MEAT LOAF
Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Steps:
- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

- Preheat oven to 350°. Soak bread in milk for 5 minutes. Drain and discard milk. Stir in next 9 ingredients. Crumble beef over mixture and mix lightly but thoroughly. , Shape into a loaf in a15x10x1-in. baking pan coated with cooking spray. Spread top with ketchup. Bake at 350° until a thermometer inserted in the center reads 160°, 45-55 minutes. Let stand 10 minutes before cutting.Freeze option: Omitting ketchup, bake as directed. Securely wrap cooled meat loaf in foil, then freeze. To use, partially thaw in refrigerator overnight. Unwrap and spread top with ketchup. Reheat on a greased 15x10x1-in. baking pan in a preheated 350° oven until a thermometer inserted in center reads 160°. Let stand 10 minutes before cutting.

This is my family's favorite meatloaf recipe. Onion may be substituted for green onions (scallions).

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.
- Mix ground beef, sausage, vegetable mixture, bread crumbs, parsley, and eggs in a large bowl; form into a loaf and place in a rectangular baking pan with 2-inch high sides. Cover loaf with remaining 1/3 cup ketchup.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Preheat oven to 350°F.
- Spray a pan & rack liberally with non-stick cooking spray.
- Combine all ingredients just until blended. Shape into a loaf and place in prepared pan.
- Bake in middle of oven for 90 minutes.
- Remove and allow to stand 10 minutes before slicing.
- Refrigerate leftovers.
- *I prefer spicy brown mustard.
- ** If you use ketchup, use original amount listed in recipe. If you use A-1 Sauce instead, reduce the amount of Worcestershire sauce to 2 teaspoons.
POSSUM'S ZESTY MEATLOAF
This is the best I can come to Mom's meatloaf, to which I have to say there is no equal. But hey, I tried. :) I've found that dusting the top of the meatloaf with a generous portion of black pepper, and then adding a light topping of ketchup for the last 20 minutes adds a nice spicy glazed topping to the meatloaf. To totally make this the main dish of a comfort meal, serve with a hearty helping of either garlic mashed potatoes or mac & cheese.

- Place meat in large mixing bowl.
- Mince onion.
- Add onion, bread crumbs, cheese, and spices to the bowl.
- Beat the egg well.
- Add egg, A1, and ketchup to the bowl.

- Skin and bone the possum (use only the best meat for the casserole, ie: the strip loins and hind quarters, cubed).
- Reserve the carcass and trimmings for stock.
- In a heavy pan, heat the clarified butter and oil.
- Sauté onion and garlic.
- When onion is clear, remove to casserole.
- Dust the cubed possum with flour and brown in batches.
- Add to casserole.
- Melt a little more clarified butter and sauté bacon and mushrooms.
- Remove to casserole De-glaze pan as necessary with red wine- add this to casserole together with herbs, ground pepper, tomato purée, beer and marsala.
- Stir, cover and cook in slow oven for 2-3 hours, adding more possum stock if necessary.

LEMON POPPY SEED LOAF

- Preheat oven to 350 degrees F (175 degrees C). Heavily grease and flour two 9x5 inch loaf pans.
- Sift together flour, baking soda, and salt. Set aside.
- In a large bowl, cream butter or margarine, and sugar until light and fluffy. Beat in eggs, one at a time.
- Mix lemon juice and yogurt together and add alternately with the sifted flour mixture to the butter mixture. Mix until just blended. Stir in lemon rind and poppy seeds. Pour mixture into prepared pans and smooth tops.
- Bake at 350 degrees F (175 degrees C) for 50 minutes or until browned and a knife inserted in the center comes out clean. Cool on rack for 15 minutes before turning out of pans.

ZESTY MEATLOAF
I got this recipe from a magazine quite a few years ago. This is a really different meatloaf that packs a lot of flavor. You can kick up the heat by adding more jalapenos, whatever suits your taste. This meatloaf does not have a sauce on top, just because that's the way I like it!!! This makes 2 loaves, and it freezes very well.

- Mix oil, diced onion, garlic, celery, and jalapeno in a pan on medium heat. Cook 10 minutes.

- Cut the carrot, zucchini and onion into large chunks and add to the food processor. Pulse until they are chopped into small pieces. To the vegetables add all of the remaining meatloaf ingredients and half of the zesty sauce. Pulse a few times, just until everything is combined.
- Scoop approximately ⅓ c. of the meatloaf mixture into each tin. Set your tin on top of a baking sheet to catch any juices that may run over and bake at 375° for 20 minutes.
