POLISH STYLE LASAGNA
Rich with potatoes, pasta, onion, butter, and cream cheese, this pierogi-like dish is the best! It's also quick and easy to make. Serve with your favorite vegetable.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cook lasagna noodles according to package directions.
- Drain, pat dry and interleave in a damp towel to keep moist OR spray each noodle with cooking spray OR lightly apply some oil.
- In a separate large skillet over medium heat, combine the onions with the butter and saute for 5 minutes.
- Prepare the instant mashed potatoes according to package directions, but omit the milk.
- Stir in the cream cheese until well blended.
- Place 3 noodles in the bottom of a lightly greased 9x13-inch baking dish. Spread 1/2 the potato mixture over the noodles in the dish.
- Top this with 3 more noodles, followed by the other 1/2 of the potato mixture.
- Finish by topping with the remaining 3 noodles, then top those with sauteed onions.
- Bake at 350 degrees F (175 degrees C) for 20 minutes, or until bubbly. Allow to cool for 5 minutes before cutting.

STUFFED CABBAGE LASAGNA
This is based on a recipe from Lydie Marshall's cookbook, Slow-Cooked Comfort. She says of this recipe, "When I have leftover meat from a stew, I grind it and freeze it.... With ground pork, I make a pork and cabbage lasagna: layers of ground meat and cabbage leaves with a white sauce on top. Because the pork is already cooked, this is a relatively quick dish to prepare." I think this is a good cross between lasagne and cabbage rolls with a very appetizing appearance. This dish can be prepared several hours ahead of time before being placed in the oven.

- Discard the tough outer cabbage leaves. Using a small pointed knife to help disengage the leaves, gently separate the remaining leaves from the stalk.
- In a stockpot, bring 6 quarts of salted water to a boil. Add the cabbage leaves and return to a boil. Boil until the leaves are semisoft, about 10 minutes.
- Drain the cabbage in a colander set in the kitchen sink and let cool while you make the ground pork stuffing.
- In a large nonstick skillet, heat the oil over medium heat and brown the ground meat for 2 minutes; add the onion, garlic, tomato paste, and tomato sauce and stir. Sprinkle with salt, freshly ground pepper, and hot pepper flakes. Cover and simmer over low to medium heat for 10 minutes, stirring occasionally to make sure it's not sticking to the bottom of the pan.
- Set aside 2 tablespoons of grated cheese. Using a wooden spoon, whisk the egg into the ground meat with the remaining cheese.
- Preheat the oven to 400 degrees.
- Organize the cabbage leaves into three piles. Layer 1/3 of the cabbage leaves in a buttered 3-quart rectangular or oval ovenproof baking dish. Sprinkle with salt and spread half the ground meat over the cabbage. Layer another 1/3 of the cabbage leaves over the stuffing and add the remaining meat stuffing. Cover with the remaining cabbage leaves.
- Pour the white sauce over the cabbage and sprinkle with reserved cheese. Cover the dish with parchment paper.
- (At this stage you can wait several hours before baking it. You may want to turn off the oven unless you're using it for something else!).
- Bake the casserole in the middle of the oven for 15 minutes; discard the parchment, and continue cooking uintil the cheese browns slightly.
- Serve piping hot.

IRISH LASAGNA
My wife and I came up with this recipe. It is relatively simple to make, although it is a little time consuming, but the results are well worth the time.

- Set aside 1/2 cup of cheese.
- Slice potatoes. slices should be about an 1/8 inch thick.
- We like to deep fry the potato slices, although you can use any cooking method that you prefer. The goal is to get them cooked, without having them fall apart. We've found deep frying to be the easiest method.
- Fry the chopped onion in the olive oil. If you like your green onions cooked, you can cook them up with your regular onion.
- Cook bacon until crisp, then chop into bacon bits.
- Use a large cake pan (lasagna pan).
- Put a layer of cooked potatoes on the bottom of the pan, then sprinkle some onions, green onions, and bacon bits on top of the potatoes.
- add a sprinkle of salt, pepper, and just a hint of garlic.
- now sprinkle some cheese on top.
- that completes one layer. add another layer of potato slices, then more onions, green onions, etc --
- keep going until you reach the top of the pan or until you run out of ingredients.
- The very top layer should be only potatoes.
- Bake at 350 for 25-30 minutes, or until all of the cheese is meted throughout.
- Take the 1/2 cup of cheese you set aside earlier, and sprinkle on top.
- Return to oven until top layer of cheese is melted.
- cut and serve like regular lasagna.

- Preheat oven to 350°.
- In a mixing bowl, combine the egg, parmesan cheese, Italian seasoning, cottage cheese, and 1 cup mozzarella cheese; set aside.
- In a large skillet, brown the beef, onion, and garlic together until the beef is done; drain excess grease.
- Add water and all but 1 cup of spaghetti sauce to beef.
- Spread reserved spaghetti sauce into the bottom of a greased 13x9 inch pan.
- Layer 5 to 6 lasagna noodles over the sauce, overlapping or breaking to fit.
- Spread half the cheese mixture over the noodles.
- Spoon a third of the beef mixture over the cheese layer.
- Repeat layers once.
- Add one more layer of 5 to 6 noodles and spoon remaining third of beef mixture over the top.
- Cover and bake 50 minutes.
- Sprinkle remaining mozzarella cheese over the top.
- Let stand 5 minutes before serving.

- Add spaghetti sauce and water; simmer about 10 minutes.
- In medium bowl, stir together ricotta, one-half mozzarella cheese, Parmesan cheese and eggs
