SLOW-COOKED PORK, CIDER & SAGE HOTPOT
Warm up as the cold nights set in with this glorious hotpot, with slow-cooked pork cooked in cider and sage. It's topped with a crispy layer of potatoes

- Heat half of the oil in a deep ovenproof frying pan, or flameproof casserole dish, and fry the pork pieces over a medium high heat in batches until seared all over, then transfer to a plate. Add another 1 tbsp oil to the pan, if you need to, while you're cooking the batches. Once all the pork is seared, transfer to a plate and set aside.
- Add another 1 tbsp oil to the pan with a little butter and fry half the leeks with a pinch of salt for 10 mins until tender. Add the garlic, fry for a minute, then stir in the flour.
- Pour in the cider, a little at a time, stirring to pick up any bits stuck to the bottom of the pan and to combine everything. Add the stock, bay leaves and seared pork, then simmer, half-covered with a lid for 1-1½ hrs until the meat is just tender (it will later cook to the point of falling apart in the oven). Can be prepared a day ahead.
- Heat the oven to 200C/180C fan/gas 6. Simmer uncovered for a few minutes to reduce the sauce, if you need to - it shouldn't be too liquid or the potatoes will sink into the sauce. Stir in the parsley, chopped sage, remaining leeks, and the cream, then season well.
- Peel both types of potatoes and cut into slices 2mm thick, by hand or using a mandoline. Alternate layers of potato and sweet potato in circles over the pie, or randomly, if you prefer. Dot the cubed butter over the top and bake for 1-1½ hrs until the potato is tender. Nestle in the whole sage leaves, brushed in a little oil, for the last 10 mins. Leave to rest for 10 mins before serving.

Steps:
- Rinse pork and pat dry.
- In a small bowl or cup mix together flour salt and pepper and then sprinkle mixture over pork.
- In a large skillet over medium high heat brown pork in oil, turning to brown well. (15 minutes). Transfer pork and juices to crock pot.
- Add garlic and sage to skillet and cook, stirring over medium low heat until garlic turns color (1 minute) and then add mixture and the milk and lemon peel to crock pot.
- Cover and cook on high for 7-8 hours (or when pork is tender and sauce is golden brown and reduced by half). During the last three hours uncover the crock pot so the sauce/gravy thicken.
- Transfer pork to board and slice. Serve with sauce .

MILK-BRAISED PORK WITH LEMON AND SAGE

- Preheat oven to 250°F.
- Heat oil in a large Dutch oven or heavy pot over medium-high until shimmering. Season pork all over with salt and pepper and cook, turning occasionally, until browned on all sides, 12-15 minutes. Pour off excess fat from pot. Add sage, lemon peel, and milk. Bring to a boil, then reduce heat to medium-low. Cover pot and transfer to oven. Roast pork until very tender, 3 1/2-4 hours.
- Transfer meat to a serving platter. Discard lemon peel, then gently toss Swiss chard in remaining sauce in pot until wilted. Using tongs, transfer Swiss chard to platter alongside pork. Top both with remaining sauce and serve.
PORK LOIN WITH LEMON AND SAGE

Steps:
- Preheat oven to highest setting, about 500.
- Place a lightly greased, foil-lined baking tray in the oven.
- With a sharp knife, score the skin of the pork loin in a criss-cross pattern. Turn it around so that the flesh side is facing upwards and cut a slit along the side of the loin, without cutting all the way through, to open it out like a butterfly. Cover the flesh with the lemon zest, sage and parsley leaves, then scatter over the garlic. Season generously with salt and pepper and drizzle over with a little olive oil.
- Roll up the loin and secure tightly with kitchen string in 3-4cm intervals. Rub the scored skin with a large pinch of salt, drizzle with a little olive oil and sprinkle with another pinch of salt. Carefully place the pork on the hot baking tray and roast for 15-20 minutes until the skin is golden and starting to crispen.
- Turn down the oven to 350 and roast for approximately 25 minutes per pound until the pork is cooked through and tender. Rest for 10-15 minutes before carving.

- 1. Spary your crockpot with cooking spray. Purchase a Garlic and Lemon Pork Loin Roast at your market. Remove plastic packaging and put into Crockpot.
- 2. Set temperature control on high for two (2) hours. After two hours, continue cooking on low for another two(2) hours. If you do not have a temp control on yours, cook it on high for two hours and test it to see if it is done, by using a fork. If it goes in easily, it is done. If not, continue cooking checking each hour.
- 3. for those of you with a temp control: this can be cooked even longer but it will fall apart on you. I have made this time and time again and it is just the right time for making perfect cuts. Serve with mashed potatoes and veggies of choice with Pork You may take McCormicks packaged Pork Gravy mix and use two pks to make a gravy with the juice from the Pork. It is up to you. If no gravy..........use Butter for potatoes or mix in a cup of sour cream and chives. ENJOY
BARBECUED PORK WITH SAGE, LEMON & PROSCIUTTO

- Whizz together the prosciutto, the zest of three and the juice from 11⁄2 lemons, the chopped sage and plenty of seasoning until blended to give a thick paste. Put aside and reserve the rest of the lemons.
- Cut each tenderloin lengthways down the centre, but not all the way through. Open out the meat, butterfly style, and flatten slightly. Make about 10 deep slashes in each tenderloin, cutting about three quarters of the way through. Rub the paste over the meat and into the slashes.
- Brush the tenderloins with oil. Barbecue the meat, paste side down, for 6-8 minutes. Turn over and cook for a further 6-8 minutes until tender and cooked through.
- Transfer the pork to a platter and, while hot, top it with the slices of butter. Leave for a minute or two to melt. Squeeze the reserved lemon halves over the pork (or use fresh ones). Scatter with sage sprigs, then serve cut into thick slices.
