and roll out to a thickness of 1/4-inch. Transfer dough to a pizza peel and top with toppings of choice. Transfer to the preheated pizza stone and bake until crispy and golden brown, usually 12 to 18 minutes (depending on the toppings). Remove from the oven with a metal peel or spatula and serve immediately.
  • Note: For calzones, divide the dough into 4 equal portions and form into 4 balls. Place on a lightly oiled baking sheet and cover with a damp towel. Let rest for 15 minutes, then transfer to a lightly floured surface and roll out into 4 6-inch circles. Place filling of choice in the center of one side of each circle, then fold dough over filling to meet edges of filled side. Crimp edges with a fork or your fingers, then cut a small slit in the top of the calzone to allow steam to escape while cooking. Cook on a preheated pizza stone in a preheated 475 degree oven for about 8 to 10 minutes, or until well-browned. Remove from the oven with a metal peel or spatula and serve immediately.

The Last Pizza Dough I'll Ever Need image

Steps:

  • For the dough: Place each ingredient into the bowl of a stand mixer in the order listed. Install the dough hook attachment and mix on low until the dough comes together, forming a ball and pulling away from the sides of the bowl. Increase the mixer speed to medium and knead for 5 minutes.
  • Lightly flour the countertops, then round the dough into a smooth ball by folding the edges of the round in toward the center several times and rolling between your hands on the counter. Lightly oil a bowl and place the dough in the bowl. Cover with plastic wrap and refrigerate for 18 to 24 hours.
  • "Punch down" the dough by turning it out onto a clean countertop and shaping it into a rough rectangle, using your knuckles to work out as many of the large gas bubbles as possible. Then tightly roll the dough into a log 12 to 15 inches long. Cut this into thirds. Shape each third into a disk, then shape the disks into smooth balls. You may want to moisten the counter with water to up the surface tension a bit so that the ball tightens up instead of sliding across the counter.
  • Cover each ball with a clean kitchen towel and set aside for 30 minutes at room temperature.
  • At this point, you can also transfer the dough to airtight plastic containers and refrigerate for up to 8 hours. Just make sure you bring the balls to room temperature 30 minutes before use.
  • Pizza time: Set a pizza stone on the lower rack of the oven (or the floor, if using a gas oven) and crank the heat as high as it will go, hopefully 550 degrees F. Give the oven and the stone a good 30 minutes to heat up.
  • For the toppings: Press a ball of dough into a 12-inch round. (Save the remaining dough balls for another use.) Smear with the jelly, then top with the fontina and bacon. Transfer to the pizza stone and bake until golden brown and melty, about 10 minutes.

PIZZA DOUGH FOCACCIA (ABM)

I got the pizza dough recipe from my Breadman Breadmachine book. I made a 2 lb. dough. I put the ingredients into the machine in the order as I have listed them. I added fresh and dried herbs, a small piece of pimento from a jar, some kalamata olives as well as some minced garlic and Romano cheese. I cut everything up fairly fine. I also sprinkled some fresh ground smoked black pepper on this. The possiblities for this are endless, depending on what you like. You could probably divide this in half and make two smaller focaccias if you wish, though, the cooking time might be different with a smaller focaccia.

Pizza Dough Focaccia (Abm) image

Steps:

  • Put all the ingredients into the bread machine in the order given.
  • Turn it on to your dough setting.
  • When the dough is finished remove it from the bread pan and place on a lightly floured counter and pat it into a circle about 1/2 inch thick.
  • Place on your oven peel (or a baking pan) that you've sprinkled with corn meal.
  • Dimple the top of the dough with your finger and brush with olive oil. Add whatever toppings you want.
  • At this point, heat your oven to 400'F. and put your oven stone or pan you're going to cook the focaccia on into the oven to heat up.
  • Let the dough rise for about 15-20 minutes.
  • Once the focaccia has risen slide it off the peel onto the oven stone and bake until golden brown. It took 20 minutes in my oven.
  • When done, remove with your pizza peel and set on a metal wrack to cool.

