Roasted Tomatillo-Poblano Salsa image

Steps:

  • Heat oven to 475°F. Line 15x10x1-inch pan with foil. Place tomatillos in single layer on one end of pan; place poblano chiles and onion on other end. Drizzle oil over vegetables.
  • Roast uncovered 15 minutes or until vegetables are browned and tender.
  • Place poblano chiles in resealable food-storage plastic bag; seal bag. Let stand 15 minutes. Peel poblano chiles; discard seeds and membranes. In food processor, place poblano chiles, tomatillos, onion and remaining ingredients. Cover; process until smooth. Spoon into serving bowl. Store tightly covered in refrigerator.

One of my favorite new cookbooks of this season is "A Mouthful of Stars" (Andrews McMeel), by Kim Sunée. The book is a memoir, travelogue and cookbook all rolled into one, written by an author who earlier published another compelling memoir with recipes, "Trail of Crumbs." Kim is a poetic world traveler who loves many cuisines. She is a big fan of taco trucks and loves salsa, the spicier the better. This salsa is based on her recipe for roasted tomatillo-poblano salsa. I love its balance of char, heat, acid and creamy. I'm a moderate when it comes to heat, but you can make this hotter by adding more chiles.

Roasted Tomatillo-Poblano-Avocado Salsa image

Steps:

  • Preheat oven to 425 degrees. Line a sheet pan with parchment. Place tomatillos, chiles (both types), onion, and garlic on the parchment and drizzle on olive oil. Add salt to taste and toss together with your hands. Place in oven and roast 20 minutes, stirring halfway through, until blistered and softened. Remove from heat.
  • Place roasted vegetables, with any juice from the pan, in a food processor fitted with the steel blade. Pulse until well blended but not puréed. Add cilantro, cumin, avocado and lime juice and pulse until blended. Taste and adjust salt. Serve at once or store in a well-sealed container in the refrigerator. Stir well before serving.

Steps:

  • Heat greased grill to medium heat.
  • Grill chiles and tomatillos 7 to 8 min. or until softened and charred on all sides, turning occasionally.
  • Place chiles in bowl; cover with plastic wrap. Let stand 20 min.
  • Remove and discard skins and seeds from chiles. Finely chop chiles and tomatillos; place in medium bowl. Add remaining ingredients; mix lightly.

Nachos on the Grill with Tomatillo-Poblano Salsa, Smoked Tomato Relish, and Green Onion Creme Fraiche image

Steps:

  • Preheat grill. Place a large cast iron pan on the grates of the grill and let heat for 5 minutes. Place 1/3 of the chips in the pan and top with 1/3 of the cheese. Repeat to make 3 layers. Close the cover of the grill and grill until the cheese has melted, about 5 to 7 minutes. Remove the pan from the heat and top with the 3 toppings.
  • Preheat grill. Place a large cast iron pan on the grates of the grill and let heat for 5 minutes. Place 1/3 of the chips in the pan and top with 1/3 of the cheese. Repeat to make 3 layers. Close the cover of the grill and grill until the cheese has melted, about 5 to 7 minutes. Remove the pan from the heat and top with the 3 toppings.
  • Tomatillo-Poblano Salsa:
  • Heat the grill to high. Brush the tomatillos, poblanos, and onions with oil and sprinkle with salt and black pepper. Grill until charred on all sides, and then place the poblanos in a bowl, cover with plastic wrap, and let steam 15 minutes. Remove the skin, stem, and seeds of poblanos, and then coarsely chop and place in a blender or food processor with the tomatillos, onions, garlic and lime juice. Process until beginning to become smooth, and then add the cilantro. Process until completely smooth, and season with salt and black pepper. Pour into a serving bowl.
  • Smoked Tomato Relish:
  • Preheat grill to high. Brush tomatoes with oil and season with salt and pepper. Place the tomatoes on the grill and grill until charred on all sides. Remove from the grill and coarsely chop.
  • Whisk together the vinegar, chipotle puree, onion, and 1/4 cup of canola oil in a medium bowl. Add the chopped tomatoes and season with salt and pepper, to taste. Let stand at room temperature for 30 minutes before serving.
  • Green Onion Creme Fraiche:
  • Combine creme fraiche and green onions in a medium bowl. Season with salt and pepper, to taste.

