ABSOLUTELY BEST BROWNIES
This are the easiest and most delicious brownies that I have ever eaten. They are so moist and super quick and easy to make. For best results, use a Dutch processed cocoa. For less cake-like brownies, use all-purpose flour instead of self rising.

PLAIN JANE'S BROWNIES
This is from Plain Jane's Thrill of Very Fattening Foods cookbook and is the brownie recipe (from scratch) that I use the most. Moist with a deep, dark chocolate flavor. I have included a caution that was in the cookbook with the brownies. Caution: Do not attempt to taste the chocolate batter before you've added the sugar. When taste-testing the raw batter, be sure to include one chocolate chip with each taste.

JEANINE'S DECADENT BROWNIES
This brownie recipe is from my mom. I have made many batches of these brownies for my daughter's various school functions, etc. It's also really good hot out of the oven with a scoop of vanilla ice cream.

MARY JANE'S BROWNIES
This is a recipe from my best friend's mom. These are really fudgy brownies with icing. I never add the nuts, because I don't like nuts in my brownies, but if you like them go for it! The original recipe calls for an 11x13 pan, but we alway used a 9x13 pan or I use my deep dish baker from Pampered Chef. You can also do the melting in the microwave, which is what I do for the icing in a big batter bowl.

PLAIN-OLD BROWNIES
There's nothing exotic or 'different' about these brownies. That's why I call them 'Plain-Old Brownies'. But they taste wonderful and everyone will love them.

- Using an electric whisk/stand mixer, whisk together the eggs & caster sugar for a few minutes until the colour has turned pale, is very mousse like, and is double the original volume of the amount of eggs + sugar!
- You will know its done because when you lift the whisk up out of the mix it should leave a trail for a couple of seconds before disappearing!
