Steps:

  • Heat coconut oil over medium heat in a large skillet; cook and stir bacon, onion, and garlic until fragrant, about 5 minutes. Stir cabbage into bacon mixture and toss to coat with oil. Cover skillet, reduce the heat, and cook, stirring occasionally, until cabbage begins to soften, about 10 minutes.
  • Stir cider vinegar and brown sugar together in a bowl; pour over cabbage mixture. Stir apples into cabbage mixture; cover and cook, stirring occasionally, until most of the liquid has evaporated and cabbage is tender, about 35 minutes. Remove pan from heat and allow cabbage mixture to stand, covered, for about 5 minutes; season with salt and pepper.

  • Trim outer leaves from cabbage; cut into fourths and remove the inner core; slice cabbage thinly.
  • Add enough water to cover bottom of large saucepan or dutch oven by about 1 inch; cover and bring to a boil.

  • Melt the butter in a large skillet over medium heat. Add the caraway seeds, onion, 1 tablespoon salt and a few grinds of pepper and cook, stirring occasionally, until the onions are softened, about 5 minutes.   • Wash the head of cabbage under cold running water, remove the tough outer leaves, and cut cabbage into quarters. To shred the cabbage, cut out the core and slice the quarters crosswise into 1/8?inch-wide strips.
  • In a heavy 4 to 5-quart casserole, heat the oil over moderate heat. Add chopped onions and cook, stirring frequently for 5 minutes, or until the onions are lightly browned. Add the cabbage, stir thoroughly, add the apples, and pour in the boiling water. Bring to a boil over high heat, stirring occasionally, and reduce the heat to very low. Add red wine vinegar, salt and sugar, stir to combine. Cover and simmer for 1 1/2 to 2 hours, or until the cabbage is tender. Check from time to time to make sure that the cabbage is moist and tender. If it seems dry, add a tablespoon of boiling water. When the cabbage is done, there should be almost no liquid left in the casserole. Taste for seasoning, then transfer the entire contents of the casserole to a heated platter or bowl and serve.

Sauteed Red Cabbage With Apples image

Steps:

  • Remove outside leaves of cabbage.
  • With a sharp knife, chop cabbage into small pieces. Throw into colander and rinse.
  • In large stovetop pot with lid, melt 2 teaspoons of butter at medium-high.
  • Add onion to pan and sauté.
  • Add chopped cabbage to pan.
  • Peel apples, chop and add to pan.
  • Combine water with vinegar, add brown sugar and bay leaves and stir.
  • Pour liquid over cabbage mixture.
  • Bring mixture to a boil then cover and reduce heat to a low simmer for 25-35 minutes.

Found this in Taste of Home magazine and I think the combination sounds so good I wanted to save it. They recommended serving with Sauerbraten, but I'm thinking it'd go great with pork chops. Haven't tried it yet, but it's going to be on my Fall menu plan soon.

Steps:

  • In Dutch oven, cook bacon over medium heat until crisp.
  • Using a slotted spoon, remove to paper towels to drain.
  • In drippings, saute onion and apple until tender.
  • Stir in the remaining ingredients.
  • Bring to a boil.
  • Reduce ehat; cover and simmer fo r30 minutes or until tender.
  • Stir in reserved bacon.
