Pressure Cooker Ham, Bone-In Recipe - (4.5/5) image

Steps:

  • Combine all ingredients in a saucepan over medium and mix the ingredients well Place the ham in a pressure cooker, cook for 15 minutes according to your cooker's guidelines and use a quick release Transfer the ham to an oven safe dish and baste liberally with the glaze Under a broiler, allow the glaze to caremelize and just slightly char on the edges (this will happen quickly)

1/2 cup Maple Syrup
1/2 cup Honey
1/4 cup Brown Sugar
2 Tablespoons Orange Juice
1 teaspoon Cinnamon
1 teaspoon Nutmeg
1 Bone-In Ham

HAM STOCK (PRESSURE COOKER)

This is a good ham stock for use in soups or bean dishes. The dried thyme is good for cajun type dishes.

Steps:

  • Add all the ingredients to the pressure cooker.
  • Lock on the lid and bring to pressure over high heat.
  • Reduce heat to medium and cook for 1 hour.
  • Let the pressure drop naturally.
  • Remove the lid and strain through a cheesecloth lined colander.
  • Cool in the fridge, skim off the fat, and use or divide up for freezing.

1 smoked ham hock
1 onion, peeled and quartered
2 carrots, peeled and broken in half
2 stalks celery, washed and broken in half
2 garlic cloves, peeled
1 teaspoon black peppercorns
2 bay leaves
1 tablespoon dried thyme, tied in a cheesecloth
10 cups cold water

  • In separate bowl mix brown sugar, honey, apple cider vinegar, whole cloves, and 3/4 cup dole pineapple juice from the can. Set aside.In pressure cooker place fold two long sheets of foil together to form one skinny long piece that will make handles. Place with ends coming up to the top and folding over edge of instant pot. Place ham in pressure cooker and pour glaze on top, reserving 1 cup of the liquid. Top ham with remaining pineapple tidbits and 1 cup water. Seal and cook high 7 minutes. Quick release.
  • If crispness is desired, remove liquid from the pressure cooker and set aside. Add remaining glaze and add air fryer lid. Air fry for about 7-10 minutes. Ladle some of the remaining juices back on to ham to keep moist.
  • If crispness is desired, remove from pressure cooker to cookie sheet. broil for a few minutes until ends are caramelized and crispy. Ladle juices from pressure cooker on ham to restore any moisture. Serve immediately.