  • Add all ingredients (except cornmeal) into breadmaker in the order suggested by your breadmachine manufacturer. Process on Dough setting.
  • Sprinkle cornmeal on pizza pan.

Steps:

  • Load bread machine according to manufacturer's instructions. Watch when it starts the kneading cycle & adjust dough consistency with either a bit of flour or water as sourdough starters vary in thickness. Goal is an elastic somewhat soft but not at all sticky dough (a little softer than a baby's behind LOL).
  • Once dough cycle completed, roughly knead & then dump dough into an oiled bowl & let rise 2nd time, either room temp or in fridge(for use the next day).
  • Knock down after 2nd rise & divide into 2 pieces. Shape your pies (dusting your work area with semolina flour) and add your favorite sauces & toppings. Bake on preheated stone at 475 degrees F for 14 - 16 minutes.
  • Oiled dough can also be divided & frozen in freezer bags with the air expressed. If freezing, remove from freezer & allow to thaw, do 2nd rise & use for pie.

  • Mix starter, flour, olive oil, and salt together in a bowl until mixture forms a ball. Let dough rest for 30 minutes.
  • Preheat oven to 500 degrees F (260 degrees C).
  • Roll out dough on parchment paper or a lightly floured work surface, rotating frequently, until it is the same size as the baking pan. Transfer to the pan.
  • Bake in the preheated oven until pale golden, about 7 minutes.

Steps:

  • Pour 1 1/2 cups warm water into a large bowl; sprinkle with yeast and let stand until foamy, about 5 minutes.
  • Whisk sugar, oil, and salt into yeast mixture. Add flour and stir until a sticky dough forms. Transfer dough to an oiled bowl and brush top with oil. Cover bowl with plastic wrap and set aside in a warm, draft-free place until dough has doubled in bulk, about 1 hour. Turn out onto a lightly floured surface and gently knead 1 or 2 times before using.
  • Dough can be stored in an oiled bowl, covered with plastic, in refrigerator up to 2 hours. To freeze, wrap dough in plastic and freeze in a resealable freezer bag up to 3 months. If you plan to use it in a recipe that calls for half a batch, divide it before freezing.

We are making my basic pizza dough, which is the base for my classic cheese pizza, margherita, white pie and more. When adding the water to the yeast, use a thermometer to make sure your water is the right temperature. The water will bring the yeast to life. When it comes to any type of yeast, fresh or dry, it is important to know: salt = bad. Wait to add the salt until the yeast is mixed with the flour.

Basic Pizza Dough image

Steps:

  • Make the dough: Add 1/2 cup of the water to the bowl of an electric mixer fitted with the hook attachment. Sprinkle the yeast on top and let sit until bubbly, 5 to 10 minutes. Turn the mixer on low speed and add the oil. Slowly add the flour and mix until the dough is elastic, about 6 minutes. Add the salt and mix until the dough forms a loose ball and completely separates from the sides of the bowl, 4 to 5 minutes more. If the dough feels too dry, add up to 1/4 cup more water, 1 tablespoon at a time, until the dough is moist and springy.
  • Turn the dough out onto a floured surface and knead until smooth, folding the dough over itself. Place the dough in a large bowl, cover it with plastic and let sit at room temperature for 1 to 2 hours.
  • Once proofed, punch down the dough on a floured surface so it releases air before kneading it and forming it into three 6-ounce portions. You want to roll the dough and shape it into smooth balls.
  • Place each of the 3 dough balls on a plate or baking sheet. Cover with plastic and let sit at room temperature until soft, about 2 hours. The dough will naturally start to puff up and proof again for the last time. (At this point, you can also wrap the dough balls in plastic and freeze them for a future use.)
  • (Alternatively, you can put the plates in the refrigerator for 36 hours and up to 2 days. This is called a "cold ferment" and will add great depth of flavor in your dough, as that yeast has plenty of time to do its "gassy" thing! Remove the dough from fridge and let it sit out at least 2 hours to bring back to room temperature before using.)
  • Shape, top and enjoy!
