This dish is zesty and yummy! It is very easy to make, as well as very deserving of 3 exclamation points!!! Spoon meat onto toasted sandwich buns, and top with additional barbecue sauce.

- In a large bowl, combine ketchup, brown sugar, red wine vinegar, Dijon-style mustard, Worcestershire sauce, and liquid smoke. Stir in salt, pepper, and garlic powder.
- Place chuck roast in a slow cooker. Pour ketchup mixture over chuck roast. Cover, and cook on Low for 8 to 10 hours.
- Remove chuck roast from slow cooker, shred with a fork, and return to the slow cooker. Stir meat to evenly coat with sauce. Continue cooking approximately 1 hour.

QUICK BARBEQUE SAUCE

- Heat the oil in a medium saucepan over medium-high heat. Add the onion and cook, stirring, until lightly browned, about 4 minutes. Add the garlic and crushed pepper and cook, stirring frequently, until fragrant, about 45 seconds. Add the tomato paste and cook, stirring, until lightly browned, about 1 minute more. Add the tomatoes, vinegar, sugar, and salt and bring to a boil. Lower the heat, and simmer, uncovered, stirring occasionally, until deep red in color and reduced to about 4 cups, about 25 minutes. Season with pepper to taste. Use now, or store, covered in the refrigerator for up to 3 days or freeze for up to 1 month.

GRANDMA'S CHOPPED BARBECUE

- Heat the oven to 250 degrees F.
- With the tip of a knife, make 8 (2-inch) pockets all around the pork and insert a smashed garlic clove in each.
- In a small bowl, combine the seafood boil seasoning, onion powder, garlic powder, paprika, olive oil, salt, and pepper. Rub the seasoning all over the pork then let rest at room temperature up to 2 hours.
- Place the pork in the bottom of a roasting pan and add enough vegetable stock to fill it to an inch deep. Cover very tightly with several layers of aluminum foil, getting the seal tight is really key here. The steam being locked in breaks down the pork to make it pull-worthy.
- Roast the pork, covered, in the oven for 2 hours then pull back the aluminum foil a bit and prick with a fork. If it is tender, remove the aluminum foil and a place back in the oven for 1 more hour. If it isn't tender yet, cook for 30 minutes to 1 hour more, making sure to add more stock if needed. Once tender remove the aluminum foil all together. If the liquid evaporates here, it's ok; it has done its job. Remove from oven then let rest at room temperature, then chop down to small chunks and mix with enough of Sunny's Pork Sauce, recipe follows to make it wet or dry to your taste.
- In a saucepot on medium-low heat, add the oil. Add the onions, garlic, and season with a pinch of salt and a few grinds of black pepper. Cook until both are tender, but not browned and then add the ketchup, vinegar, orange juice, and Sriracha. Taste and then add the sugar, to taste. This should be a loose sauce. Refrigerate or use right away.
BARBECUED BEEF SANDWICHES
This recipe came from a military wife almost 30 years ago (thanks Elise) and it couldn't be much easier. Simply combine all ingredients and cook for 3 hours, then shred the meat. Serve it on buns of your choice...and then sit back and take in the compliments! Everyone loves this recipe, and I've used it at fund raising events with great success! Excellent with potato salad or coleslaw.

- Place roast in a Dutch oven, and sprinkle with chopped onions. Cover with tomatoes, water, sugar and Worcestershire sauce. Season with salt and pepper.
- Cook over medium heat with lid slightly ajar for 3 hours.
- Remove meat, and shred with 2 forks. Discard bones, fat and gristle. place shredded meat back into sauce, and cook until liquid is reduced, 15 to 20 minutes.

I've had this recipe for a long time. Gathered a few quick dinners for weeknights. Easy on the time and on the budget. Even easier if you precook the ground beef and onions and keep them in the freezer for later. Just thaw in the fridge until ready to use.

- Heat oven to 400°.
- Cook ground meat and 1/2 of the onion in 10-inch skillet until beef is brown; drain. Stir in barbecue sauce.
- Spoon into ungreased 13x9-inch baking dish; sprinkle with cheese.
- Stir baking mix, milk and eggs until blended. Pour over beef mix.
- Sprinkle with remaining onion.
- Bake 25 to 27 minute or until crust is light golden brown.
OVEN BARBECUED BEEF BRISKET

- Preheat oven to 300 degrees.
- Combine all of the seasoning ingredients in a bowl and rub the mix into the beef. Place the brisket in a roasting pan. Slowly cook the beef for 1 hour, turn the beef and cook one hour more before covering with a tight fitting lid. Continue to cook with the lid tightly in place for 2 1/2 to 3 hours more. This will render most of the fat. Carefully pour off and discard the fat. Allow the beef to rest for 20 to 30 minutes before serving.
LEFTOVER ROAST BEEF BAR-B-QUE SANDWICH FILLING
This is usually what I do with leftover roast beef since we can never seem to finish eating a whole one. Amounts are just a guesstiment since it depends on how much you have leftover. Making it this way, it seems like your not having the same dish 2 nights in a row.

QUICK BBQ BEANS
This is very quick and simple to make. If we are having company, I can double the recipe without adding a lot of time making this recipe.

- In a saute pan, heat butter, add bacon, onion and garlic.
- Saute until onion and garlic is soft, not brown.
- Add barbeque sauce and simmer on low for 10 minutes.
- With slotted spoon, remove the bean mixture to serving bowl.
- By using the slotted spoon, it will allow enough of the sauce to remain with the beans and leave plenty in the saute pan for the sauce.
- With remaining sauce in saute pan, add 1 TB.
- horseradish and simmer until hot.
- Serve on the side to drizzle over steak and we also enjoy this with ham steak.
- We serve this with ham or steak, hot rolls and cole slaw.
BARBECUED BEEF ROAST

- Preheat oven to 350. Lightly grease/spray a deep 13 x 9 baking dish.
- Place shredded cabbage in bottom of baking dish; set aside.

I've adapted this recipe from "The Barbecue Bible" by Steven Raichlin. If you like your barbecue beans on the sweet side, then these are the beans for you. I know that the list of ingredients is long, but most of them are probably already in your pantry. Don't be tempted to leave out the fresh garlic or fresh gingerroot--it makes a difference. This is mandatory with our ribs--all you need is a potato salad and coleslaw and you're all set.
