PORK-AND-SHRIMP WONTONS WITH PEANUT SAUCE

Pork-and-Shrimp Wontons with Peanut Sauce image

Steps:

  • For the spicy peanut sauce: Combine the peanut butter, soy sauce, oil, vinegar, brown sugar, garlic, ginger, chili paste and water in a blender. Blend until smooth, adding more water as needed. Set aside.
  • For the wontons: In a large bowl, combine the pork, shrimp, chives, sesame oil, soy sauce, brown sugar, salt and pepper. Mix everything gently but thoroughly together with your hands (or a wooden spoon).
  • Bring a large saucepan filled with 3 to 4 inches of chicken stock to a boil.
  • Place 1 tablespoon of the pork mixture in the middle of a wonton wrapper. With your finger, dab the edges of the top half of the wrapper with beaten egg. Fold the top over to enclose the filling, press to seal the edges, then fold two corners in and press to seal the corners together. Place the finished wonton on a lightly floured baking sheet and repeat with the rest of the filling and wrappers.
  • When you have enough wontons to begin to cook, gently transfer wontons into the boiling stock, making sure not to overcrowd the pot. Simmer until the filling is cooked through, about 5 minutes. Continue forming wontons while the batches cook.
  • Transfer cooked wontons to a bowl. Top with peanut sauce, a drizzle of toasted sesame oil, and garnish with some cilantro and serrano pepper slices. Enjoy!

1/4 cup soy sauce
2 tablespoons toasted sesame oil
2 tablespoons rice vinegar
2 tablespoons brown sugar

1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Chicken stock or broth, homemade or store-bought, for boiling the wontons
50 wonton wrappers
1 large egg, beaten
All-purpose flour, for dusting
Cilantro leaves, for garnish
Serrano chiles, thinly sliced, for garnish

MOM'S WONTON

I recently learned to make homemade won tons from my mother. They can be deep fried as an appetizer, but I prefer them in a rich, homemade chicken broth with baby bok choy or other leafy greens. Extras will freeze well for later enjoyment.

Steps:

  • In a large skillet, cook the ground pork over medium heat until no longer pink.
  • In a large mixing bowl, combine the shrimp, ground pork, green onions, ginger, and water chestnuts. Mix in the cornstarch, garlic salt, and sugar. Mix in the dry sherry, chili oil, soy sauce, and sesame oil.
  • Place about one teaspoon of the mixture in the center of each won ton wrapper. Bring points of the wrapper together (in a triangular shape) and pinch the edges, sealing them closed with egg whites.
  • Meanwhile, bring a large pot of water to boil. Carefully place won tons into boiling water without crowding. (Work in batches if necessary.) When the wontons float to the surface, add a cup of cold water and allow the water to come to a boil again. Then remove from the boiling water.

  • To make the filling, combine the shrimp, pork, chicken, minced ginger, chopped scallions, vegetable oil, light soy sauce, oyster sauce, sesame oil, white pepper, and water. Using a rubber spatula, mix and fold the mixture in one direction for about 5 to 10 minutes until it becomes sticky, like a paste.
  • Prepare a large sheet pan lined with parchment paper. Get a small bowl of cold water. Lastly, bring a small pot of water to a boil, so you can taste-test the filling.
  • To assemble the wontons, take your square wonton wrapper, dab one side of the square with your finger, and add about a teaspoon of filling in the center. Gently fold the wrapper in half and seal on all sides.   • To cook the wontons, boil water in a pot, and add the wontons (fresh or frozen, but never defrosted wontons). To prevent the wontons from sticking to the bottom of the pot, stir the boiling water gently so the water is moving when you add in the wontons. Cook uncovered for about 3-5 minutes using medium heat. This is also a good time to blanch some leafy greens to complete the meal. If necessary, add ½ cup cold water if the water is boiling too vigorously. This helps manage the starch levels in the water. The wontons are done once they float to the surface and turn plump.
