Steps:
- Trim fat from beef.
- Cut beef into thin, bite-size strips.
- In a large saucepan, heat olive oil over medium-high heat.
- Add beef and shallot.
- Cook, stirring, for 2 to 3 minutes or until beef is brown.
- Use a slotted spoon to remove mixture; set aside.
- In same saucepan, combine water, apple juice, carrots, rice, ginger, garlic and bouillon granules.
- Bring to a boil, then reduce heat.
- Simmer, covered, about 15 minutes or until carrots are tender.
- Stir in beef mixture and broccoli.
- Simmer, covered, for 3 minutes.
- Stir in the teriyaki sauce and sherry.
- Ladle soup into bowls.
- Garnish with slivered green onion tops.

QUICK AND EASY TERIYAKI BEEF STIR-FRY
As the name implies, this teriyaki beef and vegetable stir-fry is easy to make and done in under 30 minutes. Tasty and perfect for a night when you need dinner in a hurry. We like to use top sirloin for stir-fry recipes since it stays so juicy. Serve with rice or noodles.

- Whisk water, soy sauce, brown sugar, cornstarch, honey, and ginger together in a bowl until well combined.
- Heat 1 tablespoon sesame oil in a large wok or skillet over medium-high heat. Add steak and cook and stir until browned, about 4 minutes. Move steak to the side of the wok. Add remaining tablespoon sesame oil to the center of the wok, followed by broccoli, snow peas, bell pepper, and garlic. Cook, stirring the vegetables, for 2 minutes.
- Add reserved sauce to the wok and stir everything together. Bring to a boil and cook until the sauce thickens and the vegetables are crisp-tender, about 2 minutes.
- Garnish with chopped green onions.

Another gem from Better Homes and Gardens. I make this without the beef for a vegetarian meal. I also like to use brown rice and add 1/3 cup barley. It will take much longer to cook with brown rice and barley.

INSTANT POT® TERIYAKI BEEF
I make this using a 6-quart Instant Pot® for the meat and a 4-quart pressure cooker for the brown rice.

- Combine 2 1/2 cups water and brown rice in a 4-quart pressure cooker. Close cooker securely and place pressure regulator over vent according to manufacturer's instructions. Heat until steam escapes in a steady flow and makes a whistling sound. Adjust temperature to a simmer. Cook until rice is tender, about 22 minutes. Let pressure release naturally according to manufacturer's instructions, 5 to 10 minutes. Unlock lid and remove.
- At the same time, turn on a 6-quart multi-functional pressure cooker (such as Instant Pot®), add oil, and select Saute function. Add steak and onion to hot oil; saute until browned, 3 to 5 minutes.
- Meanwhile, whisk together 1/2 cup water, soy sauce, garlic, and ginger in a small bowl; add to browned steak. Close and lock the lid and cancel Saute function. Select high pressure according to manufacturer's instructions; set timer for 11 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Stir in honey. Combine 3 tablespoons water and cornstarch in a small bowl; add to the Instant Pot®. Add broccoli.
- Select Saute function and cook, stirring constantly, until sauce thickens and broccoli is cooked, 3 to 5 minutes. Serve with rice and garnish with green onions.

BEEF TERIYAKI NOODLES
A quick homemade teriyaki sauce coats tender steak and vegetables, tossed with tender noodles for a quick, easy, and tasty meal! Add some diced green onions or a sprinkling of sesame seeds to serve, if you'd like. You can swap up the vegetables to use what you have on hand, or like best!

- Fill a large pot with lightly salted water and bring to a rolling boil; stir in vermicelli pasta and return to a boil. Cook pasta uncovered, stirring occasionally, until the pasta is tender yet firm to the bite, 4 to 5 minutes. Drain and keep warm.
- Meanwhile, heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add zucchini, onion, and bell pepper, season lightly with salt and pepper, and saute, stirring occasionally, until lightly caramelized and tender, about 8 minutes. Add minced garlic and cook until garlic is fragrant, about 1 minute. Transfer vegetables into a bowl and set aside.
- Heat remaining oil in the skillet until hot. Add steak strips and sear until nicely browned on each side and steak is cooked to medium (or cook longer to your tastes). Season steak lightly with salt and pepper while it cooks.
- Meanwhile, combine soy sauce, water, brown sugar, vinegar, cornstarch, and ginger in a bowl to make the teriyaki sauce. Whisk until sauce is well blended.
- Add vegetables back into the skillet once steak is cooked and pour teriyaki sauce over everything. Bring mixture to a simmer, and cook until the sauce thickens up, about 2 minutes. Add cooked noodles and gently stir to evenly coat noodles with the sauce and distribute meat and vegetables evenly. Taste, and adjust the seasonings if desired.

- Stir in garlic and dried red pepper flakes (cook for about 10 seconds).

From the 2003 "New Dieters' Cookbook" by Better Homes and Gardens. I like this quick & easy soup, with 170 cal per 1.5 c serving (4g fat, 22g carb, 2g fiber, 12g protein). Using a low sugar apple juice and brown rice will decrease carbs & increase fiber. I prefer "Better Than Bullion" products, easy to find in a jar at your grocery store.

- If desired, partially freeze steak for easier slicing. Trim fat. Cut into thin, bite-sized strips.
- In a large saucepan, cook and stir steak & shallot in hot oil over med-high heat for 2-3 min until meat is browned.
- Remove beef from pan, set aside.
- In the same saucepan, combine water, apple juice, carrots, uncooked rice, ginger, bullion and garlic.
- Bring to boil, reduce heat and simmer 15 minute.
- Stir in beef mixture & broccoli, simmer for 3 minute.
