POLYNESIAN INSPIRED VEGETARIAN PILAU
This can be served as either a main course or a side dish. Add more hot pepper sauce if you like it spicy. Note: Prep. Time includes cooking the rice.

Steps:
- In a large pan, saute peanuts in 1 Tbl. butter until toasty. Take out the peanuts and set them aside.
- To the butter in the pan add the grated ginger, the onion, along with another 1 Tbl. butter.Cook until the onions are translucent.
- Add the remaining butter, the chopped celery, carrot, and the diced green pepper. Cook until slightly tender.
- Add the rest of the ingredients, except for the rice. Bring just to a boil and then take off the heat.
- Stir in the cooked rice. Sprinkle toasted peanuts on top.

- In a large bowl, mix peas, rice, shrimp, celery and green onion.
- Mix all the dressing ingredients together and mix well.
- When ready to serve pour over salad and add chow mein noodles.

POLYNESIAN CHICKEN
This recipe is absolutely delicious. It is very summery recipe since you can grill and enjoy a nice summer afternoon. I got this recipe from the Publix Family Style Magazine Summer 2010 edition. I have made the recipe once and cant wait to make it again. It is very good and can be made pretty quickly!

Steps:
- For the sauce, in a small saucepan combine pineapple juice, honey, mustard, soy sauce, cornstarch and garlic. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 1 more minute. Remove from heat. Transfer half of the sauce to a bowl; cover and set aside.
- Sprinkle chicken with salt and pepper. For charcoal grill arrange medium-hot coals around drip pan. Test for medium heat above the pan. Place chicken on grill rack over drip pan. Cover; grill until chicken is no longer pink or 165 degrees Farenheit, brushing frequently with remaining sauce during the last 5 minutes of grilling. (For gas grill preheat grill. Reduce heat to medium. Adjust for indirect cooking. Grill as above.).
- Note: If you do not have cornstarch on hand, you can substitute with 3 Tsp of all purpose flour.
POLYNESIAN RICE
I make this in a rice cooker and it's super simple! When I have frozen diced onion, red, and green bell pepper mix on hand, I use 2 T of that in place of the fresh onion and peppers, and it's every bit as good. I really prefer the mix of red and green peppers in this dish to just plain ol' green sweet peppers. I frequently use the reduced sodium version of both the soy sauce and the chicken broth and it turns out just fine.

- Pour it all in a large zip loc. Shake well.
- Add your raw meat such as steak,pork,chicken parts of chicken breasts or veggies. I have also prethreaded shish kebabs and it worked great.
- Grill on indirect heat of a good bbq grill. I use hickory wood chips on the coals to really enhance this.
- Enjoy!

POLYNESIAN CHICKEN
This slightly sweet marinade is wonderful on this grilled chicken that is topped with pineapple slices at the end of the cooking time.

- In small bowl, combine soy sauce, brown sugar, ginger, and garlic and mix well.
- Allow to stand for at least 30 minutes to let flavors develop.
- Place chicken on plate.
- Brush both sides of each chicken breast with soy sauce mixture.
- Cover and let stand for 15 minutes at room temperature to marinate.
- Heat grill.
- When ready to barbecue, oil grill rack.
- Place chicken on gas grill over medium high heat.
- Cook for 10 to 15 minutes or until chicken is tender and juices run clear, turning once.
- Top each with pineapple slice during last few minutes of cooking time.
- Serve sprinkled with coconut, if desired.

POLYNESIAN CURRY
My mom used to make this delicious Polynesian recipe when I was a kid. I just love the different toppings you can add to this basic coconut curry base. You can make it as spicy or as sweet as you want.

Steps:
- Cook rice according to directions.
- Dice chicken into 1/2 inch pieces and cook about half way in a bit of vegetable oil.
- Add in coconut milk, curry sauce, curry powder, bullion granules, and tomato paste.
- Add in diced pineapple.
- Cook until chicken is done.
- Plate the rice with the sauce on top.
- Sprinkle with your choice of tomato, dried coconut, peanuts and even banana. Enjoy!
POLYNESIAN PORK AND RICE
I first made this yummy little dish about 30 years ago. I continue to make as is although sometimes I throw in a couple of chopped garlic cloves.

- Cut the pork in 1-inch cubes.
- Mix the flour, salt and pepper.
- Coat the pork with the flour mixture using all the flour.
- Brown in oil in a large pan.
- Slice the celery and onion.
- Slice the peppers into thin strips.
- Add the vegetables to the pan along with the remaining ingredients. (**Do not add rice).
- Simmer covered for 30 minutes.
- Serve over rice.