Tomatillo Salsa image

Steps:

  • Sterilize four 8-ounce canning jars and lids (see Disclaimer).
  • Preheat the broiler. Put the poblano halves skin-side up on a foil-lined broiler pan with the onion and garlic. Broil until the poblano is charred and the onion and garlic are browned, about 8 minutes. Cool the poblano slightly, then peel.
  • Pulse the tomatillos in a food processor in batches until coarsely chopped, then transfer to a bowl. Add the poblano, onion and garlic to the processor and pulse until coarsely chopped (do not overprocess). Transfer to a large, wide saucepan. Add the cumin, lime juice, vinegar, sugar and 1 tablespoon salt. Bring to a boil over high heat and cook, stirring occasionally, until slightly reduced, 3 to 4 minutes.
  • Add the tomatillos and jalapenos to the pan, cover and return to a boil. Cook until heated through, 3 to 4 more minutes.
  • Fill the jars with the tomatillo mixture, leaving 3/4 inch headspace, then seal and process. After opening, top the salsa with cilantro, if desired.

ROASTED POBLANO PEPPER & TOMATILLO SALSA

This is my own recipe -- just a lot of trial and error. This really makes a fresh, tasty salsa without an abundance of heat. This salsa is mild to medium, but if you want to tone it down even further, add 2-3 teaspoons of cider vinegar and one medium to large peeled carrot, pureed.

Roasted Poblano Pepper & Tomatillo Salsa image

Steps:

  • Slice poblano pepper into medium-thin strips, avoiding seeds.
  • It is not necessary to use the entire pepper as poblano peppers can sometimes be large (bell pepper sized).
  • Peel garlic and chop each clove in half.
  • Place all of this in shallow pan and roast for 20 minutes under broiler set to “low” – toaster oven works fine.
  • If you have a kitchen torch, you may use this to fire-roast the peppers as well.
  • Drain liquid from canned tomatoes and canned chilies, chop Roma tomato into quarters.
  • Peel and chop onion into quarters.
  • Do the same with the tomatillos.
  • Add all of this to a food processor and process until salsa is thoroughly blended.
  • Add olives and the juice of the lime and process again.
  • Add half of the cilantro leaves, roasted poblano peppers and garlic, black beans (if used) and tequila and process again, adding the corn at the final stage of processing to ensure the corn is not puréed.
  • Salsa should be a nice consistency.
  • Don’t over-process!
  • Pour into a mixing bowl and stir in 2-4 teaspoons of sea salt (to taste), any additional lime juice that can be squeezed and a teaspoon of coarsely-ground pepper.
  • Zest the lime and add this to the salsa.
  • If you don’t have a zester, simply use a fine cheese grater.
  • This adds a great fresh zing to the salsa.
  • Cover and refrigerate to allow flavors to mesh.
  • Immediately prior to serving, chop the remaining cilantro leaves and stir into the salsa.
  • Serve with your choice of corn tortilla chips!

Roasted Spicy Salsa Verde image

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Lay the poblano peppers, serrano peppers, and tomatillos on the hot grill, and cook, turning every 2 minutes, until the pepper skins are evenly charred and blackened, and the tomatillos have turned pale yellow and started to ooze juice, about 10 minutes. Remove the vegetables from the grill.
  • Scrape off most of the burned pepper skin, cut the stems off, cut the peppers in half the long way, and remove the seeds.
  • Place the onion and garlic in the work bowl of a food processor, and pulse about 4 times to chop. Drop in the peppers, pulse 4 times to roughly chop, and add the tomatillos and salt. Pulse 4 or more times to the desired smoothness, and stir in the cilantro.
