CARAMEL APPLE PORK CHOPS
Warm, spicy, and sweet, this wonderful Fall recipe is a guaranteed favorite for kids, and is great with smashed potatoes and buttered green beans.

Steps:
- Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.
- Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in the preheated oven.
- In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook until apples are just tender. Remove apples with a slotted spoon and arrange on top of chops. Keep warm in the preheated oven.
- Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops. Sprinkle with pecans.

PORK CHOPS WITH CHARRED CORN AND ARUGULA

- Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Season the pork with salt and pepper and add to the skillet. Cook until browned and just cooked through, about 3 minutes per side. Remove to a plate and loosely cover with foil to keep warm.
- Wipe out the skillet and heat 1 more tablespoon olive oil over medium-high heat. Add the corn, red onion and 1/2 teaspoon salt. Cook, without stirring, until the corn starts browning, about 3 minutes. Stir and continue cooking until charred and tender, about 2 more minutes. Add the garlic and red pepper flakes and cook until softened, about 30 seconds. Stir in 2 tablespoons vinegar and the honey; remove from the heat.
- Combine the arugula and the remaining 2 tablespoons olive oil and 1 tablespoon vinegar in a large bowl. Season with salt and pepper and toss. Divide the pork and arugula among plates. Stir the basil into the corn mixture and spoon over the pork.
PORK CHOPS WITH APPLES

I found this in a pamphlet from the orchard (about Maryland apple orchards) a few years ago when we were picking apples. It is one of the tastiest things I have ever made!

Steps:
- Peel, core, and slice the apples.
- Preheat the oven to 350 degrees.
- Melt the butter in a skillet.
- Brown the pork chops on both sides in the butter.
- Grease (or spray) a large baking dish.
- Put the apple slices in the bottom of the dish.
- Mix the brown sugar and cinnamon.
- Sprinkle the cinnamon and sugar over the apples.
- Place the pork chops on top of the apples.
- Cover with foil and bake for 1 and 1/2 hours.

This is by far one of the best recipes I've ever found! Succulent pork chops with a phenomenal spice rub cooked in a sweet sauce with onions and apples. A perfect autumn dish, but tasty all year-round!

- Mix flour, sage, garlic, thyme, salt, allspice, and paprika together in a small bowl. Set aside 2/3 of the spice mixture for later use. Sprinkle remaining spice mixture onto the pork chops, coating all sides.
- Heat olive oil in a large skillet over medium-high heat. Add pork chops and cook in the hot oil until browned, 3 to 5 minutes per side. Remove pork from the skillet.
- Add onion to the skillet and cook until tender, about 3 minutes. Add apples; cook and stir for 2 more minutes. Stir in apple juice, brown sugar, and reserved spice mixture; bring to a boil.
- Reduce heat to low, cover, and simmer until pork is longer pink in the center, and reaches desired level of doneness, about 5 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

- Cook bacon in a large skillet over medium heat until crisp. Remove to paper towels; drain, reserving 3 teaspoons drippings. In the same skillet, cook pork chops in 2 teaspoons reserved drippings over medium heat for 2-3 minutes on each side or until lightly browned. Remove and keep warm., Saute apples and onion in 1 teaspoon reserved drippings in the same skillet until apples are crisp-tender. Stir in the brown sugar, butter, salt, cinnamon and pepper. - *Preheat oven to 400° F. Heat a large skillet over medium-high heat. Brush pork chops lightly with oil then season with a little salt and black pepper and place in hot skillet. Cook for 3 - 4 minutes on each side, until pork has a nice golden crust. Transfer to a baking pan and bake about 20 minutes, or until chops are done. Meanwhile, in a small mixing bowl, stir together the brown sugar, pumpkin pie spice, and salt and pepper. Set aside. Melt butter in a medium skillet (that has a cover) then stir in the apples and brown sugar mixture. Cover the skillet and cook until apples are crisp tender. (I checked with a toothpick.) Remove apples from the syrup with a slotted spoon. Continue cooking the syrup in skillet, uncovered, until thickened somewhat. Arrange the apples over the cooked pork chops then spoon the syrup over apples and chops. NOTE: *I finished the pork chops on the stovetop instead of baking them. After searing them on both sides in the hot skillet, I reduced the heat, covered the skillet, and cooked until they were done.

- Season chops with salt and pepper; brown both sides in a skillet with a little olive oil; remove to a 9x13 inch baking dish.
- In the same skillet, melt butter over medium heat.
- Cook and stir onions and apples in butter until caramelized, being sure to stir up browned bits.
- Stir in applesauce, apple juice, beef broth, garlic and curry powder.
- Season to taste with salt and pepper; simmer on low heat until slightly thickened, continuing to stir up browned bits from pork chops.
- Pour apple-onion mixture over chops in baking dish and cover dish with foil.
- Bake in a preheated 400 degree oven for 45 minutes.
