EASY PRETZEL SPREAD WITH CHEESE DIP

Steps:
- Prepare the pretzels according to package instructions. Stack vertically on a vertical paper towel holder to create a pretzel tower.
- Place the cheese, vegetable stock and mustard in a microwave-safe bowl and cover with plastic wrap or a microwave-safe plate. Microwave on medium power until the cheese is melted, 1 to 2 minutes. Whisk until the dip comes together as a smooth sauce.
- Serve warm with the pretzel tower, sliced apples, seedless green grapes and extra mustard for dipping.

Forget about that pretzel stand at the mall, and start making your own at home. These will be such a hit with your family; next time you'll be making a double batch. Coarse salt is traditional, but try sprinkling on some of the Everything Seasoning that's so popular now for another tasty option.

Steps:
- Whisk together mayonnaise, Dijon mustard, honey, and yellow mustard in a small bowl, and store in the refrigerator while preparing pretzel sticks.
- Mix yeast and brown sugar in a small bowl; add warm water, and whisk until sugar dissolves. Let stand until foamy, about 5 minutes.
- Mix flour and salt together in a bowl of a stand mixer fitted with a dough hook attachment. Add canola oil and gradually pour in the yeast mixture, kneading until smooth and silky, 4 to 5 minutes. If the dough is very sticky, knead in more flour.
- Shape dough into a ball and transfer to a large greased bowl. Cover with plastic wrap and let rise until doubled in volume, about 45 minutes.
- Punch down the dough and turn out onto a lightly floured surface. Flatten into a rectangle and cut into 12 equal pieces. Roll each piece into a stick about 7 inches long. Place sticks on a baking sheet lined with parchment paper; let rest uncovered for about 25 minutes.
- Preheat the oven to 450 degrees F (230 degrees C).
- Pour about 5 quarts of water in a large, deep pot; stir in baking soda. Bring to a boil, then reduce heat to medium. Carefully place pretzel sticks in the simmering water in batches for 30 seconds, flipping after 15 seconds. Remove from water and let drain on paper towels.
- Transfer the sticks back to the baking sheet. Brush lightly with butter and sprinkle with coarse sea salt.
- Bake in the preheated oven until golden brown, 7 to 10 minutes. Serve warm or at room temperature with the honey mustard dipping sauce.

The texture of the cheese sauce for pretzels is velvety, and the ingredients are ones you most likely have on-hand. This is a multi-purpose sauce that's also good on nachos, burritos, baked potatoes, tortilla chips, and drizzled over cooked veggies.

- Melt butter in a small saucepan over medium heat until a pinch of flour sprinkled into the oil will just begin to bubble. Whisk in flour to form a thick paste the consistency of cake frosting, stirring constantly for 30 seconds to 1 minute.
- Stir in the milk, mustard, Worcestershire, garlic powder, and salt. Cook until mixture starts to bubble and thicken, 3 to 4 minutes.
- Remove from heat and gradually stir in Cheddar cheese until melted and smooth. Keep in mind that the sauce will thicken as it cools, so if necessary, add a little more milk to reach dipping consistency.

PRETZEL BITES WITH MUSTARD CHEESE SAUCE
Such an easy way to make a lovely appy when guest are coming. I usually make my own pizza dough, but it's also available in grocery stores, usually around the deli. Originally saw the recipe on Tasty.com but have made a few tweeks of my own. The yield depends on the size of both your dough and the balls themselves. If you don't have Barley Malt Syrup for the water bath, you can use Molasses, or even just leave it out.

Steps:
- Preheat oven to 425ºF (218 C).
- Roll pizza dough into balls slightly smaller than the size of a golf ball.
- Bring a pot of water to a simmer, then add in barley malt syrup (or molasses if you don't have) stir in the baking soda. Add dough balls and cook for 30 seconds. Remove from the water and place them on a parchment-lined sheet tray.
- Brush each dough ball with egg wash and sprinkle with a bit of coarse salt. Place tray in oven and bake for 10-12 minutes, until pretzels turn a deep brown color.
- Melt the butter in a saucepan over low heat. Whisk in the flour and cook for 1 minute. Pour in the milk while whisking. Cook for 2-3 minutes, stirring occasionally, until the milk begins to thicken slightly. Add in the French's Honey Mustard, cheese, apple cider vinegar, salt, and pepper. Whisk until cheese melts and the sauce is smooth. Let the cheese sauce bubble for a few more minutes to thicken up slightly. Serve immediately with the pretzel bites!

- Spray work surface lightly with baking spray. Turn dough out onto surface and divide into 4 equal pieces. Roll and shape each piece into a 12-inch rope. Cut each rope crosswise into 10 pieces.
